I saw Merle’s video about the egg plant steak and decided to try it out yesterday. I didn’t follow the recipe and it came out great. After removing the skin I marinated it in some dark soy sauce, garlic, rosemary and red wine for an hour. Removed it and let it dry. I rubbed it with smoked paprika, coriander and black pepper. Threw in into the oven for 45 minutes. I started basting it with the marinade but never let it sit in too much liquid (to prevent the mushy texture.) The texture came out great and the taste resembled pastrami. I was actually proud of the outcome and I will definitely make again and again.
Thats awesome!! If it had a dryer texture there might be a way to get it to come out right. I might mess with it a little more to see if I can get it to work.

Thank you for the taste test. I think Gordon Ramsay was aiming at a very good eggplant dish, and I believe he did just that, he’s never been into mimicking meat, the plant based recipes in his repertoire (and he has a few of them) try to put an emphasis on the vegetable and its natural assets. I for one seldom eat aubergines, except as caviar (his recipe actually) and this recipe made me feel like trying :)
I'm not a vegan, but some of my family are vegetarian, and to this day we all can't understand why every chef/company tries to make imitation food. Why try so hard to make vegetables taste like meat when you can make vegetables and other vegan food taste good on their own.
I feel like the problem comes more from the title 'steak' than the dish itself, at least from what most people say. Another thought, wouldn't it be possible to sear the eggplant off before putting it in the oven? Just to get a bit more texture
I’m so glad you tried this and gave an honest review! When I watched Gordon’s video I thought there’s no way that actually has a good taste or texture. All of the amazing meat-like subs that you make just show it’s possible to make great and easy plant based meats! Gordon could learn from you! 😉

Really appreciate being able to clearly hear Monica's insightful comments. Thanks Mark. You're swell! Well done for sharing your recipe. Personally, I believe that Irrespective of the types of ingredients/additives one uses to cook an eggplant with the intention of converting it into a meat steak, an eggplant will always be an eggplant. Just loud thinking 🤔
He's not trying to replicate/imitate a meat steak. He's called it a steak due to the way he's flavoured/cooked it. This is just a way to make aubergine a meal centre in the same way you would with meat. Celebrates the natural characteristic of aubergine rather than mimics the character of something else.

Eggplant always reminds me of my grandmas garden, it was the first time I saw an eggplant and I was convinced that it was a pod from Invasion of the Body snatchers
I'd try slicing the eggplant in half and salting it to remove moisture. Maybe even throw it in the dehydrater for a bit to firm it up. Then I'd finish it over charcoal.
Here in Croatia one eggplant ( aprox 300 g) is around 2.5 $, You can get 200 g of pork for same price. It is tasty, but compared to the pork very nutrient nutrient scarce meal :)
You should consider to dehydrate The eggplant. I'm pretty sure The textura would be incredible. Look for the italian recipe "Melanzane Sott'olio" they use a dehydration method with salt. It's not cooked! Serious...the texture of this raw cured eggplant is amazing!
Dehydrate eggplant first the rehydrate in the marinade to absorb those flavors into the eggplant like a sponge. Also after dehydrating the eggplant the texture will be much dryer and more firm.
You DO REALIZE steak also means thick slice of something right? (i.e., Swordfish steak, Mushroom steak, Cauliflower steak Salmon steak...) So eggplant steak is just a thick piece of eggplant. Not eggplant that tastes like beef.
I think that's the point. It's a "vegan" steak, not an actual "steak" (meat). The important thing is: is it taste good? well your wife say yes so that would pretty fair imo. Personally, I would probably use a dough of tofu & tempe & wheat to make the base of "meat" mix with some umami flavor ingredients like mushrooms or certain types of seaweeds. Basically a vegan juicy meatloaf with the shape of a steak LOL

