TAMALE PIE MADE WITH MASA HARINA: Delicious, More Authentic Recipe w/Ground Beef, Corn & HATCH CHILE

- Let's face it, there's no substitute for tamales, but this Tamale Pie made with Masa Harina is at least closer to the flavor profile of tamales because it's not made with corn bread. It's really delicious! Masa Harina is a corn masa flour. I typically buy Maseca brand, in case you're looking for it in the grocery store and aren't sure you've got the right thing. Read on for the recipe.
Tamale Pie
1 lb. lean ground beef
1/2 chopped white or yellow onion
2 minced garlic cloves
1 15oz. can corn, drained
1 can crushed tomatoes
1/2 cup chopped Hatch green chile
1 Tbsp. red chile powder
1 Tbsp. cumin
salt to taste (I use about 1 tsp.)
approx. 1 cup grated cheddar cheese
For the dough topping:
2 cups masa harina (I use Maseca brand)
1 tsp. baking powder
1 tsp. salt
1/2 cup melted fat (I use butter. You can also use lard or vegetable oil.)
1 1/2 cups warm chicken broth
In large skillet over medium high heat, brown ground beef. Add in chopped onion and fry until translucent. Add in all other ingredients: minced garlic, crushed tomatoes, corn, green chile. Season with chile powder, cumin and salt. Continue cooking approx. 5-10 minutes. Once fully cooked, take off burner and set aside.
Meantime, make dough by mixing together the dry ingredients: masa harina, baking powder and salt. Add in melted fat and mix until crumbly. Add chicken broth a little at a time until fully absorbed into dough. If it's too dry, add more chicken broth. It should be spreadable.
Grease a 9x13" baking dish with butter or non-stick cooking spray, then add meat mixture and spread evenly across the bottom of baking dish. Sprinkle shredded cheese on top. Spoon dough on top and carefully spread across the top of dish. (This will take a little time. If dough is not spreading, wetting your spatula with water may help.) Sprinkle additional cheese on top and bake at 350º for 30 minutes until golden brown.

Spread the masa between two sheets of parchment paper. Spread by using a rolling pin to the size you need for your baking dish. This goes much faster! Then just flip on to the meat mixture. If it breaks apart, you can just smooth those sections together. Also, roast the corn a bit before adding it to the meat. That really brings out the corn flavor. Pan fry the corn without liquid or oil. It will have a great roasted flavor.
I don’t know what I loved most the recipe or the dog. ❤️
When was the last time you had Tamale Pie? And have you ever had it made with masa harina as opposed to corn bread?🌽 Let me know in the comments because I think it makes a huge difference.😘👌
No have never thought of using Corn Masa instead of cornbread wish is so delicious 😋 But masa makes a lot sense now for the real tamale taste. I will definitely try it now have some love making corn tortillas so have some on hand. Thanks so much for the informative and the inspiration. Rachel in Corpus Christi new subscriber 🤗
Which is not wish 😂🤦🏻♀️
I wpuld never eat a tamale pie with corn bread its not the same at all
Never tried it with corn bread.
My Mom would roll out the masa on wax paper, lay it over the meat in the pan, then peel the wax paper off.
@@joetilman7227 ...I was thinking to do the same...☺😋
I remember when I was a kid my mom used to make this all the time I used to make a face cuz I didn't like the corn in it. But I ate it anyway. Now I would eat it but I would put roasted corn but this looks great. Love the crema at the end
I'm sure it would be fantastic with roasted corn. How funny that you gave your mom a hard time. It really is delicious.
Sweet little beagle smells something delicious and can hardly wait!❤❤
Mmmm looks delicious, I will do it tonight but I will use chicken instead of ground beef. 🤗😋
We always had it with cornbread with the fillings sort of mixed inside. I like the looks of this. I'm definitely going to try it out!
Hope you like it as much as we do. Thanks for watching!
Marcy you started a good thing 😂
We all wanna try it.
haven't had it in years, but I'll give it a try, seems easy to make an it looks delicious
This looks so delicious. Definitely must try this recipe
Finally found a recipe that’s exactly how my mom use to make it
That is always good to hear. Thanks for the comment.
What a top notch video. I've done cooking videos and I could never get them just right. I wouldn't be surprised if the Food Network contacted you..thanks for sharing!
