LEMON CRUSTED BAKED COD, RICHARD IN THE KITCHEN

- Easy baked cod recipe just like you get in your favorite cafeteria. Wild caught cod topped with a mayo and lemon based sauce then baked until the crust is golden brown and the fish is super flaky.
Shopping List:
Wild caught cod fish
Kosher salt and course black pepper
1 tsp. Lemon juice
2 tbls.Lemon zest
1/4 cup mayo
1 tsp. Dijon mustard
1/2 cup Ritz crackers
Sprinkle of white wine
Directions:
Pre-heat oven to 350 degrees
Season the cod fillets with a sprinkle kosher salt and black pepper
Place the cod in the oven for 5 mins. After 5 minutes, remove and sprinkle with white wine.
Prepare the sauce with the mayo, lemon zest and lemon juice
Crumple up the Ritz crackers in a plastic bag.
Remove the cod from the oven and give it a sprinkle of white wine. Place back in the oven for 7 more minutes.
Remove the cod from the oven and topit with the sauce then sprinkle the Ritz crackers over the top of the sauce.
Place back in the oven for 2-3 minutes.
Serve with lemon wedges and your favorite seafood sides.

Making this for the 2nd time. It turns out lovely. I just added the wine at the beginning cooked for 15 mins then topped with the crumbs and back in the oven for another 3-4 mins and it was perfect.

Is there any specific brand of cod, if I had to buy frozen, would you recommend? I'm new to fish cooking but I had scrod at a local restaurant for the first time and omg I wanted to lick the plate in pub it was so good but I've found recipes that load up butter and I'm not looking for those extra calories and fat, but your recipe looks better. Can't wait to try it.
Good question. I always advise buying any kind of fish caught in the wild. Study the label carefully. Stay away from farm raised fish of any kind. They contain carcinogenic properties such as PCB's. Try to by your fish at a fish markey if possible, but most grocery stores carry wild caught fish and shrimp. Hope this helps. Thanks for watching.

I have a similar recipe. Mayo mixed with sour cream and mexican blend shredded cheese. Then topped with grated parmesan cheese instead of the cracker crumbs to make it Atkins friendly. I'm trying to figure a way to cook a large batch for a bridal shower, it's that good! Thanks for sharing.

MMMMM!!!! Could this recipe be altered somehow making it a put it in the oven once job? I'm going to try this also and I'm thinking about putting a clove of garlic in there somewhere. Thanks for watching and your good question. I should have explained more in the video. There are several reasons why I did it this way. The first time I pulled it out was because I had forgotten to sprinkle the fish with the white wine to begin with so I had to go back and do that then give it a chance to cook off the alcohol before adding my topping. It normally takes 12-15 minutes to bake cod at 400 to where it's flaky then only a few minutes to brown the topping under the broiler. So, had I not forgotten the wine at the beginning I would have let the fish bake then only pull it out once to add the topping then throw under the broiler. Thanks for your question. Not sure if you're asking a question with the mayo, but if so, I add the mayo to the top of the fish then sprinkle with the crusting then bake it. You might also check the video I posted yesterday....Cajun Baked Cod in creamy garlic butter sauce. Thanks for watching and commenting.
RICHARD IN THE KITCHEN What I meant was before I cook the fish I add the mayo mixture I noticed in your video that you pre-cooked it and then added the mayo because you could overcook fish and it could be kind of dry but that’s just my opinion

Tried this recipe but I’m so nervous about uncooked fish. One of the fillets was still pink
If your fish was under cooked there are several possibilities for this. if your oven is working properly and truly baked the fish at 350 for 20-25 minutes, it should be done. I had to have my range/oven replaced once because everything I baked was under cooked. The temp knob was all messed and getting up to the temps I set it at. So that's just something to check. Assuming it's not your oven, the thickness of the cod plays apart in it too. Obviously thicker fish may take a little longer to cook. Many are afraid to cook any kind of fish because it can be tricky knowing when it's done. The best way to tell is to use an digital probe thermometer, which are cheap to pickup but oh so worth it. Cod, and most fish, is done when the thickest part of the fish reaches 145. Another to tell is the color of the meat after cooked. It should be opaque, not translucent, and when a fork is inserted and gently twisted in the thickest part, it should flake slightly. Sorry you had trouble with this dish. Eating cod that is slightly under cooked should not present a problem as any bacteria or parasites present were killed during the time it was cooked. And if your fish was frozen before thawing and cooking any bacteria and parasites would have been killed during freezing. As bad as it sounds some people eat raw fish. Yuck! Not for me! I live on the Atlantic and I get Norwegian Cod thats wild. The Pacific fish I stay away from because of the Oil spill and the radiation from Japan.

If it says "wild caught" on the bag it means exactly what it says. It's been certified by third-party(s). Otherwise , it would clearly specify "Farm Raised", or "responsibly farm-raised". If they were" full of it", theyd be hit with such severe law suites/ out-of business fast. Today , many informed people follow food science -health and such information pertaining to food origin, certification, company reputation-history / practises, etc
First, thanks for commenting. At the 1:11 mark in the video I was actually referring to "Salmon" from the Atlantic. (I should have clarified that). All salmon from the Atlantic is in fact farm raised. I have personally seen packaging in the store reading "Wild Caught Atlantic Salmon". Okay, thanks for your prompt answer. But I've seen many recipes where they add the tartar and the crumbs right at the start, and quite a few where they go your way. Is there any difference in how the fish turns out in these two different methods? That was what i meant to ask in the first place.
You're welcome. It only takes 12-15 minutes to properly cook the fish itself. I have done it both ways also and there's really no difference with how the fish turns out. I changed it up this time because of the wine. I just wanted the alcohol to cook off before adding the toppings. Hope this helps. Thanks so much for watching.
