In the Netherlands most of the Chinese Cantonese restaurants , and there are a lot, have Cantonese cooks. They all prepare this dish with a GREEN paprika because af its speceific taste, never red and no soy sauce.

I make it at home, I am Aussie. But my variation is putting the curry powder, tumeric (which I love for the extra colour), salt pepper soy sauce and oyster sauce in the pan and heat it up and mix it then put in the vercimilli noodles. I precook the vegetables, usually onion and carrot, green beans and add after the noodles are well mixed. IDK I think I just made and winged it this way and have never really added prawns (shrimp you call them big ones, we call shrimp the small ones) Char Sui is not something I have come across to much, but then I havn't looked out for it. Your version looks alot more tasty than mine, but I love the Jullianette carrot in Singapore noodles.

dont cook the noodle with boiling water just soak with cold water that way noodles wont break or soggy
      while you cooking.
