    Hello, just came across this recipe and tried it today. Delicious. I adjusted a few things. In the past I used to eat egg omelettes, so after cooking the vegetables, I just poured the chick pea mixture on top of this and it worked out fine. I also mixed the chick pea flour with warm water to get rid of the lumps. Thank you for this recipe, really enjoyed it😀😀

    I tried this and it was delicious! Even after I added to much water, broke it apart when I tried to flip it, and burnt it. If it survived me and tasted this good I can’t wait to taste it when I finally manage to make it right! LOL 😋

    I live in the place where I can't find chickpea flour. The best solution is to soak chickpeas first overnight and then blend it. I make similar omelete very often and this technique works very well. Also for fat free version the best is to cook it in the oven. Just put cooking paper in a tray and put it into the oven.

      Letsmakethishappen Awesome tip. I use soaked chickpeas also when I make roasted eggplant hummus. So much better than using can chickpeas

    Just made this 😋 it was delicious.!I’m a new vegan and I can’t lie I was having a hard time with breakfast ideas. Omelettes were my favorite breakfast dish, now I can have it without the guilt or dairy. Thank you ,so happy I found your channel!!

    In India we made with blac bean flour call Besan ka pura...it realy taste good .

    I always find it interesting the way certain Spanish names/words are totally different from their Latin American definitions. Tortilla in Spain = Omelette, meanwhile Tortilla in Mexico = Thin flour or corn-based type of bread. Me, I put a tortilla inside a tortilla and then fold in half, like a taco! 🧡👍 This one looks amazing!

    Genius, this will replace the pizza too you can make pizzas from this and even spike the chickpea's flour with oat flour and some quinoa. It tastes better than a normal pizza if you do it right. You are a brilliant woman. Thank you.

    It does look delicious. Gonna try this one too.
    I don’t miss the taste of eggs but for those who do they can add a small pinch of black salt. It’s sulphur rich so it resembles eggs.
    One more point about cooking with olive oil is that it has a very low smoke point, 275 F, I think. Therefore, not as healthy as grape seed oil or avocado oil.

    Hi Jana ! Have tried it because I always fail to make the creamed tofu omelette and just love the tortillas ! For the pepper, I use 1/2 black himalayan pepper, which is high in sulfur taste and makes believe there are eggs in there ! However, not lucky for the turnover... Messed up my cooking area... A non-stick pan should be better but don't have one because of its toxicity...

      Oh, you have a great point there about the non stick skillet, I always think about that, have you seen the movie Dark Waters? Its about Dupont and the teflon toxics... Scary... :(

      @@ChefJana No haven't seen it. Not sure I would like to from what you tell me... I love the recipe (I have put cilantro in it, my passion herb) but next time I will not use the chick pea flour. I find that it is heavy on the digestion combined with the potatoes. I think next time I will put in whipped aquafaba instead... I am trying to cut on cereals the most I can.

    This was excellent!! I subbed a 1/2 of my yellow potato for sweet potato. Lightly steamed my potatoes but shredded the sweet to mimic cheese. I may also add carrot to this next round. I overcooked mine just slightly so those reading this - please know it will dry out a bit and you want some added moisture. Mine held together beautifully and cut very well for serving.       P.S. I may also sub the water for plant based milk to see what happens as your other recipe for egg free breakfast made with cabbage was divine and very creamy/moist and I want a bit that in this recipe.

    I think you are a very accomplished chef. Your recipes are very well done. I use chickpea flour cooking Indian food and they make dishes similar to your omelette. But I can’t agree that there is anything eggy about the taste of chickpeas. Although I thoroughly enjoy it and all its uses in food.

    If you let the chickpea four / water mix sit for 15-20min, the lumps fall away & it blends smooth easily.. Dish looks yummy, thanks

      If there are no eggs it's not an omelette; but a very healthy Spanish or Italian frittata; absence of eggs, who cares. I did have to try 2x to get the baking soda in proportion; was delicious, highly recommend it.

