    One of my favorite memories is watching a group of abuelas making flour tortillas~no rolling pin, no press, just patting them with their hands. They made dozens in about 20 min. SO cool!

      When I was in culinary school, our teaching chef was Hispanic. His sister came to visit and was showing us how she made tortillas. She was so fast. As you mentioned, no press or rolling pin, just patted them out with her hands. I commented on her speed and she said she was slow compared to her mother who cooked for 8-10 at each meal and therefore made thirty tortillas, three times a day. Said it only took her 15-20 minutes. Thirty years later, I am still much slower than that.

    I bet those sheet pan pancakes would make a good breakfast version of a pumpkin roll. A little whip cream and fresh fruit with a dusting of powdered sugar and a drizzle of syrup.

    Great recipes and I'm glad you're feeling better.
    While making tortillas, I've found that to minimize the extra effort caused by spring back, it's helpful to initially roll out all the dough balls. This allows the dough to relax, making the second roll out much easier.

    Speaking of bananas, I read a hack to shred up banana skins and use them to fertilize pepper plants. I tried it in my container peppers, and boy did they produce this year!!! Best part is I got them on the end cap of the grocery store for I think, 30 or 40 cents!!

    These recipes look so delicious! I really enjoy your content. Those enchiladas though…perfection! When I make from scratch suppers, I always tell my family that there’s a lot of love sprinkled in there! You have lots of love sprinkles for your family! ❤

    Love banana pancakes! When I can get a good deal on bulk bananas, I can them up so I always have them on hand. During winter we try not to go to store at all for the last few years. threeriverschallenge

    I’m impressed with the seeming ease with which you move from one item you’re prepping/ cooking to the next! I really liked the skillet bread you just quickly mixed up.     Kelsey look for Saco cultured buttermilk in the baking aisle. It is a powdered buttermilk that you mix with water. Once opened keep in the fridge. You will always have it on hand that way.

    I am glad you are feeling better. I am slowly transitioning to be more mindful and using up food in the house before running to the store. Baby steps. My goal is to produce enough produce from my 2024 garden that I don't need to rely on the store during the winter for those items.

    for a special Breakfast or brunch: Basic Crepes From the Kitchen of: Lorita Sutton
    Ingredients: 3 Tbsp. butter
    3 eggs, slightly beaten
    1/2 cup milk
    1/2 cup water
    3/4 cup all-purpose flour
    1/8 tsp. salt
    Butter
    Cottage Cheese Filling
    Strawberry sauce
    Recipe instructions: Melt butter in 8 inch crepe or skillet. Pour butter into mixing bowl, set pan aside. To mixing bowl add eggs, milk and water; beat with rotary beater. Blend in flour and salt till smooth. Refrigerate batter for 2 hours or overnight. Note: Allow 2 to 3 crepes per serving. To Freeze: Leave crepes between sheets of waxed paper. Wrap in foil. To reheat in oven: Remove wax paper, wrap in foil and heat in preheated 325 degree oven for about 15 minutes.
    Recipe instructions: Place buttered crepe pan over medium-high heat until hot enough to sizzle a drop of water. For each crepe pour 3 Tbsp. or a scant 1/4 cup batter into pan/skillet, rotating pan as batter is poured. Crepes should be thin lacy pancake almost immediately. If too much batter is poured into pan, pour off excess immediately. If there are holes, add a drop or two of batter for a patch. Cook until lightly browned on bottom; turn and brown other side. It may be necessary to add more butter to grease pan before pouring in batter each crepe. Stack crepes between sheets of paper towels or waxed paper until ready to use. Spread 3 Tbsp. Cottage Cheese Filling down the center of each crepe; fold the two sides over the center. Serve with Strawberry sauce
    Recipe for: Cottage Cheese Filling & Strawberry sauce
    Cottage Cheese Filling Ingredients: 3 cups small curd cottage cheese, 3 Tbsp. sugar
    1 tsp. grated lemon peel
    1/2 tsp. vanilla
    Recipe instructions: Blend together cottage cheese, sugar, lemon peel and vanilla in blender or stick blender. Use to fill crepes makes 3 cups.
    Strawberry Sauce or Berry Sauce
    Ingredients: 1/2 cup sugar
    3 cups fresh strawberries or any berries you prefer or have on hand
    1/4 cup water, dash salt
    1 Tbsp. corn starch, 1 tsp. butter
    Recipe instructions: Wash & hull strawberries; crush 1 cup. Slice remainder and set aside. Combine crushed berries, sugar, water, salt, corn starch. Cook over medium heat, stirring constantly, until mixture thickens & boils. Boil & stir 1 minute. Add butter, fold in sliced berries.
    My Notes: I try to remember to make the crepe batter the night before unless eating a late breakfast or brunch.
    I usually use frozen berries and thaw them unless there is a good sale on berries

