There is a point that one gets to when sharpening a hoof knife where you can tell that you are really really close to having a really sharp and useful tool. At that point the knife is almost perfect and yet still can't cut. If you need a knife brought to this point, I'm your man. So close, so sad. Crossing the threshold from close to sharp is my kryptonite.
I get my knife supplies at K&G in Lakeside AZ local company for me. There are plenty other Knife Co. Out there, but K&G are a great company to work with.

What about a left handed knife same concept ?
My guess since he isnt answering is smooth is opposite the spin so your blade doesnt catch. Seems to make sense to me.
Reverse rotation so if it does catch it throws the sonofabitch away from your face versus at you.
