Traditional Mooncakes with Lotus Seed Paste & Salted Egg Yolks Recipe! 🥮 蛋黄莲蓉月饼

This festival not only celebrates a bountiful fall harvest but also brings families together for a joyous feast! 🏮
⭐️this recipe makes 6 large 150g mooncakes. If you want to short cut the process, you can buy the pre-made lotus seed paste.
🌝Ingredients:
Pastry Dough:
- AP flour - 1.5 cup (217g)
- Golden Syrup - 3/4 cup (262g)
- Neutral oil (I.e. canola, corn, peanut oil) - 1/2 cup (108g)
- Lye water - 1 tsp (5g)
Lotus Seed Paste:
- Dried Lotus Seeds - 300g
- Water - 4 cups (32oz)
- Sugar - 1 cup (200g) use 1 tbsp (12g) for caramelizing
- Neutral oil - 1 cup (215g) use 1 tbsp (14g) for caramelizing sugar
- Maltose - 2 tbsp (40g)
Other:
- 6 salted duck egg yolks
- 1 egg yolk (for egg wash)
- 1 tbsp of water (egg wash)
- Rice cooking wine
- Flour for dusting
