The Most Famous Tandoori Restaurant in the World | Bukhara with Vir Sanghvi |

- Опубліковано 11 вер 2024
- Bukhara at ITC Maurya, Delhi is India's Highest Earning restaurant. We dive into its legendary Tandoori menu.
A laid-back knowledge-filled feast at Bukhara with Vir Sanghvi-a front-row seat to a tandoori symphony, where each dish hits the perfect marinated note and finishes with a sear that’s pure magic. A manta-ray-sized naan torn apart and dunked into the velvety Dal Bukhara, while an off-menu secret Murgh Khurchan makes its entrance like a culinary VIP-most people haven’t even heard of it! Add to that a carnivore’s dream of meats, each executed to perfection by Executive Chef J.P. Singh.
This episode was one of our most fun and informative shoots yet. Vir effortlessly switches gears, from dropping gems about Bukhara’s history and Punjabi culture to spilling the beans on the origins of Chicken Manchurian.
Vir Sanghvi
is one of India’s most respected journalists, editors, and TV personalities, and a bona fide food and travel guru. His sharp wit and sophisticated palate have made him a legend among food lovers. Whether he’s critiquing a dish or dishing out history, Sanghvi’s influence on the culinary scene is undeniable-he’s the voice you trust when your taste buds are on the line.

Vir Sanghvi casually dropping chindian cuisine history in India....love it.
Hahaha history lesson
He is right Tangra is more Cantonese variety...but you can get better Chinese food in Tiretta bazaar
He is soo wrong about the second part. These dishes clearly have influence from central Asia. The biggest Tandoors in The world are in Uzbekistan. Also Punjabi culture was always affected by Iran, Afghanistan and Central Asia since Punjab region bordered them. Its so shameful these nationalists guys are teaching wrong history on purpose. Most Indians didn't even eat meat before
Most indians didn’t even eat meat before? Have you read any Sanskrit or prakrit book? One example do you know in mahabharat mamsam odanam or rice and meat is mentioned as a popular dish? Dont spread around your impression and politics if you don’t have knowledge
@@guharup Those dishes are not modern dishes, all of these modern dishes Clearly came or have heavy influence from Central Asia and Mahabharata was written in Punjab and on Afghan border, modern day Pakistan, not in what is most of India today. Like I said Western parts of South Asia were always influenced by Central Asia and Iran
Owner and chef perfect example for knowing ur restaurant and ur customers
Couldn't expect more authentic and genuine cuisine. As you said Bukhara doesn't use broiler chickens for tandoori and other dishes too. We can see the difference in texture, colour and shine as well. Overall superb presentation and experience.
Bukhara must be the only restaurant, that took the simplest of possible dish that is makhani daal and elevate it to a different level...
that girl in the background, watching all that food 😂😂 and obviously our mota Bhai .
We missed that...have to watch it again
I was so surprised to see that authentic dishes do not have artificial flavors. glad people here prefer taste rather than how food looks. Eagerly waiting to visit Delhi for the authentic food i've been missing my entire life. And yes Delhi is the place to live ... coming from a guy living in Hyderabad.
We are looking forward to Hyderabad
Bukhara menu is the brainchild of grand master chef Imtiaz Qureshi ...ITC should be given credit to bring a gem like him.
And Chef Manjit Gill
Used to eagerly wait for the "Brunch" magazine every Sunday, and flip the pages directly to go to Mr Sanghvi's articles. They were my first lessons about how to understand and appreciate the nuances of cooking...the falvours, the techniques etc. What a cracker of an episode. The following will be my dream episode on Forkers: Sid & Shanky, Mr Kunal Vijaykar, the legendary Mr Vir Sanghvi and the OGs of food blogging, Rocky & Mayur. Team Forkers, pls make it happen!!!
That's a great idea!
: "It’s been ages since I last visited Bukhara, and this episode brought all those memories rushing back. And I have to mention the girl’s reaction at 8:17-absolutely priceless! Another brilliant episode, kudos to the entire crew and technicians. Keep up the fantastic work. My best wishes to everyone involved. Keep rocking!"
Thank you boss for those kind words
2 mahiney ki salary bacha kar jaaonga Yahan …. But jaaonga zaroor
Karaa tha bhai mainey, das saal baad dharampatni ko agar koi dinner yaad hai toh yahi hai
