    For this #JamaicanJerk Dry Rub recipe you'll need...
    3 tablespoon Pimento Berries
    4 tablespoon Cane Sugar
    3 tablespoon black pepper
    3 tablespoon ground cinnamon
    3 tablespoon ground nutmeg
    3 tablespoon dehydrated onion flakes
    3 tablespoon dehydrated garlic
    3 tablespoon ground ginger
    4 tablespoon dehydrated scallions (or chives)
    1 1/2 tablespoon scotch bonnet pepper flakes
    6-10 bay leaves
    3 tablespoon dry rubbed thyme

    I made the seasoning mixture but added smoked paprika. I tell you it was the BEST!!!!The flavor is absolutely amazing. I marinated my wings in the seasoning rub overnight in plastic bags in the frig. I baked it in the oven and....it was perfect! I love your recipes. I hope you continue to share your knowledge. :)

      Avis…thank you for mentioning that you marinated the chicken in the rub overnight…I was wondering if it should marinate before grilling.

    Hi, Chris! I had Jerk Chicken while visiting Jamaica 30 years ago and it was so amazing. I've tried many versions in restaurants here in the states over the years but they didn't come close to that chicken in Jamaica. Can't wait to try this. Thank You for this recipe!

    Waaaa Gwan Chris , 2 questions, what temperature is your grill at when you place the chicken down for the first time ? And at what point did you move the chicken closer to the middle of the grill doe the direct heat ?

      it was 325 for the most part yea. I went closer to the heat source after about 1 hr 15 mins. to start adding color and a little kiss of char

      to be honest - I prefer fresh.. but that is a different recipe. As I like adding olive oil, soy sauce and a citrus or fruit juice of some sort.. plus honey

    I'd have to leave out the pepper flakes or use more mild ones coz my stomach is really sensitive to spicy things, but this chicken looks so good! When Lay's brand brought out the Jerk flavored chips, I liked those, so I can only imagine what actual jerk chicken is like. The catnip plant next to your grill is looking good, by the way. I don't partake anymore, but it's pretty.

    Definitely prefer the jerk rub over jerk sauce. I spent some time in Kingston years ago and the dry rub jerk protein in the steel drum grills was amazing. Since then, it seems most places I've visited in the US give you sauce, which is ok, but not as robust in flavor.

    I recently made my first batch of jerked seasoning and it was good! I plan to try this dry rub recipe and I'm looking forward to tasting it. Where can I find your procedure for dehydrating the scotch bonnet peppers?

    I wonder. Add sauce or green seasoning at end if you've novices to dry rub. You know how people expect BBQ sauce (wet) in America. Would you recommend the green seasoning as a last brush and flip for people or some other of 'sauce' you make? After scotch bonnet in rub they might burn up on green seasoning or is it milder than the other sauce you might recommend? It's the American pallet weakness one has t accommodate at a 'cookout' where the expectation is BBQ and cold slaw, 😃. Thank you Chris. I will keep mine true jerk!

    Dont forget to add pimento wood chips or use pimento wood charcoal. for authenticity

      providing you can source it. Paying over 30$ for a small bag is not worth it IMHO. Wet some apple wood and add some bay leaves to a foil pouch - great flavor

    love the plants. you know it would be a great idea to show how to cut up the chicken for the grill. I tried to use the knife and chop the meat into bite size pieces but it didn't work. i cold use help.