@@noahhawkins1534 I don't think so. Maybe the side touching the steak will get a little soggy because of the steak juices. So my advice is to eat it fast to still get the crunch.
Yea there are vegan mozzarellas
Well, to be fair, Gordon Ramsey didn't make that.
I think Gordon just stepped up his jokes about plant based food to the next level by convincing people cook it themselves and that itself is the joke.
One of his kid is going plant base diet, he did it for his kid.
@Norm MACdonald I'm sure you making a joke to yourself now.
If the recipe failed then he’s joking. Wow such a fanboy logic.
@doqodoqo It's not vegan... There's anchovy paste in A1 sauce. Gordon knows that 😂
Pretty sure Ramsay was coerced into his steak video by his marketing team.
"Gordon, c'mon. Veganism is trending now. We gotta cash in."
"Fine, but you're only getting 2 minutes of my face over Skype."
@Daniel Loveland I think they just want to get the "flavor" of meat without resulting in the death of an animal, or maybe they just want to show meat eaters that there are vegan alternatives of meat? Most meat alternatives that I've seen are pretty gross, but the Indian vegetable burger and radish steak looked quite appetizing.
@He Judged well its failing not only would I never stop eating meat but vegans in general have a bad rep
@@noahhawkins1534 They have a bad rep due to the crazies going viral. Sadly now Veganism is looked down upon.
@Daniel Loveland Hey, can’t speak for all plant based people but for me it’s because I friggin love the taste of chicken, burgers, pizza etc but I also love animals, so don’t wanna support the meat/dairy industry. Some vegans can be really pushy and shitty but I just want animals to not suffer, why are my tastebuds more important than a life? That’s the way I look at it. Also… this recipe looks rank 🤣
No hate to the guy who made the vid! I like SauceStache 😌 ….. I just hate eggplant !
Go off Mark. He's so out there about going after vegans. But then he blows up this recipe with the omnis because he's Gordon Ramsay. And it's just bad. I love eggplant and it can be amazing but this is just a sad recipe.
It was REALLY disappointing!!! I knew it would be pretty soggy, but I just hoped that there was something happening that I didn't quite understand yet hahaha but no.. it was mash.
@@SauceStache I figured it would be bad, the only way you could get anything close to steak is to really cook the moisture out of it and even then it would probably be bad. I have used eggplant and other squash to make "fish" filets and it has an ok texture for that when it's done right.
@@carterhiggs6466 yeah, I kept on expecting a step where you press the eggplant after salting it and then brush off the excess salt or something similar
@@carterhiggs6466 I just happened upon this video by mistake and watched it twice. The first mistake I saw was he added red wine before roasting it. I immediately thought that was weird as eggplants are like watermelon as they're mostly water. I immediately checked out Gordon Ramsay's video and although it's not very clear, he definitely roasted it with just the dry rub seasonings. This would have dried out his eggplant way more than this as this was being roasted on top of red wine, which is liquid. Don't know how it would taste but, I can definitely tell you Gordon Ramsay's version isn't going to be this mushy mess.
@@saysoun752 that’s actually not true. Ramsay’s videos skips half his steps. The steps are laid out clearly on his website. I followed Ramsay’s instructions verbatim pretty much.
"oh it's mushing"
Yeah of course Sherlock....who cuts a steak this thin
Yeah I felt like he wanted it to fail at that point
Kinda fits my perception of Gordon. He might have a couple dishes where he really shines, but take him out of his comfort zone and it's all gone. His pasta sucks and apparently, so does his plant-based stuff.
@saint green his eggs are so good . Maybe you should try them that way. Theyre creamy not undercooked 😐
Ah yes. The man who travels to more than half the countries in the world learning different dishes and cooking for different ethnicities and people only has a couple good dishes💀 his “comfort zone” is everywhere. Steak doesnt imply tasting like beef or being beef. Steak refers to the cut. Never heard of “steak fries”🤣
@saint green raw eggs and creamy eggs are completely different. But yeah. You tell the Michelin star chef how to cook 🤣
It's called Gordon Ramsey sarcastic humour, it's the whole point 😂😂
I saw Merle’s video about the egg plant steak and decided to try it out yesterday. I didn’t follow the recipe and it came out great. After removing the skin I marinated it in some dark soy sauce, garlic, rosemary and red wine for an hour. Removed it and let it dry. I rubbed it with smoked paprika, coriander and black pepper. Threw in into the oven for 45 minutes. I started basting it with the marinade but never let it sit in too much liquid (to prevent the mushy texture.)
The texture came out great and the taste resembled pastrami. I was actually proud of the outcome and I will definitely make again and again.
Thats awesome!! If it had a dryer texture there might be a way to get it to come out right. I might mess with it a little more to see if I can get it to work.
@@SauceStache I have no doubt you’re gonna knock it out the park.
Seeing that you are in my comment I would like to thank you for all the content you make. You made going vegan a lot simpler for me. I am always trying out your recipes and I throughly enjoy tasting the labors of my cooking.
I can’t wait to see what you come up with next.
I'm surprised that you were surprised it didn't look like a steak on the inside ahaha
The fact that the creator thought that any amount of preparation would somehow turn a whole eggplant into having the texture of a STEAK says something about them... Ramsay called it a “vegan steak dinner” because, once plated, it looked like a steak dinner... that’s it. It’s absolutely absurd to think he was trying to make a steak equivalent. I can’t believe how shocked the tasters were when the roasted eggplant had the consistency of a roasted eggplant ! How could that sneak up on you after cooking it yourself?!
If you look at the other recipes on this channel you'll find multiple steak-like vegan steaks. So of course when a world class chefs does a vegan steak one would expect it to resemble steak a bit more than a roasted eggplant.
If your going with single ingredient thing standing in for steak, just use a portobello mushroom. It's much quicker and more steak like.
Let's share this video so Gordon Ramsay can see it!
that would be AWESOME