It's great to hear that Priya Raje Scindia is co-producing this project. Looking forward to see more culinary offerings from the Gwalior and Chambal regions.
We are planning to
Just like how chef JP Singh manages bukhara /peshawari etc. Chef Ajit Bangera who set up Royal vega in ITC coromandel /narmada etc etc and later on Chef varun mohan carried the mantle.
Legends
Wow! Getting the legend Vir and getting to shoot in Bhukhara! Superb
It was an honour
but the most memorable dish was the potato one and but ofcourse the dal. All foreigners around our table seemed to think that as well. Everyone was reordering the aloo in spite of the plenty of meat options. Very heavenly.
Have to go back for the potatoes
This might just be the best episode this far :)
What a fun lunch ... also Vir being himself :D
Cheers Kurush
I need more of Vir Sanghvi. I would like to learn new things about all of his research towards food n life.
You must read his opinions and articles. He is a repository of great food anecdotes
@@TheBigForkers sure will
@@TheBigForkersyeah he had an epiphany while on the bench following radia tapes😂
Stop being a bore
@@TheBigForkers such baath Bola Bhai . If I were you I would have asked him, what & how he transformed himself from a journalist to a food expert ?
There you are !!! The Big Forkers !!
Not saying just coz it was desi food but it was authentic episode. Back with natural flow !! Kuddos to more.
Its great that Khurchan is not getting the popularity and is low key compared to the tikka masala and kadhai versions or else every restaurant might spoil the essence !
Cheers
Saying this to cover the internet trend : We got this before GTA 6 ❤ you guys are bringing NDTV goodtimes and lifestyle shows on youtube !
I’m at the risk of going bald by scratching my head about why this channel doesn’t have more views. Or maybe, maybe the view/engagement count represents the highest possible quality of an audience you can get at this point of time 😂. Great stuff, folks. If you ever drop by Amsterdam (not the one in The States), give me a nudge; not that you’d find a food utopia there.
Because it's an English language show with limited reach within the GEC. We are certainly bigger on television
@@TheBigForkers and may you get bigger! If that show with Gino and Ramsay is on one end of the humour spectrum and the Top Gear gang on the other end of banter, you are somewhere in the middle; i.e. you represent the best of both the flavours. Keep it up! - your run-of-the-mill internet fan
You caught it just right mate...add Bourdain to that middle ground and one ends up with TBF. That's why we have done better on television than YT.
Intelligent conversation over good food is so appetizing !!
My favorite restaurant in the whole world, Bukhara in Delhi❤️
Vir Sanghvi sir is so knowledgeable. I would love to listen to him talking more about food
Have been following each episode of yours since you started. Hope to develop this knowledge about food myself that just elevates the experience of eating and vibing with the city.
They are our rocky and Mayur for this present generation ❤️
Its such a delight to see Vir Sanghvi after ages, if I wanna be a food blogger I'd love to learn that from Vir Sanghvi
Blogging is different than journalism and also different from shooting episodes.
I only knew him as a Journalist, so I stand corrected too :) Thanks
Wow.. Vir knows a great deal about food and the history.
He certainly does
Can't believe you got a guest like Vir and we just got a drop of his vast food history knowledge..
Note to Produce/Director/creative team/ Sid : Milking the Ocean out of an opportunity like this should be your priority, esp. if Quality over Quantity is your goal.. No point lamenting about it at the end saying we could sit for hours, when you let it slip right there..
Keep up the grind boies.. loving your content..
PS : All the feedback is with positive intentions.. peace..
We were there for longer than an edit allows
Don't know what that means.. fire/rehire an editor/director if it's what it takes Sid.. good luck with all the rest..
PS : An honest banter goes far beyond any post-prod words with graphics/gimmicks..
Would've been a great episode of that man Vir would just shut it for one second!
All that great food probably went cold thanks to his monologues
What a legendary episode, loved it!
The owner is very open minded and straight forward

khabar dar agar shanky ko aadhe episode mai bahar nikal diya to!, muj se bura koi nahi hoga!

