Water wasn't guaranteed to no make you sick, but mead, beer, wine, etc. we're safe to drink bc of the fermentation and alcohol. Beer, especially, was basically portable calories. When I saw Walder Frey drinking red wine and calling it Arbor Gold in the show my initial thought was: ahaha WF is so consumed with his own priorities he doesn’t notice that this must be a lie that he is swallowing. With hindsight maybe I was giving dd too much credit but who cares, I had fun #headcanon
One other aspect of that Reach Lords scene is that Cersei is showing that she really isn't as good at the Game as she thinks she is, because the "Arbor Gold," the political lies being thrown around are the only way "Joff" is going to get his swords and men. And in the Tyrion/Sansa scene, they both understand the politics, the "Arbor Gold" very well, but chose to do the right thing instead. They reject the Game, while also getting it; Cersei doesn't truly understand it. (And one could argue it's because Tyrion and Sansa understand people, while Cersei doesn't.) You didn't mention in the end the Dornish red, which seems to be a contrast to Arbor Gold in several quotes. The more wholesome counterpart to shade of the evening? The sour, but drinkable truth vs. shade's unpalatable truth that is also a dagger? Worth more thught.
Also dionysus' older version was a god of madness, particularly that of the insanity humans experience when drunk, but also all kinds of madness.
