    Hello Miss Rosie, Crucian (St. Croix) native here, I've been making Johnny cakes since I was 15 yrs old, I'm now 54 yrs old. I would have never thought to keep dunking the Johnny cakes as they were frying. I also used warm water, I was always told to use either milk or cold water. I followed your recipe and they are on point!!!!!!! Thank you!!!!!!

      Wow! Thank you so much for the positive feedback. I sometimes use warm water when it’s cold. To speed up the process, but I’ve never used milk. I’ll try it sometime.

    Hello Ms. Rosie this morning I wake up and wanted some bakes and I thought about you because I followed your instructions and my bakes came out very good couple months ago. This time I tried it again and it came out perfect my family loves it. I have mastered it now. My cousin is the late Felix Henderson that used to be on the radio station DBS in Dominica I reside in North Carolina, but was born in Grand-bay Dominica. My mom name is Rosie as well.     Hi Miss Rosie. I am crucian but moved to the states when I was young. I always loved how airy our johhny cake is back home. I made this during the pandemic and was blown away. My mom is coming to visit this weekend and I want to make it for her. She hasn't been home in a while either. Thank you!

      @kimbagaskin9413 I used 2 pounds. You can use as much as you want. One pound of flour , i tablespoon baking powder, one tablespoon butter one to two tablespoon sugar. Add salt to the water to your taste.

    This recipe is so good! I'm Dominican and grew up eating yaniqueques. My aunt has told me many times how to make them but I couldn't figure it out. Thank goodness for this video! I felt like I was eating my aunt's yaniqueques, which are our Dominican Johnny Cakes. This recipe is easy to make and it tastes so good!

    Coming back to this video month later and my brothers said they want them to be sweeter. But I know you said if you do too much sugar, they’ll burn easily. Our Auntie in Jamaica makes these and I can’t get it quite like her lol! Any tips Ms. Rosie?

      You can add a little more sugar if you like. But be mindful keep the heat lower to prevent burning premature coloring.

    My background is Guyanese and sometimes I would want to introduce these dishes to my American born kids but when I ask everyone they like add this and throw that 😅. I asked a lady how to make this today and when I asked she, how much baking powder to put in it ? She look at me like I mad 😅

      4 cups of flour is equivalent to a pound of flour.

      One tablespoon of butter per pound of flour.
      I tablespoon of sugar per pound of flour.
      Add salt to the warm water, taste it first. Before adding it to the flour for the dough. It takes the guess work out.

    Is 2lbs flour correct? That equals to over 6 cups flour

      I like using gold medal all purpose flour, but any all purpose flour should do. I never use self rising flour.

    What is 2 pounds? You mean 2 cups?

      Depends on what flour you are using.
      1 pound of all-purpose flour contains around 3 ⅔ cups.
      1 pound of bread flour contains approximately 3 ½ cups.
      1 pound of cake flour contains around 4 cups.
      1 pound of pastry flour contains around 4 ¼ cups

      Here in Europe the flour is different I find it more heavier if that makes any sense. Trying them now and see how they come out. I measured everything in grams.

    Miss Rosie, I am from Saint Thomas and I recommend the Chicken Fry to my daughter who went down there, she said the ownership change hands and now it is not so good and they no longer make it in a box like they used too. It also very expensive. What I would like to know is do you have the recipe for the chicken fry I would like to make it for her sometime and surprise her.
