    Todays Recipes
    Focaccia Bread
    dough:
    1 3/4 cups warm water
    2 1/4 tsp active dry yeast
    3 tsp sugar
    5 cups flour
    1 tbsp salt
    1/2 cup + 2 tbsp olive oil
    topping
    3 tsbp olive oil
    1 tbsp rosemary
    3 tbsp parmesan cheese
    White Bread Loaf
    Makes 2 Loaves
    Mix 2+3/4 C of warm water with 1.5 Tablespoons of active dry yeast and 1 Tablespoon of sugar. Allow to sit for about 5 minutes until bubbly. Add in 1/4 c of honey 2.5 tsp salt and 1/4 C of either butter/oil. Finally add in 5-6 cups of flour kneading for 8-10 minutes.
    Place dough into greased bowl for one hour.
    Divide dough in half, shape into 2 loaves and place in greased pans. Let rise one more hour until it has reached the top of the pan or just above.( it will rise more in the oven)
    Bake at 350 for 30 minutes until golden brown.
    Let sit for 5 minutes before removing from pans and brushing butter on the crust.
    Cheeseburger Soup
    2 pound ground beef
    1 cup chopped onion
    1 cup shredded carrots
    1 cup diced celery
    1 teaspoon dried basil
    1 teaspoon dried oregano flakes
    4 tablespoons butter
    4 cups chicken broth
    3 cups diced potatoes
    3 Tbsp all purpose flour
    2 cups of Velveeta type cheese cubed
    2 cups Shredded Cheddar
    1/2 cup sour cream
    1/2 cup heavy cream
    salt + pepper to taste
    French Toast Bake
    Fill a 9x13 greased pan with cubed bread, add 2 cups diced fruit
    and 4 oz cream cheese, cubed
    Mix together
    8 eggs
    1.5 cups milk
    1 tsp vanilla
    1/2 - 3/4 cup maple syrup
    1/2 tsp salt
    Pour Mixture over the bread, fruit and cream cheese. Bake at 350 for 1 hour
    Pie Crust
    2.5 cups AP Flour
    1 cup cold butter
    1/2 tsp salt
    6-8 Tbsp cold water
    Meat Pie
    2.5 lbs meat(beef, venison, maple pork sausage etc.)
    2 cups chunky mashed potatoes
    1 apple, diced small
    1 tsp sage
    1/2 tsp thyme
    1 tsp onion powder
    1 tsp garlic powder
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1 tsp salt
    1/2 tsp pepper
    1 heaping Tbsp flour
    1/2 cup beef broth
    Bake meat pie at 425 for 40-45 minutes
    Hand Pies
    Roll out pie crust, cut into desired shape, fill with jam and place top crust over sealing with water. Crimp edges and make slit in center, brush with egg wash. Bake at 400 for 15-20 minutes
    Chicken and Cheesy Rice
    3 chicken breasts, cut into bite-sized pieces
    1 medium onion chopped or 1 tsp onion powder
    4 tablespoons butter
    1 tsp garlic powder
    3.5 cups chicken broth
    1 ½ cups jasmine rice
    1 tsp salt
    1/2 tsp pepper
    Add 1 cup of parmesan cheese once cooked
    Saute chicken with butter, add the rest of the ingredients, set instant pot to manual on high and pressure cook for 8 minutes, remove lid and add cheese.
    Granola Bars
    1 cup peanut butter, 1/2 cup maple syrup, 1 tsp vanilla, 1/4 tsp Chinese five spice, 2.5 cups sprouted oats. Top with white chocolate chips.
    Glazed Pork Loin
    Spread jelly or jam of choice over pork loin and bake at 350 until internal temp registers 145. Top with more jelly/jam
    Crispy Parmesan Potatoes
    choose small potatoes, slice in half. Toss potatoes with olive oil and butter, season with salt + pepper and parmesan cheese. Line a baking sheet with parchment paper, cover with parmesan cheese. Place potatoes cut side down on cheese and bake at 350 for 20 minutes or until potatoes are fork tender
    Carrot Fries
    peel and slice into fries, coat with olive oil, paprika, salt + pepper. Bake at 400 for 15-20 minutes.

    When I was first married, almost 38 years ago, it was my goal to fix my husband breakfast every morning. He then explained to me, he doesn't like a big breakfast (for breakfast, but we both LOVE breakfast for lunch or dinner). He also said he prefers that time to himself, without any distraction from me asking his questions, etc. It was his time alone with God. I was so happy to hear that, because I've never been a morning person. I love your idea of fixing a week's worth of breakfasts at one time! I, have just learned, at age 61, the joy of making a double or triple batch of what I make for dinner, to either give some away to my daughter's family or my friend, who has been going through some bad sleep issues, or I can put a meal in the freezer for a time I'm not feeling up to cooking. It's been a joy to be able to get a disposable pan, filled with food, from my freezer, and be able to just put it in the oven to bake! I did that with Mac n cheese, but found you need to add milk or cream to it, before baking, as it thickens up when frozen. Adding the milk makes it creamy, smooth, and delicious!

    I loved doing the challenge, and I was doing well then I woke up Monday and my fridge was dead. It made me realize how reliant I was on the stuff I had stocked in the fridge. I managed to save a lot of the freezer items but all my dairy, leftovers, etc are gone. I am now making a grocery list to replace some of that and round out the meals I now have to use for anything that thawed.

    You made THE most beautiful loaves of bread! Your Cheeseburger Soup looked delicious and I’m sure Heather appreciated it. I hear your heart is torn between getting up to share breakfast with your husband vs getting a bit more rest. You are doing a wonderful job caring for all your family members. During certain seasons it can be more of a juggling act. Loved the Breakfast casserole using up all those misc ingredients. Meat pies, hand pies…How fun!     Your soup looked perfect for a warm and cozy evening in! I have never been a fan of Velveeta cheese, even before I started down my own health journey. That being said I always passed on making recipes that called for it. Knowing that I may be able to find a healthy version of it has inspired me to reconsider for those recipes that look delish but I’d otherwise pass on!

    I fell out of the challenge pretty fast, but trying it showed me some of what I need to do to be better prepared for emergencies. I bought a small chest freezer, since its just me, 2 dogs, and a cat, and I started stocking it a bit at a time. Bought extra critter foods, and am making extra "canned" dog food as well to keep in the freezer (think Farmer's Dog, but homemade). I've canned mixed berry and strawberry jam, apple butter, and salsa, and I'm looking forward to branching out. Thanks for the inspiration and guidance!

    Everything looked wonderful! When you were doing the pork tenderloin with your basil mint plum jam, for some reason my mind went to balsamic glaze to maybe sweeten the tart jam, just a thought!