    Meals looked great this week. Side note, I think it’s awesome that Matt can come home for lunch.
    I have a tortilla press on my ‘wish list’. I don’t do much corn so thought I’d just make flour tortillas. I hadn’t noticed anything about a press being more appropriate for corn before so I’m grateful for your comment so I can check into that more.
    It was sweet early in the video Evelyn saying something like “good job”. Not sure if she was talking to Grant or just playing but it was sweet. Then to see Grant helping you with the kneading made my day!

    When I have extra tomato paste, I freeze it in ice cube trays, then put in a baggie. Easy to grab a cube when needed, which is about two tablespoons.

    Loved your hair - style and color - just perfect for you! The mallows looks so yummy and fun. I've never understood the differences between enchiladas, tortillas, or other similar mexican dishes, what makes each of the sauces different? Are they named after the grain shape and size, or method of cooking, or what do the names stand for? Yours looked just wonderful using the beautiful meat you made. Makes me want to try it all over - been years. I held my breath when you crunched up that enchilada pancake then unfolded it - perfect, no tears, rips, cracks or crumbles. It was amazing, great tip! Glad your better and continuing to increase in health.

    We're on a similar wavelength this week! I also made a beef and barley stew... chuck roast in the instant pot, shredded then canned carrots and canned potatoes, plus previously cooked and frozen barley, and then anything I had that needed to be used up... leftover roasted root veggies, leftover okra, leftover roasted peppers and onions... heck, I don't even remember, but I know that pot was FULL when I was done. Oh, and I added a potato thickened gravy from earlier in the week. Great way to use stuff up! I also made banana bread, but now I'm sad that I didn't even know this recipe was a thing!!! Totally making this version next time! (Though I'm gonna have to buy the instant coffee cause I don't keep that on hand.) I haven't had to do sheet pan pancakes in quite awhile because I have a stash in the freezer. I love them (maybe only because of the convenience) but not everyone is a fan of the cake like texture. Happy that you are on the mend finally! You have my sympathy on the mouth pain. This past year I've started clenching my teeth and I can't seem to break the habit. Mouth guard doesn't work cause I clench 24/7, not just while sleeping. I've worn at least 1 tooth down to the point that the root is exposed and I suspect I have hairline fractures in others. I hesitate getting them fixed before I fix the clenching, because I worry about the possibility of grinding down the materials they use for caps and fillers. If I am ingesting tooth material, at least it is natural, but that composite stuff they use is not meant to be ingested! *sigh* Its always something, right?!? I'll keep you in my thoughts and prayers while you get through the current health issues. BTW, love that you used that LOTR clip! And hey, some of your weather is down here in GA, drunk in my yard. Ima gonna need you to come get it. 😄We're expecting single digits tonight and I am not a fan!

      Hey great minds think alike 😉 ugh I can so relate to the teeth problems! With my gut health suffering and pregnancy/breastfeeding over the last 6 years my teeth have been struggling, I’ve had more fillings than I care to admit and I’ve also struggled with clenching. I know for me it’s connected to stress however I did notice a difference after a parasite cleanse! Maybe you want to research that but parasites can be tied to teeth grinding and clenching. LOTR always ❤️ I’m so sorry my weather is there and causing issues 😂 Thanks for stopping in friend!

