You aren't kidding about the mushroom powder. I bought it when your "never buy fake meat again" video came out, and use it in SO many dishes for a more complex umami punch. Nachos? Mushroom powder. Chili? Mushroom powder. Burgers? Mushroom powder. Oil-based spaghetti? Mushroom powder.
@Eric Ryan If you have a Trader Joe's locally, they have a mushroom powder in their spice section. It's very good. If you don't have Trader Joe's, Amazon has a good one by Collected Goods. It's a shiitake mushroom powder.
I think that vegan chili would actually be one of the easiest things to make. After all, most canned chilis and the like are over 50% 'textured vegetable protein" Anyway. Nice choice. Also GOOD MORNING SAUCYMAN!!!

Great tip! I've heard about this trick and no joke I was thinking about doing it in the video!!! I'm definitely going to try it next time I make chili though!!
Just thanking you for introducing me to mushroom powder. I had other vegan "secret ingredients", like Marmite and smoked paprika, but the mushroom powder is quickly making faux-chicken bullion, pricey "better than bullion", and even homemade stock from the pressure cooker all fairly redundant. And unlike the other secret ingredients, in tastes good enough on its own that it helped me through some weight loss fasting... There were 4 different options on the shelves, so I picked the bag with fewest listed ingredients (Singapore brand). Next time I think I'll try the Taiwanese "original" (PoLoKo brand). I would be interested in which one has the least salt/sodium.

Pour meat onto cleared part of dutch oven and cook until meat has browned. 9. Pour beer into dutch oven and use it to scrape the bottom of the dutch oven. 10. Add seasonings to dutch oven and stir to combine. 11. Add chipotle peppers and sauce to dutch oven. 12. Add canned tomatoes and liquids, then stir to combine. 13. Cover and cook for 1 - 1.5 hours. 14. Add kidney beans and gently stir in. 15. Cook for up to an additional 30 minutes, until beans are warmed up.
So we just saw this video on Friday evening and now we’re making it for dinner on Sunday - we couldn’t wait any longer! It’s currently simmering and the wait is killing me. It smells amazing. Thank you, thank you! This will be my go-to submission for any chili cook offs. I’ll let you know how it goes! 😃👍🏻
So, on your recommendation I picked up a big bag of mushroom seasoning. Definitely an interesting flavor. I would say it almost tastes like nutritional yeast with a lot of other flavor packed in. I don't think I'd use it as a soup base where it would be right up front, but I do add it to a lot of dishes as a flavor booster. 9 bucks for what seems like a lifetime supply from my local asian market. Thanks for the tip.
My wife is vegan, and I'm the cook who taught her how to cook a bit better, and now ends up eating more vegan meals than I ever thought I would. Chili is one of our favs, using beyond meat sausage in it for texture mostly. Just foraged a lion's mane mushroom cluster and can't wait to make some crab cakes similar to the ones you made (using just egg, and vegan worstershire sauce). Thanks for all the great ideas!
Happy birthday Mr. Stache. 🎂 Yes I would try that but without the beans. I actually have some TVP, thinking someday I would try to make vegan chili. I hope marmite and mushroom powder are on Amazon.
Happy belated birthday! This chili looks amazing! I'll have to give it a try! I'm one of the viewers who isn't vegan/vegetarian but I cook about 60/40 vegan/"normal diet". Vegan cooking is awesome and you make *really* interesting and creative stuff!

Thank you, can't wait to try this! 😋 I'm pretty much pescatarian, cook mostly vegetarian and vegan. Husband is very happy with my cooking I love to cook for my friends of every diet. I've found that since I don't make a point of telling my carnivore friends that it's vegetarian, they don't even seem to notice the lack of meat--just comment that the food tastes good. (That's what counts, isn't it?) Was introduced to Marmite by my Brit friends, and agree with you, it's marvelous! One of my vegetarian friends told me he still missed gravy on his potatoes. I whipped up a gravy using sizzled mushrooms & onions, Marmite, & mushroom soy sauce (aka, "vegetarian oyster sauce"). Satisfied his craving, & he said it was the best gravy he'd ever tasted! 😊
Happy 40th birthday! I love your recipe, my mouth watered 😛 lol The only thing I would do different is the amount of beans you add to your recipe. When I make chili (vegan of course) I use a different type of bean per can and I end up using between 4-6 cans.

