Sweet Potato Flatbread [Two Ingredients Only!]

- Sweet Potato Flatbread Recipe
Ingredients:
1 cup cooked (Warm or hot) mashed sweet potato
1 cup oat flour
(rolled oats blended in a high speed blender to make a flour)
Directions:
1. Mix together oat flour and mashed sweet potatoes together to form dough.
2. Spilt up dough evenly and form patties, add a bit of extra oat flour so dough does not become sticky.
3. Roll out dough with a rolling pin or form by hands
4. Heat flatbread on high heat on skillet when it browns and flip to other side. (Keep an eye on how quick they will brown.)

I halved this recipe, used red potatoes, added some umami mushroom seasoning, garlic powder, onion powder, basil, and salt and turned it into a pizza crust!!! I cooked on the skillet as directed, then topped it and baked in a pre-heated oven (400) for about 18 minutes. SO GOOD.
You just rocked my world! I couldn't imagine how this might taste. I used the flatbread to make an avocado-tomato wrap using mustard, fabanaise and a bit of arugula. Holy Moley!! That beat $40 plate heart stopping meal family took me out for a few weeks ago. ..and this was heart healing! I can't wait to share this with a friend who desperately needs to discover how to eat heart healthy!

i just made them and I like this recipe a lot. It was so easy! I pulled out my tortilla press and a silpat. With the blunt straight edge of a knife to occasionally nudge the dough off, they lifted nicely and cooked beautifully. Thank you. Oh, and just for fun, I rolled the first one up with some homemade sauerkraut. It was a very nice breakfast treat.
Update: When frozen flatbreads get toasted they pop up like pitas! The exterior is crispy and interior soft. I love these little gems.

Daniel Robuck Nice change-up. To guarantee a strong pumpkin flavor once mixed with the oats, I'd probably dehydrate the canned pumpkin (boil it down) a bit to match the consistency of the mashed potatoes. There must be a zillion recipes for this--well maybe not that many!

I used the half potato half oats to make dumplings for my vegan version of chicken paprika. Works so well for dumplings too.

What your mum used to make by mixing the mashed potatoes and flour and dry cooking them, is what is known as "potato bread" ; in N Ireland as "slim"; in S. Ireland as "fadge". It was cooked on the griddle over the fire. It is very popular in an "Ulster fry" which consists of about 10 ingredients, all fried in the pan! Your Sweet potato flatbread looks much healthier!! Delicious! I made a batch of these but only cooked 2 and saved the "dough" in the fridge. Next day it was easier to handle and still delicious. I've been topping them with a handful of steamed baby kale and a little mushroom powder or Dr. Gregor's "Indian-Style Spinach" from the HNTD Cookbook. New favorite! Thanks for this revolutionary and plant perfect idea.

You could put the dough between layers of wax or parchment paper to keep from sticking to the rolling pin. Great recipe!

I tried it with a white sweet potato (usually labeled as yams in a regular grocery store in the US). It worked perfectly!
This was wonderful today with sprinkles of queso fresco and blueberries! What an easy recipe. We used to make potato pancakes too. They were a puffy savory thing that often would have chives in them. We never did sauerkraut, but it sounds yummy.
Love this recipe. Also to make the process faster I got a tortilla maker that flattens the dough. Amazingly quick! Thanks for all your yummy recipes!

Mine were a bit sticky after pressing in tortilla press-I just left the parchment on while heating them until they released-never knew that was a thing, but it worked great!
