Whenever I make Greek coffee, I use a fresh roast, grind it down to espresso, I've tried lukewarm and hotter water, stirring at the start, putting it on the heat, stir in till white foam, but it never foams up (200mL Cezve, with 1 : 10, 10 - 14g of coffee, not much difference.), so what should I do?
@@wendstudio_coffee Yeah, it normally seems to recreate the crust at the top though is the issue even after the stirring at a minute of the brew. Something also to note I don't have a wooden spoon to stir it so I normally use a wooden chopstick.
@@wendstudio_coffee Yeah I stir it at a minute, and then I've tried stirring at different times, only doing it the once, but to no avail, the crust always seems to come back, or start to boil rather than foam, I have it on a decently low heat, so I don't know why that would happen.
Is it ever worth going lower than 1:10?
Why not? Especially if coffee is washed processed

Did you mix at around 1 minute after placing on heat? Because this grind size will make "crust" from coffee particles. If you see the crust, mix it)

@Nikolai.A.McGuire just stir it one more time a little bit later and it will work. The main goal is to get rid of the crust first

Low heat is the thing. Water isn't warm enough at 1:00 to dissolve CO2 properly. That's why particles still float
