    I worked in ITC at this restaurant as an intern, and let me tell you, Chefs used to treat this dal as their child! on the few occasions they used to give us a special treat of a half bowl of this dal, and let me tell you, we would sorely look forward to those times!!

    Recipe is -
    1. Midland brand kali urad dal - 2 kg
    2. Wash in warm water 4-5 times till water is clear. Add 5 lits of water and leave it on tandoor over night. The burnt charcoal heat will slow cook the lentil over night.
    3. Next day discard the black sticky water out and replace it with 4 lit of fresh water.
    4. Add 200 gms of ginger garlic paste in the ratio of 1:2 :: ginger : garlic. Make sure the paste is smooth, less watery.
    5. Add 80 gm salt, 80 gm degi chili pd MDH brand and midland brand tomato puree 850 gm ×2 tins. Cook on medium to high flame till lentil mixture starts to boil. Reduce flame to medium add 1 kg unsalted butter. Cook for another 45 mins.
    6. Add 1 kg thick cream and continue cooking on low flame for 1 hour.
    7. Your dish is ready. Serve with dollop of unsalted butter.

    I got a chance to visit Bukhara, ITC Maurya Delhi. Daal Bukhara was amazing. I am big fan of it. I liked their rayta as well. It was so yummy.

    17 yrs bk wn I was in Kolkata use to go to ITC pesawar restaurant n use to order this dal every time, never had a better dal makhni any where else till date ..

    I have used a slow cooker and once have cooked it for 52 hours … lobs of butter whoever have eaten have been licking their fingers ever since. Only suggestion if you cool this dal don’t cook any other entree. The others will lose out . A naan and jeera rice are more than enough

    its not possible to cook on charcoal overnight in cities in our small kitchens, but slow electric cookers r available in mkt in wch 70% similar taste can be had.
    Secret ingredient in this dal is Mineral water, soak d daal in mineral water overnight, & then cook also in mineral water as in dal d next largest ingredient is water, so taste & composition of water is v important!!

      charcoal fire and slow cooking is what makes it stand out ! kasturi methi, tomato puree, nutmeg, aamchoor, coriander and cumin powder, garam masala, whole spices, butter, desi ghee, ginger garlic paste and the 3 important pulses ! cook on slow heat , constantly stirring fo couple of hours !!

    150 Portions of dal every day @ Rs. 900.00 per plate. Not bad at all. He didn't reveal any secrets of the recipe. Then again it is just a dal not the rocket science..

      Bhai inke restaurant ka nam hai 'bukhara' Or dal bukhara inhi ki recipe hai jo all over delhi me har restaurant me bikti hai wo bhi dal bukhara ke nam se hi Or rahi english ki bat to bohot standard ke log ate hai inke restaurant me menu ka rate sunke fat jayegi apki

      aap dal makhni samajh ke khalo, gussa kyon ho rae ho, chef ko english me bolna padta hai kyonki log hi vaise aate hain, many meet the chef to appreciate the food and him.