😊 Bukhara has yet to be awarded a Michelin Star 😮. It's famous in India. That's all.
There is no Michelin in India
@@TheBigForkers Michelin does not rate Indian cuisine because all Indian foods look and taste the same. Low creativity. The rare Indian restaurant that receives a Michelin Star is invariably located abroad and serves fusion cuisine.
That's not true. Michelin doesn't exist in India. When it comes, it will rate restaraunts as it always does.
@@TheBigForkers Michelin doesn't rate Indian cuisine in India because all Indian foods look and taste the same with poor creativity. The couple of Indian restaurants awarded a Michelin Star are in London and serve fusion food.
London, New York, Bangkok, Hong Kong, Los Angeles
Not India yet, because Michelin doesn't exist in India. And not all Indian restsraunts cook the same.
Me too from now onwards a fan boy of “Vir Sanghvi”
Great episode for the gastronomists!
cheers
This is such a fantastic talk at one of the most iconic restaurants of the country. The lore was absolutely on point too.
Thank you
Just a hype for this Bukhara restaurant.. Very ordinary food..
Most folks would disagree
hey guys really loving your content lately. I have a very genuine question i see you reviewing the place but i checked zomato dining recently and there seem to be more bad reviews about bukhara's food standards dipping. I have never been there yet despite living in delhi but is something i am looking forward to real soon. do you think there is any substance to this string of bad reviews because there is not one but many
Each one has their opinion... But this restaurant has been dishing out great food for years... And our day was no exception.. Ab baaki kismat tumhaari..😉
Ok so itc can handle the food without gloves... Great to know 🤔🫡
Gloves and tandoor don't go together. Do you folks not think things through
Sid v/s Vir who gave more gyaan?
Really ? are we competing with Sid now ? Sid OP Always !!!
Nice Episode
Watching this video the first thing, in the morning with breakfast! I am a Vegetarian, but I LOVED this food spread, the atmosphere, and the ambiance (are both words one and the same? 🤔) I LOVED THIS particular Delhi's vibes and the conversation was tasty too! Cheers!! What's next on the menu?
Afghan cuisine
@@TheBigForkers Thank You so much for replying! 😍🥰🤩

Vir Sanghvi with all his second hand knowledge of Indian chefs missing out in identifying the original chef of Bukhara - the one and only Todar Mal.
Vir had been connected closely with ITC for a very looong time
@@TheBigForkers Boss, I was working in Maurya in 1978, a year after the hotel opened. Anyone who was around at that time knows that it was Todar Mal who was the main man at Bukhara. Unfortunately he was not very educated and used to love his daaru. He had been brought in by the ITC team from The President Hotel in Darya Ganj. I have a lot of respect for Mr Sanghvi as far as his commentary on food is concerned but his knowledge on ITC and other hotels is based on what has been told by someone who heard it from someone else. Mr Sanghvi wasn't around when Bukhara came into being.
Noted, I will share this with Vir.
@@TheBigForkers I would be happy to give any more details if required. I have a lot of issues with Mr Sanghvi on his political views but this is much more serious - giving due credit to the to the person who made something like Bukhara to happen. I have had some very senior food professionals missing flights because they decided to drop into Bukhara on way to the airport.
May your issues with his political views are colouring your views on his culinary views.
Vir Sanghvi the legend 🎉
Its a cuisine history class with top notch English fan of this youtube channel.
Being a looser and half educated its a pleasure viewing. ❤

Vir is a gem.
Who in their sane mind would agree to provide you guys health coverage?!
It's a mystery
You guys are putting in so much effort into the videos, huge budgets, why can't it be 4K?
We can and sometimes do shoot in 4K but most people dont watch it in 4K. Its just a matter of storage.
Bhai scene on hai… party ho tou bilkul like this.
Beautiful episode
Cover Panjab next, lots and lots of very interesting food!
Next time!
Shanky looks totally clueless in this episode.😂
When are you guys having Rocky and Mayur over?
Hopefully soon when Rocky bhai is available. He is busy with his amazing show. Mayur boss is now busy with Zomato
The THREE MUSKETEERS have a girth of 2 x 56" 😅
Like Masand or anupama hosts a roundtable with actors, consider something similar with Vir, kunal, rocky
Mayur had suggested a 1 Ton Table of big lads eating and talking food ...we should get that together
Delhi food💯💯💯💯💯💯💯
4K please!!!
Nelson Wang I suppose was front China Garden
Music at 3.00 reminded me of food safari fox traveller
I am a mumbaikar, but I agree with Vir. Delhi is a vibe and extremely misunderstood by a lot of mumbaikars.
Mumbai has its place in the world of food for sure. Delgi hits different though. Mostly because it represents so much of India as a capital city
Nah, it's just the food. Seedy vibe through and through.
There is some truth to that statement
Complete showpiece. Love this episode
So confusing... 😅

Bhukara type of food is nothing in front of Hyderabadi street food, and ofcourse Hyderabadi nikka or valima food is ultimate
I wouldnt go that far :) but yes. We definetly want to cover Hyderabad
The most shocking thing was it was never Mughal or Mughlai food, the chefs who were jobless after Mughal went bankrupt , created the brand for People to come and eat this street food - grilled and skewered.
Amritsar 🥺
Please suggest places in amritsar... Would love to know where.. Have not had great amritsar experiences as yet..

The only thing that's disingenuous about Bukhara is its name. This resturant serves west Punjabi sikh food, combined with some Lucknowi. Uzbeg food is nothing similar to Indian food. The only spice they use is crushed cumin and that too in tiny quantities.
True

The show seems to miss the grounded, relatable touch that Mr. Vinod Dua had, which resonated with the audience. There's a subtle touch of elitism which seems out of place, in my opinion.