      @@seedandsparrowhomestead OK, so a parasite cleanse was suggested to me by someone I trust, but I don't have a good functional medicine doctor to guide me. Doing my own research has scared me because I just saw recently that unless you do it right, you only shed a small fraction of them, and the rest go deeper and cause cancer. Not sure if I shared previously, but I already have a cancer diagnosis. Multiple Myeloma. Not something you want to mess around with but I also no longer trust physicians (which is a story way too long for the comment section!) *BUT* I have put my autoimmune in remission by changing my diet and supplementing with Omega 3's, Vit D, NAC, PQQ, CoQ10, and pre/probiotics. I feel better than I have in the last 20 years and I'm off all my meds, which was definitely killing my microbiome. Have you heard of a company called Viome? Its not cheap but the data alone is valuable. You pick how detailed of testing you want to do. I did a full body test. They mail you a kit to collect spit, blood, and stool. For the package I did, they do a food sensitivity test, analyze your stool for all the biology and determine what species of bacterial and stuff you are missing (and it detects viruses you have been exposed to like tobacco and tomato mosiac viruses that happen in the garden!), and here's the best part... they concoct a pre/probioitic specific to you from the tests, and they can create a custom capsule of supplements too. Now in full disclosure, I was disappointed in the supplement package. It wasn't what was needed to reverse my condition, and I knew that. But the customized pre/probiotics I think have been a huge part of the reversal. And if you don't want to buy their supplements and probiotics, they make recommendations of what brands have the strains of bacteria you need. Same with the supplements, they make recommendations that would be beneficial to someone who just wants all their vitamins and minerals optimized, but its not enough to treat chronic disease. However, it gives sooooo much more data! It basically told me that my cells were not turning over properly and I had a LOT of mitochondrial damage. And it has told me my oral biome is a hot mess, which I knew cause I've had dental issues all my life. My autoimmune disease was Sjogrens Syndrome, which causes dry mouth as one of its trademark symptoms, which only exacerbated the dental issues. I've incorporated an oral probiotic available from Azure and colloidal silver, which is keeping me from having mass cavities, but isn't doing anything for the clenching. If you have advice on a parasite cleanse I'd love the input! And check out @bambkb on Twitter/X for the thing about parasites going deeper and causing cancer. The video is from 1/19/24. I honestly don't know what source to trust on this subject!!! But for sure, my dentist isn't suggesting a parasite cleanse, or any solution for that matter. So frustrating!!! I'm at the point where I will try ANYTHING. I had way too much faith in my doctors and I've continually worsened over the last 20 years until I took matters into my own hands. My hubby used to tell me I collected "-ologists"... rheumatologist, nephrologist (when the meds killed my kidneys), neurologist... then it got serious when I needed an oncologist and a pulmonologist. Not a joking matter anymore. Nothing got better on the meds, only worse and it was the hardest thing I ever had to do to come off of them, especially all the pain meds. I used to take 20 pills a day. Now I take 20 supplements a day but none of cause damage or side effects, and they fixed things the Rxs never could!

