TRADITIONAL MOONCAKES

  • There are many types of mooncakes. The one I baked is the most common. It is golden brown and glossy in color. The filling is sweet and smooth. The most common fillings are lotus and mung bean.     INGREDIENTS:
    120 g golden syrup
    40 g vegetable oil
    1/2 tsp alkaline water
    FOR THE FILLINGS
    mung bean paste, lotus paste
    nuts and salted egg yolk
    35g Dough and 90g paste for 6cm mould
    BAKING INSTRUCTIONS
    1)190°C for 3 mins. after 3 mins take out for egg brushing. Lower the temp to 170°C
    2) 170°C for 5 mins. after 5 mins take out for 2nd brushing.
    3) 170°C for 15 mins or until golden brown