You are too kind. Thank you for watching and for leaving such a nice comment.
Although I totally agree with @guysolis5843, please never go to Food Network! They ruin everything IMO. I love your videos!
I just made a tamale pie with the directions off the cornmeal box. A little variation on the masa mixture. I like your routine.
Thanks! And I like that you're not afraid to experiment. That's how we stumble on really great recipes.
i made this for the first time using leftover oven baked chicken you're right no true substitute for tamales, but to follow the recipe and to keep the filling as semi-moist as possible..,in a quarter of time to make tamales, Its a true game changer.....AWESOME
My mom made it with Masa . Cornbread never appealed to me. Thanks for your recipe.
Definitely have to try this one. Thank you!🎉❤❤
This looks delicious! Thank you very much! 😋😋
Another great episode! Making that this weekend, already have all the ingredients. I always smile and sit right down to watch you shows. Thank You! ❤
Awe. That is so nice to hear. Thank you for watching. Hope you enjoy the tamale pie.
Thank you Marcy! I'm looking forward to making it this week once I have the ingredients on hand. Looks delicious!

I really like the music you choose for these videos. Your husband and you put out some real quality recipe and travel videos. Just came back to say that. Very catchy tunes and very unique to your channel. Happy Thanksgiving and blessings to you and yours. 🕊🦃🥧 From a fellow New Mexican. ~ Cheryl B.
Thank you so much, Cheryl! What an encouraging comment! We work really hard to put out good content, so it's nice to hear that others can see that. We recently got a comment from someone who said we used "porn music." We just had to laugh, because we have no idea what that sounds like! Lol I hope you had a wonderful Thanksgiving.
@@marcyinspired1442 Oh my word. Throw that comment into the memory hole. It was a pleasant Thanksgiving. I hope you enjoyed yours as well. Take care.
I'm making this recipe this weekend...Yum.
What a Gorgeous Apron!! 😍
Oh Marcy this recipe looks so delicious.. I 'm going to make it next week!
I see Little Miley is doing better, so Happy to see her without her neck pillow.
Thank you again for sharing another Yummy recipe! Looking forward to making this Tamale Pie! 💫
Thanks! I love my new apron! And thank you for caring about Miley. We actually shot this video before her surgery, but she is doing much better now. In fact, the vet removed her stitches today.
Hope you enjoy this recipe.

I have some old Mexican cookbooks from the 30's and 40's, I'm guessing it was invented back then. My mom had like 5 copies/versions of the recipe in her recipe box. My dad loves it, (he thinks his mom used to make it) and so does my Mexican husband. I like to use leftover chili to make it.
I knew it was an old recipe, but I didn't know how old. How fun it would be to thumb through those old cookbooks. You'll have to let me know if there's something in there that you think I should make.
I used to make something similar to this for my family years ago. I am rewatching your video now as I am going to make it this weekend. Thank you
I made this last week & my family loved it! I’ve had the sweet cornbread version of tamale before but I don’t think I’ll be going back to that. I love it so much more with masa topping! 😍🤤
I'm so glad you said that because it really does make a difference, but it means more coming from someone other than me! Lol Thanks so much for coming back to comment.
Now I know I’m gonna try it 😂
Thank you! I've been looking for a tamale pie recipe using masa for the topping! ❤
Happy you found what you were looking for! Thanks for watching!
Another recipe to make soon! This looks scrumptious!
Ohh yummy 😋. Looks SO good Marcie 🥰. Can't wait to try this!!!
AND, love your new apron 😀. Beautiful 😍
Thanks! I really need to wear aprons more often. Having such a beautiful one, may remind me to do so.
Hope you enjoy!
Can’t wait to try this 😎♥️
Wow!!!!🎉🎉🎉🎉🎉🎉🎉 I love this! We didn't have any Hatch chili but it was great anyway!!!! Thank you!
Thanks for the idea...I am gonna try this with shredded pork, straight cut potatoes, sliced jalapenos, and pitted green olives...like the tamales from Sonora, Mex. God Bless.
This sounds delicious.
Do you have a recipe for Sonoran Pork Tamale Pie?
I have always wanted to try tamale pue, but have never made it. I like your play on ot with the cheese and the masa; yum. I definitely need to make your version!
