Add beer instead of water. Alcohol cooks out, leaving the flavor.

Captain D's used Pollock, which can be substituted for Haddock or Cod, for future reference.

I tried to make a batter that came out pretty close. I was watching a video where they were preparing the batter. It came out kind of yellow. I could have sworn I saw kind of a pink color when I was in my local one, but maybe they've changed it. I was thinking paprika or cayenne myself since I remember a pinkish look. I have some smoke Paprika. I'm gone to try to next time. I can almost spell some garlic in there, and of course, I know Captain D's is kind of salty, so these ingredients seem about right. Not sure what gives it the yellow color. Maybe there are powdered eggs or Tumeric in there. I know they use super ice cold water. I use club soda I put in freezer for 30 minutes or so
