My mom has a super 50's version - cream cheese, minced bacon, onion & mushroom stems. They always got snapped up. She is the queen of cream cheese appetizers (Upper Midwest!) - the other one is dill pickles, dried and slathered with cream cheese and then wrapped in corned beef, chilled and then cut into "coins". It sounds a little gross, but they are a little bit of salt heaven and went as fast as the stuffed mushrooms.

Those look amazing and sure they taste just as good. i made mushrooms stuffed with artichoke, spinach and mushroom stems with cream cheese, mozzarella and parmigiano reggiano. And they were delicious. the only thing i'm missing is my mom being there to help. Thanks John and mom.

Delicious! I usually add chopped/minced chives, minced thai chilies, ' chopped/minced walnuts, and top with grated havarti-jalapeno cheese, or a strong cheddar!(works with swiss, smoked gouda, any cheese you prefer! )

I have stuffed mushroom in my oven right now! Hot Italian sausage, scallions, chopped mushroom stems, mascarpone and Parmesan cheeses, Panko bread crumbs.... the mushroom caps are big white button ones, which were marinated in olive oil and Marsala wine while I cooked the filling. I will def try your recipe!!
I make them as a main course. I start with large Portobellos. Ingredients: cream cheese, 4 cheese pizza blend, either diced ham or Polish kielbasa (Italian sausage works great too), sometimes I add some ricotta cheese, and parsley. Brush the mushrooms with some olive oil, stuff (i like them a bit overflowing) top with a bit extra cheese. Then it's on to the grill at 400 until golden brown. I'll try yours if you try mine!
I always have too much stuffing for my mushrooms so I take the smaller end of a melon baller and scoop out a little of the mushroom inside to make room for the filling.
I made these for Christmas since my Aunty loves stuffed mushrooms. They were good as long as you like olives cause it was definitely olive heavy and their taste was pretty strong and distinct but if you like olives then it would be a good recipe for you. I made double the recipe and then I cut up the stems and sautéed them in a little bit of butter to add them to the filling. His mom is definitely right in that you don’t need to add any salt cause all the other ingredients have salt in them already. This wasn’t really for me since I’m not a big olive fan but my aunty seemed to like them so if all the ingredients sound good to you then I would definitely recommend this recipe.

My boyfriend is allergic to olives and we don’t have any dairy or meat so we subbed some artichoke hearts for the olives and a little soy sauce and garlic for the Worcestershire and added a pinch of salt turned out great! Used a vegan cheese as well. If you find the mushrooms get too juicy/watery maybe add some bread crumbs to help absorb that
Mmmmm, don't these look good! Going to give them a try, but might add in a bit of cream cheese. One of my favorites has cream, ham, fresh bread crumbs and a few other ingredients. Another has sauteed onion, mushroom stems, celery, breadcrumbs etc. The possibilities are endless! 🍴👍🍴
