I made this probably from the same source you used and made the BLT w/ mash avocado instead of mayo on cauliflower bread (open face) and it was terrific. You're right as long as you don't go in expecting it to taste the same you will love it. We did.

This is inspiring, Chef John! Now I want to make a "vegetarian" style breakfast once in a while. I'd make it with roasted cauliflower and a tasty sweet type of bread with it (something Pepperidge Farm provides for example).

I might have to try this, in the hopes that I'll finally find a reason to like eggplant. I've had stir fried eggplant, baba ghanoush, eggplant pam, and numerous other dishes. Consistently, I dislike them. But it's such a popular ingredient in so many cuisines, so I feel guilty for not liking eggplant. My quest continues.

Hi chef john. I was hoping you could help with a problem i have. When ever i try to roast my sweet potatoes they always come out to soft and if i keep them in longer they burn and still stay soft on the inside. Any tips to fix this? Although something crunchy is what i would like im fine with a potato that can atleast hold its own wait like the Eggplant bacon at 5:01

I think an ELT sounds like a great way to try this - but with cheese added. I bet adding a sprinkle of parmesan just before finishing cooking these would be a good addition, also. I LOVE eggplant and cant' wait to try this.

No, it's too floral. Brown sugar or molasses will be a better substitute if you can get your hands on it.
Thaís Franco no. won't be the same. you can make a syrup substitute by boiling and reducing 1 cup brown sugar with 1 cup water for about 5 mins. then take it off heat and stir in 1\2 teaspoon of cinnamon and a splash of lemon juice.

Eh. I didn't really like that recipe. No Gochujang, or Gochu-garu. Those are non-optional ingredients for such a recipe. Sure it was good though! Just not to my "Korean-standards".

Thank you for this recipe! There is a brand at my local Whole Foods that sells eggplant bacon that is delicious, but super expensive at $10 per package. I'm so, so happy to have a recipe now! However, I'm a weirdo that likes my bacon slightly chewy. Do you suggest I simply take the eggplant out after the first round of baking, or take a bit of time off of the second round?
Maybe if you take them out before they crisp and put them on a cooling rack (so both sides dry out) it will dry out and be kinda "crispy" but still chewy
