Hi Everyone!
Hope you all enjoy this easy, healthy Zucchini Bread recipe! Thanks for stopping by!
Recipe:
2 cups oat flour
1 T. Cinnamon
1 t. baking soda
1/4 t. nutmeg
1 t. salt
2eggs
1 t. vanilla
1/2 cup maple syrup
1/2 cup applesauce
1 cup shredded zucchini
mix dry ingredients, in a separate bowl mix wet ingredients and then mix wet ingredients into dry ingredients and fold in shredded zucchini.
Bake at 350 for 50 minutes or until a knife comes out clean from the center (cover with foil for the last 15 minutes)

Yum! Going to try this without the eggs as I have a family history of Cancer so need to avoid the choline in eggs.

No refined sugar in the title so I clicked. It’s been 7 months since I had sugar. Yesterday I bought date syrup… not sure how that will go. I have eaten only fruit for dessert and had probably 50 lemonade or pero coffee sweetened with monk fruit. Trying to wean back from that too now! I’m so glad I clicked. This is my meal tomorrow! Thank you!
Yes, I like to sweeten stuff with honey, maple syrup, dates, sometimes stevia or monk fruit, but I try to stay with the natural stuff. Date syrup would be really good in this! This bread is really good if you make them into muffins too (if you want a shorter cook time, I bake the muffins at 350 for 20 to 25 minutes) Hope you enjoy it as much as we do!
