My husband and I celebrated our 41st anniversary yesterday. I made these brownies for our special day and topped with some banana/cherry "nice" cream. Delish! Love your channel, Brittany. You are an inspiration.
I made this recipe tonight with a few modifications. I doubled the cocoa powder (because I like that intense chocolate flavour), the date paste, and the flour (my sweet potatoes seemed very wet, even though I roasted them in the oven). I also used spelt instead of oat flour, mashed banana instead of apple sauce, and added 1/4 cup of semi-sweet chocolate chips. They baked in an 8x8" glass pan (lined with parchment paper) at 350 degrees for one hour. The brownies turned out pudding-like, chocolatey, and delicious. If anyone is interested in the calorie content, I plugged it into cronometer and if you cut the pan into 16 squares, each square is 80 calories. Good luck limiting yourself to just one square! They are even better if cooled overnight in the fridge. I think this recipe is decadent enough it could fool most non-vegans.
I finally made these today, doubled the recipe (because why wouldn’t you😉), had to bake in a ceramic pie pan because I don’t have silicone, and ended up having to bake for close to 90 minutes. It still came out like pudding (with a nice crusty top), BUT...it is unbelievably delicious, and even better after a couple hours in the refrigerator! Brittany continues to amaze me with her easy-to-follow recipes that satisfy a serious sweet tooth yet are totally good for you. What a treasure!!

Instead of the orange sweet potatoes, I used a combination of Hannah and Japanese sweet potatoes, which both have a whitish flesh. We like these better and think they’re sweeter, especially when roasted until very soft. Anyway, your recipe is terrific. Thanks so much!

I made 1 1/2 batches of this recipe as I had extra sweet potato in the refrigerator. I am not sure what I did wrong but when we tried these something was definitely missing. I almost think I jammed too much sweet potato (which was all purple sweet potato) in the measuring cup (which I used 3 cups full) as this really did not taste like a brownie. So, I thought about it and decided to put it all back in a bowl and added some more date paste, cocoa powder and more oat flour, put on some deli gloves, mixed it all together, put it back in the baking pan and recooked them for 30 minutes and this definitely improved the taste, making them more like a really nice fudge-y brownie. I am not sure if it was because I used to much sweet potato or maybe because I used ALL purple sweet potato. 😋
I'll have to skip the applesauce since I'm allergic to apples. But I think I'm going to have to make these next grocery trip. I've been craving brownies so much lately.

I made this today, well, sort-of... cooked the sweet potatoes in the instant pot, I had two instant pots going. I was in cook mode and as I was adding the ingredients I noticed that I did not have dates, I did not buy any because I was sure that I had some. I ended up using prunes, don’t do that... it actually was not that bad, but when I have a break from my cooking and prepping I will go back to the market. I already have 2-cups of sweet potatoes prepared. LOL 😂 Thank you for being awesome! - Gigi
Hi, I made the brownies and they taste incredible! Even better than the sweet potato fudge if that's possible. I used maple syrup instead of the date paste and added peppermint extract and chocolate chips. The problem is that even though I left them in the oven for 30 minutes, they never formed up at all. They came out sludge-y. Like heavy frosting. I would never be able to pick it up without having it drop in glops. Was it because I subbed the syrup? I'm still in love with the way they taste- what a chocolate fix! 😊)

YUMMY! These came out so good. I added in some unsweetened chocolate chips and two TBSP’s of chopped walnuts. They remind me of a cross between a moist brownie and fudge. 😋😋 #jaroudigiveaway

I wondering what i did wrong...my brownie is very very soft, too soft really. Like it's not cook and it pass 25 min in the oven at 350 and I put it back for 10 min more and another 20 min. It still soft, just a bit more cook but soft.
I am going to try this soon as I can go to the store and buy some sweet potatoes. A side note here, the audio sounds like you are in a tunnel and has some feedback. Is there anyway you can work on/adjust it?

I've seen a few comments about these brownies being gooey. After making them, I see what people are talking about, but I really loved them even if they aren't a stereotypical brownie texture. I think of them more of a very firm chocolate custard. I made them exactly as written, but on my second batch I will be increasing their baking time. Thanks Brittany for a FABULOUS recipe. These are my go-to for helping me avoid the children's Easter candy. Willpower is a limited resource!
I FORGOT TO SAY...I used a long-roasted Hannah sweet potato instead of the orange variety. Because the Hannah sweet potato is much more like the consistency of a white Russet potato, the brownie sets up better. Hannahs roast up beautifully and taste very sweet.

I followed the recipe exactly as is and like others mine turned out gooey. I cooked them for longer and they were still too moist, I felt that before putting them into the oven the mixture was too wet and wetter looking than yours as well. I have no idea why?

Do you measure the oats before or after blending into flour?
Depending on the speed of the mixer, 1/3 cup of rolled oat equals 1/3 cup of flour (I Google searched the question for 1 cup).

Fred Altmann it’s a moist brownie but as it sits the texture firms up - id say 40 mins you are good. The top should be firmer to touch
