- Today I am recreating another version of Tamale Pie but EASY! Some of you have asked for a recipe utilizing Jiffy cornbread mix. This cornbread casserole is cheesy, moist, and savory. This is not a pie or tamales, but it is a tasty cornbread casserole bake. This is gonna be good!

INGREDIENTS
2 boxes of Jiffy Cornbread mix
2 large eggs
1/2 cup sour cream
1/2 cup green chiles (optional)
1/2 to 2/3 cup whole milk
1 lb lean ground turkey or beef
1 oz envelope of taco seasoning
1/2 tsp smoked paprika
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
8 oz Colby Jack cheese (shredded)
9x13 baking dish
2 Tbsp softened butter for baking dish
• bake uncovered at 375°F for 35 minutes or until cooked

I am 79 and my mother made this almost exact dish, but added a can of kidney beans. She called it hamburger corn pone pie. A warm memory.
Beans! Yes, black, or Pinto, any type adds starch and texture, and flavor is all about texture!
My thought as well when she said creamed corn i said where's the beans 😆

Do you layer the beans in on top of the meat? or do you mix them in the corn "pone"? Sounds good and adds nutrition.
When my kids were young I made a dish similar to this. The only difference is, I used leftover chili. Now they're grown and gone. I think I'll make this for me and my husband.

I grew up with it called Mexican cornbread. Had a can of corn in it and used unsweetened cornbread. Cooked in cast iron skillet. Delicious!

That is the coolest baking dish I have ever seen. Thanks for your awesomeness. I usually put corn in the meat mixture and add all of the cornbread on top, kind of like shepherd's pie in a way. Absolutely love hearing the cheese crunch sound!!! Mama, you rock!

Definitely tamale pie - originally from Indiana with southern roots and now in the south. This is how I used to make it, almost exactly! It was one of my “I need a quick dinner” go-tos, but I haven’t had it in YEARS! Like you, I sometimes added canned creamed corn and, if I was out of Jiffy, I’d just make my own cornbread. Now you’ve got me jonesing for this and I just cooked up a pound of taco seasoned meat and tucked it in my fridge. There may be a change in my menu for the next couple of days…

I’m in Orlando, FL and my aunt who raised me will make this at least once a week. It was a favorite in our household. We called it Mexican Pie.
I watched this video and 15 minutes I made it. I did add canned corn to the meat mixture. My family loved it. We love all your recipes. We hope you make another cookbook. Your 1st one was fantastic.
My grandmother who was born before the turn of century used a pioneer recipe to make a tamale pie. Bottom was a meat mixture beef or pork shredded. Seasonings from scratch. And white corn flour or masa made with lard which was placed on top. No cheese, it tasted like a tamale but in casserole form. Very good. She also made prickly pear preserves. She lived in far North Texas.
Zatarain’s make a jalapeño cheese cornbread mix this is awesome to use for something like this.
Mom made this for us in the 70's and the cook book called it Tamale Joe Casserole. Very delicious ;)

My hubby loved this and took it to work with a side salad
I like the idea of adding creamed corn to jiffy mixture and also thought maybe even chopped jalapenos and sprinkled cheese on jiffy layers would taste awesome, possibly even add the canned corn to meat mixture with some salsa then top with more sprinkles of cheese and repeat same jiffy layer and sprinkle with cheese. I would love to make it with ground beef and another with shredded chicken. The ideas from such a simple yet hearty recipe is the best family casserole dish you can have. You change it up to give a new take the next time you make it. Love this. I plan to make this as soon as I get the few ingredients I don't already have on hand. Thank you for this recipe!!!!
A good recipe. I always add a red sauce- tomato, salsa, or red pepper sauce etc- to the meat. The reddish color really looks and tastes appetizing.

It's been called tamale pie here in Arizona since at least the early 1960s. My mom made it when I was a kid, but the cornmeal mixture had more of a tamale texture rather than cornbread.
I’ve made that in the eighty cornmeal, salt and water cooking til it thicken to poured it on top of the taco meat
It's been called Tamale Pie and made pretty much the same way in Texas.
I use the recipe from my mom's early 1960s Junior League Of San Antonio cookbook.
I haven't made it in a long time so I'll have to make it soon.
I make the same thing except I use red chile pork, just as a traditional tamale woudl be. Then after filling I add two boxes of Jiffy and cheddar cheese and scallion onions on top. To serve I scoop out and add hot fresh beans with bacon over it. Buen provecho!

I do this with barbecue pulled pork. Everything is basically the same besides the meat. I even put the creamed corn into the cornbread mixture. Also, when 8 serve it, i mix a little cholula into some enchilada sauce and put that and some sour cream on top. Great meal.

I just popped mine in the oven. I used ground beef and a can of creamed corn, and some sliced olives over the meat before covering with the rest of the jiffy mix. Thank you for a simple recipe which I needed after getting back from vacation and being busy with laundry, etc.

This looks so good, I wonder if adding spices to the corn bread if it would make it taste more like a tamale
yeah-maybe some adobo and/or that chicken/tomato boullion (so tomato-ey!) to the cornmeal would be awesome....
Learned from my mom to make this in high school. Made for all the church potlucks. We added black olives and crushed tomatoes.
