I am a VA native and I went to work at my cousin's restaurant when I was 14. We made chocolate chess pie there. The restaurant was famous for it and the fried chicken. People drove great distances to eat there. My maternal grandmother was the first cook hired. The recipe we used was from The Old Virginia Cookbook and we did not use flour or cocoa. We used unsweetened and semisweet Baker's chocolate squares. We did use a mixer and mixed until slightly frothy because the froth would rise to the top and become a delicate crust on top. Some folks liked it with vanilla ice cream on the side. I still make them. I also make lemon chess which has a bit of cornmeal in it which makes the crust on top. Oh my goodness!
Now that you mention about the froth causing the top to create a sort of crispy top, that’s exactly how my mom’s would turn out. She did not write down in her recipe to use a mixer, but I remember that she would always use one. It was probably because she knew it needed to be slightly frothy. But I think either way, it’s a mighty good pie…😊

Hi Tammy, in tennessee we would add cornmeal to thicken up the custard along with the flour and if it's too sweet you can add some vinegar to cut the sweetness without reducing the overall sugar. Pie looks delicious

Baked this today. Sat on the counter 7 hours before serving to cool after baking 45 minutes at 350 F. Did not set. May try again and bake longer but this go wasn’t a success. Edit, some other recipes used 3 tablespoons corn starch to a 5 ounce can evaporated milk to thicken that version. Four other recipes all used evaporated milk versus sweet milk. Might try again substituting evaporated in this recipe. The substitute for evaporated milk is heavy cream rather thank sweet milk.
