Let me say some good things about shishito. They have a light fresh green flavour, more like cubanelles than bell peppers. They usually have almost no heat. They are extremely easy to grow - they are more productive in my little backyard garden in downtown Toronto than any other pepper. You can get seeds from seed companies now, but I started off many years ago with a bag of shishito that had a few that were starting to ripen - I let them mature and saved seeds. Aaron and Claire, I'm really happy to have found your channel. We live in an area with many Korean shops and restaurants and have developed a lot of enthusiasm for Korean food. My efforts at reverse engineering banchan have been edible but not very authentic tasting. Please, more banchan recipes!
I just made the Oi Muchim and it was awesome. I used the chili pepper powder, not the flakes, I did have to add a little more vinegar (I actually used rice vinegar) as it seemed a bit thick to mix, added a paper thinly sliced finger pepper and sliced my cucumber 1/8" thick as 1/4 seemed too thick for me. I thank you for inspiring me to try this, I have really missed my favorite Korean restaurant, this eased my pain just a little. Those of you who enjoy the side dishes at a Korean restaurant, try this, you'll love it.

Got introduced to Jinmichae in college thanks to befriending a Korean student and getting introduced to banchans. I became obsessed. I tried making it once from an online recipe that did not include washing the squid or cooking the sauce. It was the same. Now I have new info and I was actually going to try and make it again so I'm definitely trying Aaron's method.

There's a few good ones, look up seasoned bean shoots, seasoned spinach they're super easy. There's also an eggplant one. If you like korean food but are vegan/vegetarian have a look at Seonkyoung Longest, she's Korean but recently shifted all her recipes to plant based dishes only including vegan kimchi :)

Great video! I love banchan - they satisfy my desire to be able to have lots of little different things to taste and enjoy - and these are some great options. Especially the quail eggs; I didn't know you could buy them pre-boiled in a bag! How civilised! And that they last so long in the fridge, too; totally worth making up the big batch. Although the best bit of the video was when Claire told your adorable doggie (sorry, I missed their name) to be quiet, and they squeaked the ball in an almost rebellious "NO!" 🤣

The yolk gets so creamy inside, and the seasoned soy sauce is awesome indeed. Thank you for teaching me another cool thing to make with canned quail eggs! PS: I pre-fried the bell peppers in smoked bacon fat since they’re less flavorful than the shishito peppers, and that made it heartier. They were fine being boiled for 7 minutes since they’re sturdier than shishito too.
