    Corn was the first to became GMO, most people today don't use corn, because it's hard to find it organic.

    I really enjoyed this video. I mainly use gluten free oat flour because rice flour can be a little grainy, but I like the idea of using coconut flour. Thank you for the video.

    I'm wondering if the brown rice, or even white rice flours turn to sugar or are considered high on the glycemic index? Any information on this? If the brown rice were to be combined with say quinoa or chickpea flour, or coconut flour, or maybe a blend of several, would this reduce the glycemic load? If you could do a video about flour blends that would be so helpful. Thanks! 👋

    Almond flour is awesome and tastes like heaven, but soooo costly! He obviously can afford it. I’ve had Celiac Disease and have been GF for 23 yrs now. I use a lot of brown rice and oatmeal flour (oat flour). I don’t know who this guy is, I assume he’s no MD, but he was right about the nutritional info. I’m an RN with a Master’s in public health and always use nutritional diets for my own patients. Will see what else he has. Thx.

    Dr. Axe, the Sprouted flour company has sprouted brown rice flour. Also almond flour helps with browning of gluten free baked goods.

    yes they may be gluten free but what about the cost? bob's for one is not cheap im on a fixed income and at the price of a gluten free loaf a bread (which really isn't a full loaf was like 5.50 too much for me this is very frustrating

    I love using spelt flour in baking. It has less gluten than wheat and is apparently easier to digest. I wouldn’t use rice flour because of the big issue of Arsenic in rice (and brown rice is worse than white because the husk retains the arsenic). almond flour is amazing in baking. I’ll be trying to use buckwheat, coconut, millet and amaranth (the latter two Grains I’ll grind myself).

    I'm surprised at the sprouted corn flour as I thought all corn in the US was GMO!

      Carol Brown Why would you think that? There a countless organic corn products on the market today, and for any product to be certified organic it has to be non-GMO by necessity as GMOs are not allowable in the National Organic Program. And even if you're not looking specifically for organic corn, you can look for the "Non-GMO Project Verified" label and still find plenty of non-GMO corn products.

    sprouted flour is very expensive can you get whole oats soak them till sprouted put bicarb in it then blend it and make your cookies?

    I totally disagree with the spelt recommendation.
    I have inflammation and quite severe arthritis. ANY WHEAT, SPELT IS TERRIBLE FOR ME,

      airyfairycelt I was afraid f spelt too.. have you tried wholemeal spelt which has been Finley seived? The white spelt flour is enriched and irritated my stomache too

      Angelo Chiappe Gluten is just bad for everyone along with other things found in grains. Everyone should avoid gluten, but not just gluten, grains in general.

      Angelo Chiappe a lot of people react to gluten without knowing it.. they just get sore joins, digestive problems and all sorts of illnesses, but don't know why...it takes a test to find out, but it's worth it! :-)

    as a coeliac i can confirm spelt is definitely not gluten free and oats contain avenin which 1 in 5 of those diagnosed with coeliac disease will react to. I'm not to fussed about the oat flour as some can handle it but you should not be telling people to use spelt flour as gluten free flour

    What would you recommend to substitute for a pie crust? The crust will still contain the other stuff... lard, vanilla, some sugar, and buttermilk.

    I read that any kind of flour substitute alone is not sufficient as equal flour substitute - it is supposed to be mixed with another flour substitute in order to give the mix the characteristics of white flour. Is it true or it is enough to use one flour? e.g. just coconut flour will be good for tortillas, cakes and also for any kind of other baking that the white flour is used? It will react to yeast in the same way the white flour does?

    Hi Dr, I really like all your videos, it so much informative. Here in India we consume more wheat flour by making chapati (like flat bread) on a pan. Is it healthy? . I personally bring wheat from grocery store and then grinding in a flour mill.

      until it is not GmI but who can verify it ,then find an alternative, just your country we also have millet ,or switch to oat flour for taste I'm African since I learn from these DR I'M switching most of my country recipes until it safe and healthy,but I love in NEW YORK there is soo much chemical in food products so different reaction from fresh untempered original food products.