It’s intriguing to me to see what all you create, as you stated about non vegans, I’m not one but deff would try that Chili. Looks amazing. Happy Late Bday also, I’ll be 40 this coming February and have thought long and hard about starting to do non meat options along with my wife and kids. Happy birthday!! I've never tasted or made chili before but this is something I'm gonna try anyway sometime, thank you for making vegan recipes accessible as always!
HI, first of all, you’re such a hUGE inspiration♥️ I can be completely full and watch your videos and be ready to cook and eat all over again!! thank you for it all! I also wanted to ask you what kind of mushroom powder you use. I went to a health market and found multiple types (shittake, maitake, etc) and I was unsure of what kind to buy and the clerk didn’t know either
wow thank you so much!!!! ♥️♥️♥️ So the mushroom powder I use you will most likely only find it at an asian market. Its a combination of dried mushrooms, mushroom extract and salt. Its like a MSG replacement with no MSG. There are loads of different brand names. If you search for Mushroom Seasoning you should find a bunch of asian brands... they will all be close to the same! Some do have MSG in them so just check for that if you dont want msg!
Chili is my JAM. I usually mix TVP and Lentils in mine, it's SO damn good. I think I'm going to start incorporating some ingredients you used because I am intrigued! ALSO, HAPPY BELATED BIRTHDAY we're the same age! Haha

HAPPY BIRTHDAY! Great video dude. I just discovered your channel and it's amazing! I really like the approach you make. With a simple look you can't tell this is a vegan clocking channel, because that could scare away meat eaters. You really make a good job of accepting all different diets and satisfying them all. Good job!
Love this. I actually put mine together backwards, as I always make my chilli with my second day beans, so i get two entirely different bean suppers, both of which go great with my vegan buttermilk cornbread. I actually just made chilli yesterday morning, but it came out bad, because for only the third time in my life, I had slightly burnt my beans the day before (fell asleep with the crock pot on low). It's edible, but as one of my signature dishes (so very much like your recipe), I'm bummed. One thing I use that you didn't is diced carrots. They add sweetness, without needing to add sugar. Sometimes I do a mirepoix, but I didn't bother this time. I found it interesting you do like me, with the oregano and basil; I fall back on Italian seasoning. So not traditional! I sometimes add balsamic vinegar as well, just 2T. Cheers.
Chili is a good choice! Nourished Nutrition in Australia make an awesome TVP chilli mix that you literally just hydrate, warm up and add tomatoes beans and corn and you're done. So good.
Wow! That looks like one of the best chili recipes I've ever seen. Love the chipotle addition (the whole can!). Thanks for the recipe and is this written out somewhere? AND Happy Birthday!!
Knowing your experience and creativity in plant-based cooking, I thought to myself "why chilli?" . And then I realised, vegan chilli is exactly what I persuaded for my fam with that plant-based does not mean tasteless and now they request it regularly! It is just so satisfying without meat! I must say, I make mine slightly differently BUT the concept is pretty much the same :D TVP is just a game-changing ingredients! One thing which surprised me is how different are the spices I go for :D Also, I hate mushy red peppers so I add them at the end, together with canned corn. Luckily it is such a forgiving dish you can adapt it to your preferences in any way you can! . Sending you even more love than usually and sending you all the best wishes! Have a great end of the week!
I enjoy watching the vegan approach to chili flavor structure. I'll cook that separately and add the smoked venison and bison at the end. Thanks for a great recipe.
I made this tonight and loved it. In the past I’ve used ground up pecans for texture but the TVP and the bacon bits were awesome. I’d only suggest two tweaks: cut the brown sugar and up the chili powder another 1-2 tsp.
I made this last night, it was excellent. The only thing I didn't have was the mushroom powder so I subbed with red miso. Tonight we are having the leftovers over pasta, thanks for the recipe.
HAPPY 40th!!!!!!!!!!!!! Looks great! Can you try making yogurt using cooked chickpeas to ferment? I don't know if it will work with plantmilk, but usually the ratio is 5 whole chickpeas per 1 liter.
I have been on a journey to figure out how to make great vegan chili. I have seen some crazy videos, and I have watched people try to stuff every vegetable under the sun into their chili. I even saw one recipe that didn't have any chili powder. But I like yours the best!
HAPPY BIRTHDAY GEEZER! Love your content, always impressed (even though I am one of those Vegans that just doesn’t get why we need food to imitate meat!). Having said that I use TVP quite a bit (I know!) 😂😂😂 Might I suggest that if your friends don’t like spicy chilli foods...! You need new friends! (Hello 👋 😉) x Love to you both x 🇬🇧🌱
Wow! Except for the marmite and bacon bits, you just made my "Mom's Vegan Chili"!!! I've been making this for about 30 years and my boys (neither of whom is vegan, have requested it more than any other meal since they were in their teens (they're in their 40s now). Even my mega-carnivore father ate it without noticing that it had no meat in it. I do use more beans than you do (and often sub chili beans or pinto for kidney). This is great over tortilla chips or "Fritos" for a Frito pie and if you pour it over cornbread in a casserole topped with vegan cheddar it makes a fantastic Mexican casserole as well. You can use it on vegan hotdogs for chili dogs too. It is incredibly versatile as well as delicious! I hope more people try it and consider that being vegan doesn't mean you have to eat nothing but carrots and celery!
2:15 While imitation bacon bits are made of soy and are usually safe for vegans to eat, other varieties may actually contain bacon. It's also worth noting that some of the types made of soy also include honey and real meat flavoring that make them non-vegan as i pointed out before with some soy sauces not being vegan
7:31 Mark’s reverential tone is everything! My brother in law couldn’t believe this chili was vegan. 😊

