This video just completely saved my chocolate ganache. I was just about to toss it and start over when I found this. THANK YOU SO MUCH! I was out of chocolate and would have had to run to the grocery.

Thank you. You saved my peanut butter chocoolate dipped cookies. A couple of extra ingredients, I added, were butter and a splash of coconut oil to the chocolate, first. Then I started searching for how to unsieze the chocolate chips. Everyone else said to use water. That didn't seem right to me. I even thought of using cream. I didn't have any so I used Half & Half. You also saved me from paying for, almost the same thing at our local store. Mine are even better. Scrumptious! Blessings.

I wanted to melt chocolate compound and use it to cover my dougnouts but since the melted chocolates were less so while double boiling it I added hot milk and it got stuff and ideas for this ? Or will this method work for my problem too!?
This is the best fix video. I kid you not I thought I burnt my chocolate LOL Other ones only tells you moisture causes it, and to add water, with basically no other use for the chocolate beside drizzle. I was wondering if you can still do ganache with it, but here you go. Thank you so much!

Was making a big batch of rocky rode, and everything was going fine until I thought that adding a splash of water would make the texture less thick... worst mistake!!!😭Thought I completely destroyed three massive expensive bars of chocolate, didn’t have any left and almost had a mental breakdown!! But this tip completely saved the texture that would of been thrown away!!! Thank you!!! ❤️❤️

Thank you for pointing out what other creators often fail to mention, that the chocolate can no longer be tempered after having water or cream added. While fine for ganache etc - as you say - it can't be used for creating shells or dipping. 👍👍

Can this be used for expired chocolate which is seized?
Hi! So chocolate doesn't really expires, it just has a "best before date" so you can technically still use it! The chocolate has probably bloomed by now, which is not best to eat as is because it has lost some of its flavor but it can work for sauces, melting etc. So yes, I am assuming that it could work! Let me know how it goes!

Hi! I don't think so as chocolate once it seizes loses most of its components and you need the chocolate to be in top form for things such as chocolate shapes!
what if i made a batter for truffles but it broke like this? can i use this method and hope to still end up with truffles?

Hi! I used hot cream. It's important to use either hot milk, cream or water to make sure you dissolve the seized chocolate and turn it into a silky, soft and smooth consistency! Good luck!!

Hi Hur! I wouldn't use it because the chocolate is not at its best so it wouldn't work very well to cover the cake pops. It can, however, work as an addition to a ganache or a frosting to make the cake pops with! Good luck!
Can we add whisk cream ?
Hi there! You can certainly whisk in some hot cream into the seized chocolate. It will give you better results- in my opinion. Silkier, smoother and richer! Good luck!

Hi!! I wouldnt recommend it, but you could use the saved chocolate in its liquid form (cooled down) to an italian/swiss meringue buttercream! Which you could use not only to fill the cake but also to frost it!:)

Hi there! I wouldn't recommend it as it has lost properties that would make it nice to cover the pops. I would, however, turn into ganache and use it as a binder for your cake pops! Yum!

Hi there! As is, you cant (just fixed chocolate) but as I say in the video you can turn into it ganache, and use that to fill anything! ❤️ hope this works, even if its a year later 🫣🫣

Hi Mam, I have been using milk chocolate (CH M28) in my Cookies as chocolate chunks, but it melts and gets firm after baking. What to do for chocolate to stay melted even after baking? Pls help
Hi Reena! Maybe because the milk chocolate you're using has a low amount of cocoa butter which makes them more resistant to heat so maybe that happens? What I would suggest is using semisweet chocolate and adding a few oz of the milk chocolate for flavor purposes! Good luck!

My housemate tried remelting the chocolate on low in the microwave. It boiled over. Hope this works.

I'm making cake pops, my chocolate seized because I put water based coloring gel in it ( I know big no no 😬). If I used this method can I use this on my cake pops?
Hi Mary! Are you using the chocolate to cover the cake pops? If so, I wouldn't recommend using it for that because the chooclate has lost a lot of properties and it won't set at room temperature. You can, however, use it as a ganache to incorporate in your cake pops. Perhaps chocolate cake mixed with the ganache (made from the seized chocolate) could be a fantastic thing! Best of luck!

Doubt it! Remember we’re “fixing” chocolate that was seized- meaning it lost most of its components that help solidify it. Plus, we’re adding liquid!

Can it then be used for molds? Water recovery didnt work for my molds, it seized due to adding flavoring in it.

Hi! By adding either hot milk or hot cream until you've reached your desired consistency. I'm always going to choose cream first because I like its texture and flavor. Good luck!