      The wheat in the US is a lot more and differently processed in the US than in India . And hence wheat is such s big issue in the US. In India wheat tortillas have been a staple diet for centuries and nothing ever happened to anyone by eating that .

      Anamayee Warty Wagh yes you are right .but however or where someone's is not reacting to it . I know in India just like in Africa most of our grown crops are organic ,but there are as well products and other ideas coming in the c pooiuntry to influence us ,so we must be aware and adjust ourselves.There are solution .I barely touch rice now I'm on millet quinoa, fonio,moringa .I make sourdough breads and I'm almost vegan, yet I still consume liver I need more B vitamins ,but I find out even the rest of my family who never step out of AFRICA ,HAVE REACTIONS TO WHEAT AND SUGAR .I CUT SUGAR COMPLETY.Im learning to reclaim BACK my heatht.Namaste.i speak a little urdu.allafiz

      Im gluten sensitive and normaly dont tolerate wheat but your Atta I tolerate very well but not Maida. I lived in India for many years and loooved chapaties.

    Thank you so much, Dr Josh, for the info on gluten free flour! I am so confused with too many videos from too many health experts about what not to eat and what to eat if one wants to go gluten free. You mentioned that we can replace wheat and white flour with Sprouted and Spelt flour and rice flour apart from the others but I am hearing also that Spelt and rice should not be in a gluten free diet. Please confirm. Appreciate your help!

    everytime i make gluten free bread or eat gluten free products i feel like im eating a gritty brick .also alot of the gluten free products i look at they all have so many chemicals in them some i cant even pronounce im starting to wonder weather gluten free really is healthier than food with gluten in because at the the food with gluten dosnt have so many additives in it .

      +Ernest Hemingway it's sorghum, not sour gum! and this is an old world grass which is akin to sugar cane. Hope this helps

      You have to read labels for gf products just as you should read all labels. Do not assume gluten free means healthy for you. My wife and her family all have Celiac's abd have known for over 10 years. I buy the groceries so i know what it's like to hunt down the good stuff. Most gf bread needs a little toasting to bring out the better texture and flavor.

      Mekratrig, To say Dr. Axe is not a doctor of modern Western medicine is true, but fairness requires more to be said in this context.
      Many are unaware that most practitioners trained in Western medicine receive less than 3 weeks’ instruction on human nutrition and its effects during 8 years of schooling. For instance, they learn symptoms of, say, migraine headaches, or arthritis, or fatigue, but they are not taught how to treat these problems in ways that use prescribed dietary changes instead of pharmaceuticals. With diet changes, these conditions can be improved substantially or eliminated, but with pharmaceuticals, they persist (by design).
      For thousands of years, medical practitioners have been trained in the pain relieving and curative properties of preparations from minerals, plants, insects, and animal organs. Today’s pharmaceuticals prescribed by “medical” doctors come from the same age-old ingredients and understandings, but with a modern twist: the basic ingredients are now rarely mixed to effect permanent or inexpensive relief.
      To say Dr. Axe isn’t a medical doctor is not exactly true. His practice of medicine stays closer to nature and the mortar and pestle than to the laboratory and polluting pharmaceutical manufacturing plants.

    Some of them aren´t really gluten free, for example rice flour - it is just lower in gluten then wheat etc., so it can cause problem to people with celiatic disease or gluten allergy.

      Michael Bremseth arrowroot is great for puddings and making recipes that calls for a chewy texture. However, from personal experience it's not great for getting that crunchiness that some recipes call for.

      Rice is not gluten. Remember “BROW” barley, rye, oat, wheat are gluten

    Spelt is a type of wheat. So if you are diagnosed with celiac disease stay away from that! For others it might work, since it probably contains a little less gluten compared to ordinary white flour. But it is NOT gluten FREE!
