Love love Love this recipe. Now I've made a few times now, but the last time I didn't have zucchini so I replaced it with sweet potato! OMG, so these days I replace the zucchini with sweet potato for a slightly different taste. Thanks for sharing your recipe!

Going to make this soon, we were gifted a bag of lentil beans and have been looking for a recipe to try.
My kids didn't like beans either and my husband is funny about what beans he eats but I've learned that if I make beans flavorful (not just salty), they'll eat them

One golden rule of cooking lentils: soak them for a few minutes before cooking. It gets cooked in 20 mins. I recommend the pink lentils. It's the easiest to cook and yummiest

It's an enameled cast iron braiser that I got at Aldi a few years ago! I actually don't like their cast iron (it heats unevenly) but this one has been the exception. You can find better quality in Staub, Smithey, or Cuisinart.

This the first lentil recipe I've ever seen recommending the cook time for lentils to about 1 hour. Most recipes I've seen have lentils magically cooking in 20 minutes. Not mine...ever. I use both green and brown, and can not get them cooked in under 50 minutes.

    No close up?
I add a few bay leaves to mine, a squeeze of lime, cinnamon and frozen spinach at the end. No parsley, more salt and pepper than used here and thyme. I would have done italian seasoning, thyme, including the onion and garlic with the sausage, gives waay more rich hearty flavor, also do 1 can of cream corn, sweetness balances out the hearty and spice. I do sage sausage and also do a bit of red pepper flakes

my momma taught me at a young age to read food ingredients and if I couldn't pronounce any of them then we didn't need to eat them. Instill shop that way but now I educate myself about looking up ingredients that look fishy and if they are not real food then i wont buy it.

Nice recipe, I think the sausage will go great with the lentils, but an hour on most varieties of lentils is a long time cooking.. though perhaps it is because you salt first. hold off on the salt until just before serving and you can get this on the table with most common lentils 30 minutes faster.

Your technique could use a little polish to really get the most of the flavors out of this dish. Hot sausage is a great start, but add your veggies a bit earlier with some salt and your spices and sautee them a bit longer until at least translucent, then add a couple tablespoons tomato paste and turn the heat up until the paste starts to brown a little on the bottom of the pan, then add your lentils, sautee a good 5 minutes then add your tomatoes and stock before the low simmer. The extra browning and cooktime between stages deepens the flavors significantly.