I think Mr. Ramsey needs to take a few lessons from you when it comes to vegan "meat." Eggplant? Might as well have used silken tofu...lol
bwhahahahah Silken Tofu would have came out better hahahahah
This looks great for people like me, who hate the taste of tofu, love eggplant and don't really want to recreate the taste of meat
@@spokoju8199 the issue is that he is calling it steak, when in reality it's just a burnt mushy eggplant.
@@SauceStache at least it has enough protein to be a properly filling centerpiece 🤨
@@SauceStache silken tofu after baking in the oven becomes surprisingly similar in texture to boiled egg whites, which is probably a useful trait, but a steak made with it would be the absolute worst, lol
Maybe you should ask vegans?
For us Filipinos, we have something that we call "Tortang Talong" :D Tastes more like Salisbury steak though.
wow what is that???
Thank you

The Mid-Eastern women we know who are proficient in cooking eggplant to a meat-like texture always use the salt dehydration technique first. The water will leave the eggplant flesh and dilute the salt. It will be come firmer and more meat-like the longer you let it dehydrate.

The disappointment they both had the end when the EGGPLANT didn't taste like meat is sending me
Ya’ll don’t understand, this wasn’t an eggplant trying to be a steak, like that flour chicken thing. It’s just eggplant PREPARED like a steak.
My eggplant needs, onion, garlic, soy, ginger.sesemor olive oil.and bread ,rice ...I'm good
Eggplant always reminds me of my grandmas garden, it was the first time I saw an eggplant and I was convinced that it was a pod from Invasion of the Body snatchers
I'd try slicing the eggplant in half and salting it to remove moisture. Maybe even throw it in the dehydrater for a bit to firm it up. Then I'd finish it over charcoal.
Thank you for saving us from the questionable Gordon eggplant steak!
(i.e., Swordfish steak, Mushroom steak, Cauliflower steak Salmon steak...)
So eggplant steak is just a thick piece of eggplant. Not eggplant that tastes like beef.

‘This is like my secret ingredient’
LOL not anymore
I cut the end off so the seeds leak out and it helps firm up. It worked great.