    OATMEAL HONEY BREAD
    2 yeast cakes
    1 cup lukewarm water
    Add yeast to lukewarm water and stir till dissolved.
    2 cups boiling water
    1 cup oatmeal
    1 cup butter (2 sticks)
    1b/2 cup honey
    1 Tablespoon cinnamon
    1 Tablespoon salt
    In a large bowl; Mix together boiling water, oatmeal, butter, honey, cinnamon, and salt in a large bowl and let cool.
    2 eggs
    Mix into large bowl with other batter yeast and eggs. Sift in flour one cup at a time and beat well.
    6 1/2 cups flour
    With floured hands, knead the mixture in a bowl into a soft dough. Cover bowl with a clean clean dish towel and let dough rise in warm place until double in bulk (1 hour). Place on floured board. Knead several times . Divide in half and place in 2 greased 9 x 5 x 3-inch loaf pans. Let Rise in warm place until dough reaches the tops of the loaf pans (1/2 hour). Bake in preheated 375 degrees oven for 45 minutes. Allow to cool in pans under a towel.
    WELSH RABBIT serves 4
    2 Tablespoons butter
    1/2 cup cream
    1 Tablespoon prepared mustard
    1 Tablespoon prepared horseradish
    1 teaspoon ground fresh black pepper
    1 cup grated cheddar cheese
    8 slices sandwich bread
    Mix together butter, cream, mustard, horseradish, black pepper, cheddar cheese in a saucepan. Place over low heat, stirring constantly until cheese has melted. Take pan off heat.
    Toast the bread. Pour cheese mixture over toast. Place under grill or broiler until skin forms.
    CRUMPETS Makes 12 to 18 crumpets
    1 1/2 cups all-purpose flour
    1 teaspoon sugar
    1 teaspoon salt
    1 ounce yeast
    1 3/4 cups warm milk
    2/3 cup warm water
    2 eggs
    Sift together flour, sugar, salt in a bowl. Dissolve yeast in warm milk and add to the flour mixture. Mix in the water and eggs. Beat hard to form a smooth batter. Cover and leave in a warm place for a half hour. Beat again thoroughly and leave to stand in warm place for another half hour. Repeat this process once more. Place a greased frying pan over low heat. Place several crumpet rings or ( any metel ring you have that the size you sant your crumpets) in the pan. Spoon 2 tablespoons of batter into the ring. Leave for 6 minutes, or until underside is golden brown, then turn the rings over carefully and brown the other side. Transfer to a wire rack. Let cool, then remove the rings and repeat process until batter is used up.
    ORANGE MARMALADE
    3 large oranges
    2 lemons
    2 Tablespoons cornstarch
    3 cups water
    1 cup sugar
    Peel the oranges and lemons and slice peel into strips. Seed oranges and cut up the pulp. Save peeled lemons for another use. Mix peels and orange pulp in a small bowl and set aside.
    In a saucepan, dissolve cornstarch in 1 cup of the water. Add orange mixture and cook, stirring constantly, for 2 to 3 minutes. Add sugar and the rest of the water and cook over medium heat, stirring constantly, until mixture thickens. Spoon marmelade into a crock or jar and allow to cool completely before refrigerating. If stored tightly covered in the refrigerator, marmalade will keep up to 5 days.
    CREAM CHEESE SPREAD makes 16 small sandwiches
    8 ounces soft cream cheese
    3 Tablespoons Worcestershire sauce
    1 Tablespoon soy sauce
    2 Tablespoon garlic powder
    8 slices whole-wheat bread
    tomato, thinly sliced (optional)
    cucumber, peeled and thinly sliced (optional)
    Mash cream cheese with a spoon. When soft and fluffy, add Worcestershire sauce, soy sauce, and garlic powder. Mix well. Spread the cream cheese mixture onto 4 slices of bread, add tomato and or cucumber, if desired, and top with 4 slices of bread. Cut into quarters.

    I have it also. My very teeth hurt, my neck so many parts. and am beyond tired all the time. It’s on and off feel better for a couple days and it’s back. Hope you are on the mend. It’s no fun.

    I had the same sickness. Lasted over a month. I hate taking antibiotics and on the last 3 days I almost went to get them 😂. Was afraid of a sinus infection to finish. Went away! Hope the same happens for you sooner.

      Yes! I’m avoiding antibiotics at all costs, wouldnt work if is viral anyways, but all this hard work I’m doing on my gut I’d hate to ruin it with antibiotics, I’ve been alternating pokeroot tincture and oregano capsules and it seems to have kept infection away.

    it wouldnt hurt to see a dentist if it doesnt go away because sometimes that sinus pain is referred pain from the gums/teeth. also, food intolerances are another. i know for me my food intolerances didnt show up until after i was recovering from a bad cold/flu.

    That skillet bread looked amazing but the recipe is missing. Those were some amazing looking foods but my family would revolt if I didn’t make the same banana bread every time. I want that tortellini too but sadly none of those things in my freezer. Working though my freezer slowly trying to defrost. I do my flour tortillas in the press and roll them too. Glad you are feeling better! Tooth pain is so hard!

    One of these days I’m going to experiment with adding milk and acid separately to a recipe when substituting for buttermilk. My theory is that the acid just needs to be present to react with the leavening agent. I can’t see any reason why the milk actually needs to curdle to make it all work. Curiosity has me questioning. =)

      You are correct, no need to mix it, you just need the acid to react with the bicarb and create CO2 to leaven the item you are baking.

    Bread lame is pronounced lahm. It comes from the French word for cut. So it’s like saying lama without the second “ a “ sound.

      I don’t eat anything but meat so it doesn’t matter too much, these meals weren’t for me. I do shred my own most of the time but I had some bags in the freezer that needed used ☺️
