I thought that at 1st too. Not exactly that way. Truth is I thought she was hot and pretty. But I thought she was putting on a show. Turns out now that I'm raw. That I'm starting to understand the elevated mood and cheeriness. It is such a beautiful thing.
I replaced the nuts and seeds with silk tofu once, and another time I used the same amount of walnuts and hazelnut + water because those are the cheapest nuts I can get where I live (it grows here). All of Kristina's recipes are easily adaptable to your climate. And I don't use zoodles, they're not in season, I use carrots, beets, cabbage or whole-grain pasta :) I don't have a spiralizer, so I use a peeler + knife and it looks like tagliatelle :)

This was my very first raw vegan dish :) I really underestimated the awesomeness of raw zucchini noodles! I never ate raw zucchini, their consistence is really great! Even my non-veg friends were like omg I need to try that with basil pesto! Regarding this alfredo sauce I had to adjust the quantity of garlic.. did you really eat THREE garlic cloves and all that spring onion? Damn, it was TOO strong, I had to make again the recipe according to my taste (1 cup pinenuts, no seeds, 1/4 of a garlic clove, 1/4 of a long green onion. 1/4 cup lemon juice, 1/4 cup water, salt and pepper) and I really enjoyed it :) Thank you so much for introducing me to zucchini noodles, even if I don't follow a raw diet I'll eat them often ^-^ Hugs from Italy!

I think the most important thing of starting off is to eat foods you like. I would write down a list of vegan foods you like apples? Grapes? Kale? Spinach? Dates? Figs? Bananas? Pears? Oranges? Carrots? walnuts? Kiwis? Potatoes? Avocados? Almonds? etc. Don't feel like you have to change everything over night. I would rather see someone gradually get into it and stick with it long term then to see someone change over night and go back to their old ways. Smoothies is a great option. Eat fruits, veggies, nuts, seeds, legumes to fulfill your nutrition. Vitamin D from sunshine or supplement in winter if you live in a cold climate like me. Supplement b12. Try out some of kristina's recipes although this one is quite expensive with the pine nuts. We also do weekly recipes and have what I eat in a day videos if you need some ideas.

I purchase mine from Vitacost. They have 20% sale on food once in 2 or 3 weeks I believe (I get notifications by email). A bag of 8oz organic (!) pine nuts costs only $9.59 with a discount. That should be enough for this recipe. Pine nuts are worth buying as they are very healthy.
You can use another blender. Also you can use a normal peeler to thinly slice zucchini into “linguini” noodles. I think you can use different nuts.. like Cashew for example.
Although I am not a vegetarian nor vegan, I like variety. Kristina makes vegan food fun. I will definitely try this recipe. It will be tricky as I am allergic to onions and my wife doesn't like mushrooms. 🥰

This is a great recipe. I make it all the time. I lightly saute the mushrooms or steam them to avoid getting reaction to raw spinach.
