  • In this video we collect wild grass seed and then process it into a flour substitute. This was a fun an unexpected video, and I believe this will be a great flour substitute to add to your winter supply.

Some tips, for those trying this at home and are a bit paranoid about it. Do a float test with the seeds, usually the ones that float aren't healthy or have wheevel eggs in them, toss the floaters. Then freeze for about a week to kill any eggs.
If you see any black seeds, that's Ergot fungi usually. Nasty stuff. Good news is that you don't have to toss the whole batch. Put the seeds in a brine solution. Healthy sink, bad float.
I suppose you can do the brine test for both the wheevel eggs and the ergot fungi, I don't see why not.

High intake of ergot can cause food poisoning, but you can differentiate from other seeds by appearance. Grass seeds, usually are elongated to other wild edible seeds@@stardustxx278

Not only wild rice, but the domesticated grains are all types of grass: rice, wheat, barley, oats, and corn - all grasses. One big difference is the amount of starch. The domestic grains have all been selected for higher starch content. BTW, we 'toast' domestic rice in butter, then add water or stock & simmer as you describe; always have cooked rice this way. But we like wild rice straight! Or mixed w/domestic rice. Either way, it's great!

    Hey Joe, great video series!
You might try toasting the grass seed before grinding them. It imparts a very nutty flavor to any type of seed or nut. Also, most seed have a high oil content and would tend to go rancid if not refrigerated or frozen. Acorns are the same way.
The California Indians made a toasted plant seed food called pinole which was always considered a higher status food than the everyday acorn mush.
Toasted, leached acorn chunky flour added to regular flour for baking adds nutrition and tons of flavor.
Your video series is a great resource for those of us who do not have a back yard as well stacked as yours. Your experimentation with all these plants is great! Cooking any of these plant products will always produce a more nutritious food.
If you have not read it please check out "Catching Fire, How Cooking Made us Human" by Richard Wrangham. All the info you will ever need about how cooking all foodstuffs increases it's energy value to us.
Thanks for all your hard work and curiosity in producing these great videos.

It looks like you did not winnow the seed, or do anything to remove the hulls - or did I miss something? There is a pretty high hull-to-seed ratio in most wild grass seed, It's fiber, but not digestable by humans. I looked for the follow up video... how did the grass seed banock turn out? Thanks!

Thanks! place grass seeds on a tray on something hot in the Sun like a car hood for an hour. The Bugs will FLEE (no pun). Also, I collected Fox Tail (Setaria) and make pancakes the same way you make flour too. I mix 50-50 with some whole wheat, and some baking soda. Not Bad!

If you have DE (Diatomaceous Earth food grade silica) dust the seeds it kills the bugs with out using chemicals and is safe to eat tho after leaving set out most bugs will scatter on there own. it is use full to use to store grains wild or domestic... hope this helps.. i use it over all my yard an garden and pet area's ..... chicken an live stalk area's would also benefit with out the use of chemicals..

i had wondered about the feasibility of doing something like this. i'm not sure if your wouldn't expend more energy than the seeds are worth but interesting. Getting rid of the bugs shouldn't be hard or as commented below feed for chickens. thanks for the video

    • @ModalSoul
      @ModalSoul 6 років тому +1

rick pen Grinding the bugs up and leaving them in will give you more nutrients. If worried about potential parisites usually we cook the flour at a higher temperature than we boil water. Boiling water kills bacteria so the heat will kill them. Bugs are a good source of protein which the body needs very much of.

Did you ever think to sift it to try to get some of the husks off? Maybe put it in a blender with an equal amount of water to a liquify setting for 5 minutes then drain it through some pantyhose? Then squeeze it dry, dump it out and spread it out on something to dry. Just a few thoughts, I'm sure rinsing the flour in the hose migh remove the bitter tannins inherant to the seed.