I made this tonight and loved it. In the past I’ve used ground up pecans for texture but the TVP and the bacon bits were awesome. I’d only suggest two tweaks: cut the brown sugar and up the chili powder another 1-2 tsp.
What’re the odds we’ve got the same blue Dutch oven! Im even more pumped to try
this recipe. When I follow along with you, it’ll be more authentic!
I made this last night, it was excellent. The only thing I didn't have was the mushroom powder so I subbed with red miso. Tonight we are having the leftovers over pasta, thanks for the recipe.
Happy Birthday brother, from Sunshine Coast, Queensland, Australia
I have a box of mushroom broth in the cupboard. I think I can make this wo going to the store. Thanks Sauce, subbed and liked and giving to the squad!
Sending an abundance of birthday blessings from Liverpool, UK! Happy 40th to you 🎊🥳🎉

Happy birthday sauce stache!!!
This is amazing!
Thank you so much!!!
It looks great. I will have to add masa for the thickener and the distinct flavor. My family expects it here in Texas.
HAPPY 40th!!!!!!!!!!!!!
Looks great!
Can you try making yogurt using cooked chickpeas to ferment? I don't know if it will work with plantmilk, but usually the ratio is 5 whole chickpeas per 1 liter.
My vegan spaghetti sauce suprised people! Also Chili! I love your videos so inspirational!
Thank you so much!!!
Is there something else I can use to substitute the beer? I can't drink alcohol.
Happy belated birthday Mark!
Dude, never thought to rehydrate those bacon bits! Wow!
I started watching your channel not being vegan, and now I am. Now you are a gift to the vegan culinary world.
Thats amazing! Thank you so much
And now I know what I'm making for lunches this week! Finally, a recipe I think I have all the ingredients for.
Thank you!!! I cant wait to hear what you think!!
Having said that I use TVP quite a bit (I know!) 😂😂😂
Might I suggest that if your friends don’t like spicy chilli foods...! You need new friends! (Hello 👋 😉) x Love to you both x 🇬🇧🌱
hahahahaha Thank you!!! I need some new spicy friends for sure hahaha thank you so much
Welcome to the 40 club, happy birthday! Looking forward to making this one.
My friends ! It looks so delicious. Your cooking skills are amazing. Thank you for the good food.🖤:)
wow good sharing awesome 👍👌
Happy Belated Birthday! 🥳🎉
Thank you so much 😀
Thanks to sauce stache, any and everything could be made vegan. LOVE YOUR VIDEOS!!!!
Me: allergic to soy (intolerant of legumes and seitan)
My partner: vegan
Us attempting to cook: D:
I’m a vegan allergic to soy. Try tempeh, because it’s fermented I can eat it no problem, maybe it’ll work for you too!
@tubetardism 20/20 beans are legumes. So this person is basically allergic to most vegan protein sources.
Apparently jack fruit can be used to make a "pulled pork". Curtain mushrooms can be used to made to be taste like bacon or chicken.
Happy birthday!!!!
No link to print the recipe. Looks very good
