You can see how many people who are confused about the ice dipping thing, this maybe late, but for y'all who's fretting about the ice cold water, KFC employees also used that type of technique for cooking their chicken (Yes, they did not use egg wash, in my country at least). The ice cold water helps as a cheaper substitute of egg wash that made the crispy texture of the chicken stay put for a long time after frying, making it juicier while being crispy. And if I'm not wrong, it also helps the flour adhere to the chicken more smoothly as to prevent clunky thick textures on the flour when frying the chicken. Those clunky textures made the crispyness too hard to bite, making the batter too heavy and hard to bite. So the easier and cheaper way to make sure that the chicken will be juicy and still crispy after frying for a long time is by the use of dunking the chicken in ice cold water.

@@ahameden7549 easy just be careful with holding it , if you hold it with fingers the flour on your finger gets bulk of mess so just hold side of chicken with a small kitchen tongs for dipping in water
i know this a month late but this isn’t necessarily true. Deep frying can add nearly 60-100% of the calories of the foods being cooked as foods absorb fats and begin to saturated themselves in it. This leads to an increase of unhealthy fats being consumed as well, and even if cooking with healthier oil alternatives, consuming fat at above .3 grams per pound of body weight a day would just lead to elongated calorie and fat burn. By air frying and using oil spray you can control this to an extreme extent, and carb calories really don’t add up so much as if you properly manage your dredge and batter ingredients, you can easily only tac on about an extra 150-200 calories from carbs for all those pieces of chicken combined.
