I tried microwaving chocolate to melt it once. Little tip, don't do that, I ended up with a cracked bowl and ruined chocolate. Edit: You can get away with it doing it at 5 and 10-second timings, don't do the stupid thing I did and put in for over a minute at a time.

If you use a microwave safe bowl, it shouldn't crack. Also, when microwaving chocolate, be sure to do it in short bursts. 30 secs, stir, 20 secs, stir, and then 10 secs, and stir again. A microwave heats unevenly, so if you don't stir, you'll end up with parts burnt and parts not melted. Another tip is to chop up or grate your chocolate to smaller pieces so it will melt easier. cocoa butter in chocolate needs tempering vegetable fat/oil does not tempering= 30 seconds MICROWAVE stir. 20 seconds take out and stir 10 seconds stir repeat 10 seconds until melted
Debby Kaufman the method you use is called seeding and you need a thermometer, the best way is to microwave 10 seconds, stir, microwave 10 seconds and keep on doing it until it is melted but still quite thick. Tempering Chocolate is basically rearranging the cocoa butter molecules since it goes in the wrong order once it gets too hot, microwaves apply minimal heat in short bursts so the cocoa butter won’t go in the wrong order.
Great tips, never thought of using hot water on seized chocolate. One way I've found that works well on reviving seized chocolate is combing it with a saturated fat such as shortening or coconut oil, so that when it cools it will still maintain some coagulation to be drizzled onto baked goods, etc.
It's called being careful. Anything on the outside/bottom of your bowl will be spread around while cooking/baking, and before you know it, you put your spatula on a wet spot.
Maunster! If the chocolate becomes actually BURNED, it is DISGUSTING and bitter and also filled with burned sugar (if sugar content in chocolate) which, the more acid ash you have after eating, the worse you're going to feel, plus it ruins the taste in any product. Seized chocolate, NOT BURNED is still worth using in something else if you cant get it fixed. SADLY.. there's a LOT of burned chocolate in landfills globally, SADNESS. lol

Me too...! I was trying to make chocolate coated butterscotch balls. Butterscotch balls came out great. Chocolate melting, which I thought was easy, turned out to be a mini disaster...all because I wanted it to be richer with butter.. and butter HAS MOISTURE!!
I'd say dry them well before baking. Your fingers shouldn't stick to them, but, of course, they shouldn't dry out completely. But, probably, by now you've figured it out =)

Its not actually tempering requires you to raise the temperature and then lower it the temperature and that type of shtuff
Tempering is when you cook something like chocolate or eggs and than bring it down to a certain temperature than raise the temperature again
