As a layperson I would like to ask - is there a specific reason the bits are so pretty or is it purely for esthetic enjoyment?

It's supposed to make the bits last longer. Different coatings look different so not all of them are pretty.

Never seen great quality endmills that are coloured like they have been through a hot supper, mostly just to impress hobbuist into buying shit?

Could be titanium, it starts taking on rainbow colours under certain conditions.

Heat treating will do that to stuff or it might be a coating to coax people into buying it

I look at it and realize back then before technology you had to be strong to be able to do anything fun and mechanical and now you just gotta be smart enough to push a button kinda crazy looking at it
