This week, I wanted to take it back to the beginning - when I first started to learn how to cook in my mom's kitchen. She taught me how to prep tofu and fry it correctly in a frying pan. Then the ratio for the sauce... It was a simple dish but the amount of satisfaction I got in watching my parents and sister take their first bites. It got me hooked into Korean cooking! Today, I wanted to share this recipe for you.

Did I mention that this banchan tastes good cold? If you have any leftovers, place in the refrigerator and try it the next morning ... the tofu firms up and makes for a slightly chewier texture. If you like big breakfasts, fry up an egg, alongside a bowl of hot rice. Perfecto!! 🕺 P.s. For our newer neighbors, "banchans" are small dishes that are eaten with a bowl of rice!

Or as my Korean friend Lucia says, "There's rice, and there's soup. Everything else is banchan, really."

In Malaysia i also make tofu like this.
    1. Wash tofu
    2. Cut tofu into size that you want or you can also eat the big size
    3. Fried it into light yellow colour
    4. Done.
    For the sauce:
    1. Soy sauce which we called it 'kicap' in Malaysia.
    2. Cut some red and green chilli.
noted that: green chilli has a bitter kick
    red chilli has spicy kick
Mix both red and green make it balance
    3. Mix green red and soy sauce together.
the taste will be sweet and spicy.
i dont add salt because the soy sauce has balanced the taste.
IN MALAYSIA WE CALLED IT 'SAMBAL KICAP'

To keep tofu awhile longer, at least where I live it's best to change the water every day. It only keeps for 4-5 days though so use it up.

I just started trying tofu out and I am on a mission to try every supermarket tofu to see the differences. So far I've tried only one and it had a weird plastic-y taste but I don't have any more references so I don't know if that's normal tofu taste. There's imported tofu in a chinese supermarket in my city but so far every pack I've seen has been expired so I don't wanna risk that. When it comes to asian cuisine I wish I lived in a larger city

So hard to find fresh tofu where I live in Tennessee. Typically stores and local marts only carry one variety. I’m lucky if I can find more firm tofu vs soft crumbly tofu. I live 40 mins outside of Nashville, which has a bit more
    culture-
I just wish I could find other options close by.

I'm confused about the tofu. I've read somewhere that Japanese tofu is commonly thickened with a coagulant which provides a more smooth texture; whereas Chinese tofu is usually thickened providing a more curd-like texture. Being part of the mainland, is Korean tofu typically more similar to Chinese tofu? Or am I entirely on the wrong page?

    • @FutureNeighbor
      @FutureNeighbor  4 роки тому +1

Hmm.. not sure about it. There are quite a few different types of tofu (silken, medium, hard) and the texture also varies by brand. In Korea, I think the "Pulmuone" brand is the best.
