    Love the peacefulness of your videos! I will tell you that I ate Carnivore/ Ketovore for 5-6 years and I had alot of healing! I had irritable bowel and/or leaky gut! I can now eat sourdough in moderation and potatoes and rice and all sorts of carbs I couldn't before. I try to eat only whole foods and only what I can bake or if I can trust someone else's baking. It is possible I was healed before that many years but I did not try to see if I was, so it may be possible that others will heal faster. Also you are young and I was close to 60 when I started. It was worth it!

    I especially love watching your cozy videos on snowy PA days like today! I am always in awe of you continuing to cook wholesome meals for your family while you are on your carnivore journey and have to also cook for yourself. On a different note, as a typical melting pot Italian, I couldn’t relate more to having a random menagerie of half bags of pasta lol. Praying for your continued healing, and if you guys have snow I hope your kiddos are enjoying it!💜

    I love all these meals and just made the zuppa toscana soup last week. I had leftover kale, so I made your egg bites with ricotta cheese, as I didn’t have cottage cheese, and added the kale and red peppers. They are delicious and helped me prep for a busy work week. Then I made your oatmeal jam bars. Next I have applesauce in the fridge that I need to use, so using that in the muffins, that I’m making. I too am doing the pantry challenge! Your recipes helped a lot, so thank you! Also, how adorable of your son, wanting to eat the broccoli for breakfast! Also, my fiancé is carnivore and so those recipes helped him get creative as well, so thank you for that as well! #threeriverschallenge

    I love your idea of cooking dinner three days only, and then eating the leftovers for the rest of the week. I tend to do this also, but cooking every other day. Having a whole block of days off sounds better to me, so I'm going to give that a try. Have you already made a video specifically on your way of cooking and resting? I know all of them will show this, but how do you organize to do this? Also, do you treat the other meals differently? Curious.

      Also curious. Esp wonder if you make "new meals" for the leftover ones or just serve as you did originally? Also wondering what your rotation is...example: Meal 1, 2, 3 and then Leftover Meal 1,2,3 or ????. ( Hope that makes sense.; thanks Kelsey.)

      This is similar to what I do. I cook 3-4days a week. Sunday. Tuesday. Thursday and wvwey other Saturday. I make breakfast on Saturdays and Sunday mornings since I do not during the week while the kids are in school. I rest on the days that I do not cook. I make plenty so that we are able to have leftovers. I also bake on Sundays or mondays to have bread for the week

    I have been using whats in my pantry and freezers during this challenge. I'm not a homesteaders, we are a family of 3. So using this challenge has shown me to utilize whats here.
    I had rotisserie chicken carcass in my freezer. I made homemade chicken broth. Simmered that for 4 hours to get out all the nutrients. I had orzo pasta, the only thing I needed was celery and carrots. Bought those. Plys I had purchased 8 pounds of chicken breadt recently from a farmers market. Chicken soup was so good, we have enough for today's lunch or dinner.
    Since using whats in my freezer I am making room for new meats as they go on sale . Later today I will make some breakfast burritos , I have bacon, eggs and Tortillas, just need to see if I have cheese. Oh and dehydrated hash browns I found those in my pantry. Going to make about a dozen burritos for the next few days meals.
    Family requested them.

    Hi Kelsey! So nice to hear your sweet voice this morning. I make assorted options of breakfast food that I can freeze. My husband then chooses one from the options each day to take to work for his breakfast. He leaves for work very early so he doesn’t feel like eating at the time he gets up. He has a small oven in his semi that he plugs in and puts his breakfast choice in. The temp only goes up to 300’ and it perfectly warms up whatever he has chosen (he also takes dinner leftovers for his lunch). I think I’ll try baking the quiche as muffins too! I try to have an assortment, breakfast sandwiches, burritos or a protein rich muffins so he doesn’t feel like he’s eating the same thing everyday. Bananas are something I sometimes want to get old lol, because I like to turn those into muffins and bread too! A sweet muffin with hard boiled eggs is also a good option for him. It’s a great time for your chickens to be producing so well. The pantry challenge here is modified but going well so far. I have to go pick up my Azure order this morning and will also be picking up some fresh produce (one of my personal exceptions) on my way back.

    When I bring my eggs in, I write the date in pencil on top. That way I can make sure I’m using the oldest ones first.

