      Do add more maltose sugar for more flavours, and consider using pork belly with skin removed

    When I traveled to Singapore just two days ago, I came to Hawker Chan for his Char Siu. Omg it was tender, moist and full of flavors... now i learned to make it at home, tks Ah Pa.

      Try to use more maltose sugar and cut the meat into thinner strips for better results

    something to take note of, if you want to glaze the char siew one last time after cooking, always make that you have cooked the marination liquid all the way in the pan. for me, i would also use another separate brush to brush on the glaze at the end for fear of cross contamination.

      Yes, noted that, i noticed it half way while doing it, forgotten to separate the sauce

    Your sauce was soak in raw meat, should you boil the sauce enough to kill any bacteria before applying to cooking process?

      Dear Merle, you can pickup maltose from Loon Fung WingYip or wai yee hong supermarket online and amazon online. There are 2 types the pink lid and red lid Dragon Boat if you can read chinese. It's a squatty white plastic base that's is stupid design to open for ladies hand. Buy red cap for charsiew as its corn rice and barley base. It's worth getting for deep depth taste. Last forever. Most unhealthy of all sugar. Last brush on top for the burnt edge. It adds smokiness. The thick syrup makes it stay on meat.

    Caution! Since the char siew was a marinade and therefore in contact with raw meat, it should be brought to a boil for at least 10-20 seconds to ensure the killing of any dangerous bacteria.

    excuse me but isnt safe pork temp is 63c which is 145f ? why cook it till 80c that is 176f