    We Italians would call that a vegan potato frittata and the final stage could be cooked in the oven to cook the top rather than flipping it. It would be cut into slices and shared rather than an omelet which serves just one.

    it took me a while to find chickpea flour and your tip to grind them up was vr vr helpful. I followed the recipe exactly and it worked perfectly. Oddly enough -- I've been vegan for several years and don't have cravings for foods that mimic meat -- but a neighbour of my sister rescues unhappy chickens and brought me 2 eggs; extreme vegans you can all kill me now. Perhaps the only thing that wasn't perfect was the baking soda so I brought it up, not recommending eggs by any means although this is supposed to be a Spanish/Italian frittata. I lived in Sao Paulo for some time; my best friend is Brazilian; it is also a fascinating cuisine that can be adapted. You look very beautiful as you cook and will inspire other women who don't feel so well about themselves

I'm not this kind of person, it's all cool. :) If you can't find flours, just grind the grains, I do it with rice, grind it and transform it in rice flour, chickpeas, anything... ;) Oh, funny you've said that because a woman just made a comment saying that I'm too fat and no "sensuality at all"... hahaha...     If you add a tablespoon of rice flour to the chickpea flour, it will be easier to flip because it will hold together better and will have a slight crunch in the edges.

    So India, we get something called as black salt( Kala namak) I don't know, if people across are aware of it. If u add this salt to the mixture, the omlette will taste exactly like eggs. Try it!

      But you know you should be popular because everything I tried that you made is right on. You give such good thorough instructions, tips and suggestions that’s important. I made this receipt when I 1st discovered it many month ago last year and I followed your instructions to the tee and was sooooo good. Ive made it two more times after that but then got lazy and just make tofu scramble lol. But I have not forgotten this recipe it keeps coming up my mind and I salivate thinking about it 😂 I decided enough procrastinating I need to make it again but I 4 got how to make so searched for it and BAM THERE IT IS lol I was sooooo happy and I made it and made me soooooo happy some more 😄

    No doubt your tortilla looks yummy and I'm sure it is. But the traditional Spanish omelette is a lot simpler, it only has 4 ingredients: potatoes, onion, olive oil and eggs. I make vegan Spanish omelette with 5 ingredients: potatoes, onions, chickpea flour and water, olive oil. I also don't deep-fry the potatoes but I cook them in the oven with a drizzle of olive oil. The end result is really close to the traditional one.

    Very nice recipe! I had chickpea flour "Tortilla Española" from a vegan shop in Barcelona - It was amazing! I often make Farinata similar to this and I love that too :) You are right about the vegan butter, you can put both vegan butter and Spanish olive oil together to get the best of both worlds if you like :)

      Probably good idea, gluten free; my doctor tested me and for me wheat is a big problem; so I can eat occasionally dense rye pumpernickel bread without problems; don't buy it however. Eggless omelette; I made this exactly as described and perhaps my fault but the first time the baking soda got in the way. Next time I think worked very well. I looked at macro nutrients; chickpea flour was pretty good beside the vanished eggs. PLEASE don't let this stand in your way but I personally don't try to create fake anything; meat, eggs, parmesan not on my list. Chickpea flour Is still flour; also so much work. Nuts and seeds yes; soak cashews overnight, blend with some lemon juice -- millions of recipes out there -- better than crème fraiche, lazy left off accents, but really good and keeps in fridge for days. Would still vr much recommend recipe.

    You can substitute regular salt with black one ( Kala Namak ). It will give your omelet that egg flavour 🙏🏻🍀💚

      @@evelynbaron2004 I live in Spain and live a very simple life, actually... :) But this salt is getting more and more popular, you can get it on Amazon for sure but most shops carry it nowadays. :)

    I did this recipe and sth might not be right with proportions. I added, as stated in the recipe above: "1 cup of chickpea flour
    1 cup of water" and the mix was waaaay to thick (3/4 times thicker than the one on the video)
    Plus, the mixture does not cook properly in the pan, it kinda boils and bubbles but does not make a solid tortilla, it's rather a sauce ;/

    I usually mix the chickpea flour with water, then when I am satisfied with the consistency, I add the veggies!

    Great video.
    I have a question. I’m not a great cook but making a Spanish omelette is one of my go to recipes, and what I do that’s different from this technique is that I’ll have the hot pan with olive oil or vegan butter ready, and when I have my “egg” mixture ready, I mix in the onions and potatoes while they are still hit and then quickly pour mixture into the pan, that way the hot potatoes will help start to cook the inside of the omelette before the outside gets over cooked or burned before the inside can catch up.
    Can someone tell me why or why not my method is a good idea or not?

    If you add indian black salt (it's pink actually) it will give an eggy taste bc of sulphur.