    All those recipes look so very good. Gonna have to try several of them have the recipes on hand, and we are trying to do the pantry challenge, this is the second year we’re trying it. We did ok at it last year. Doing good so far!

    Thank you so much for sharing what you’re eating also. It’s so helpful. Btw, I make that soup about twice a month, it’s my husband’s favorite with some homemade sourdough. I use spinach instead and add some corn. It’s definitely a keeper!

    Thats a good idea to cut the potatoes in half to bake, that would be faster. Why have I never thought of doing that?

    The overflow of eggs is amazing!! I have friends and family wanting mine and we joke that I have an egg shortage. I can't get enough for the demand I have. We've cut back on our daily amount just to have enough to share. 😂

    I am so glad that you are getting eggs still !!...My girls are no longer at the adequate age, they are 5 years old and stopped laying about 3 months ago..I did get 1 egg 2 days ago. They have become pets(freeloaders lol) I processed 2 myself, but can't find the motivation or help to finish the other 10 so I can start new this spring. I saw prices at our local Sam's and OMG $58 a case! I should have just bit the bullet..

    I just saw on a food ad she took a can of flaked chicken, dumped in an egg, blended those, she put in a pie pan with parchment paper placed the blended chicken, egg mixture and flattened it out to the edges, she then placed parmasean cheese all on top, blended that and reshaped/ flattened to bottom sides of pie pan. She baked it at 450 for 20 mins and topped it with research dressing and ceseasar salad. But one could top it off with whatever one wants. I thought the base was quite inventive. Meals all look so yummy!

    Hey Kelsey! Have you tried making pizza crust out of ground chicken? Super easy, just a lb of ground chicken, half a cup of mozzarella, and Italian seasoning. Mix it up, press it on the pan into whatever shape you want it and then bake it. I bake mine for a few minutes at 400 just to get the chicken cooking, then add toppings and put it back in until it is all cooked through. I like it better than the other high protein crusts I have tried. Love your videos! I look forward to them every week.

    Pre-Shredded Cheese: I use both pre-shred cheeses, as well as shredding my own! Any thoughts on the controversy regarding the anti stick stuff they put into the bags of pre-shred, so the pieces don't clump up?

    The pizza crust is interesting to me. I’m trying to get 30 g of protein per meal because I’m in my 50’s and although I lift weights, the thought muscle loss concerns me. I’ve been making egg white “ tortillas “ lately and then using the yolks for pasta for my husband. I like adding spices and herbs to the “ tortillas or wraps “ whatever you call them and making quesadillas out of them. Have you tried making them? I use egg whites and beef gelatin and seasonings, that’s the only ingredients.

    I can’t remember if I’ve ever seen you make egg pudding before, but it’s a great way to use up a bunch of eggs quickly. Maria Emmerich’s original (keto) recipe is:
    10 large hard boiled eggs peeled (or scrambled eggs)
    14 ounces unsweetened full-fat coconut milk 1 can, (or 10 oz. almond milk) (use half can for scrambled eggs)
    1/2 cup Natural Sweetener or 3/4 teaspoon stevia glycerite
    1/4 cup unsweetened cocoa powder or chocolate collagen
    2 teaspoons vanilla extract
    1 teaspoon ground cinnamon
    1/8 teaspoon Redmond Real salt
    Blend until very smooth.
    It might smell eggy fresh out of the blender, but it doesn’t taste eggy. Best served chilled.
    The ingredients and measurements are pretty flexible. You can change up the flavors pretty easily.

    You could write the date on the eggs you have collected, like J 17 for January 17th J 18, for January 18th on the wide end of the egg, when you have so many eggs.

    How can you tell if you're buying coconut oil that tastes like coconut and one that has no taste to it?

      My experience has been that the extra virgin coconut oil has the coconut taste. The ones that say “refined” usually do not have any coconut flavor or smell. Hope this helps! I use my EV coconut oil in sweet baked goods, and the refined for savory dishes.

      Refined will have a more mild flavor. However, refined coconut oil will not have the same benefits. I always purchase unrefined cold pressed organic coconut oil.

    Wow! I love that you used the thin-ish, long spatula to break up your meat! Never thought of using it that way; in fact, just today i tucked mine out of sight and out of the way because i never use it.