Thanks! I like to put cheese on everything. Hope you like it.
This looks so good. Can't wait to try it.
Thanks. I hope you enjoy it as much as I do.
Marcy I am definitely going to make this this weekend thank you so much. ❤😊
Happy to hear that. It's a great recipe.
Just stumbled onto your video. I've made several tamale pie recipes from other channels and I must say I never saw or thought of the masa harina for top. I like this, and your filling. Next tamale pie will be from your recipe. Thank you. Your doggy is waiting for some!
Sabrosao!! Need to try this version with the masa.
Thanks! Let me know what you think, if you do.
I want to try this I have not made tamale pie in years!
Yum! 😋 looks delish! I seen your little perrito hoping you dropped a little something for him to sample! 😂
Looks delicious 😋
We really enjoyed it. I was left wondering why I don't make it more often.
Oh yeah...Food Network's gonna snatch you up 😉😉😉
You are too kind. Thanks for watching!
I'm going to try 3 different versions - one with ground pork. one with ground beef, and one with ground chicken - to see which I like best. Thank you for this recipe!!! 💖
Thanks!!🤤
👍
I was thinking it would be harder without the sinple cornbread twist but this doesnt seem harder at all!! I will be trying this thank you!! ❤❤
I think it's simple. Spreading the masa is the only tricky part. Sometimes I wet the spatula to make it easier. Hope you enjoy it.
Wow Marcy u really do have great tips 😂
Making this tonight 😁
That's awesome! Hope you and your family enjoy it.
Good Morning Marcy, thank you for sharing this Great Tamale Pie video w/ Recipe! Can Tamale dough mix bought at a local Mexican backer or Grocery store also be used to make Tamale Pie?
Yes, you can absolutely use prepared tamale masa from a Mexican market.
I bet that would be good with a combo of tater tots and fritos on top instead of the Masa Harina dough. Add salsa to taste at the table!
I'd be all over that, too! Can't go wrong with all those yummy flavors.
That would be a Frito pie 😂
But sounds delicious too 👍🏼
But definitely not better tho
The whole concept would change and then not called a Tamale Pie 🤷🏻♀️
There goes that tamale flavor!
there are a few different Maseca variations. could you say which one you used. one variation is for making corn totillas. another variation is for making tamale masa. which variation did you use? I'm thinking the Maseca tamal variation for making tamales will be the best choice. we will be replacing the corn with some drained then oven roasted hominy. we digest hominy easier than whole kernal corn. thanks for sharing.
I use the Tamale Maseca.
The masa spread pretty easily on top of the meat. IDK if it helped but I measured the masa and then sifted it, and then added the other ingredients.
Looks delicious have to add to my "make" list. Not that you need to do it on this recipe but curious if ever do the the float test with the masa or just do it by feel?
That is a great question. I only do the float test when I’m making actual tamales. It’s really important, especially since, whenever I make them, I make multiple dozen. You would hate the masa to be dry. For this tamale pie recipe, I don’t think it’s necessary. I probably could have afforded to add even a little more chicken broth to make it easier to spread, but the consistency turned out perfect. It’s really delicious. Hope you enjoy it.
Have u made a video making Tamales 🫔 would to watch ur video I’ve seen lots of great ones. Simply Mama Cooks has the ones I will definitely make.
This looks delicious, Marcy. Can I use cooked fresh corn instead of canned?
Absolutely! That would make it better than canned.
Of course you can!
I need to make this. Not a big fan of all cumin but I will adjust that. Thanks for the recipe.
That's definitely easy to fix. Hope you enjoy it.
I'm allergic to poultry, would it taste as good if I made it with beef broth? Ty Hi from Las Cruces NM😊
Hi does the chicken broth have to be warm or hot ?
Is it really necessary to touch the ground raw beef before cooking it? Like jst slide it into the oan n dont dirty ur hand like everyone else does.....
Just make the masa runnier so its easier to spread
Do you use instant masa or the original maseca
Same thing
I think that’s original the kind I use will for mine is Maseca corn masa instant kind just add water to it.
Can I get written receipt
Nice recipe…..music is distracting and annoying…..sorry.
You took the words right out of my mouth.
Correction. Please. The music is not so distracting and boring. More accurately, you are distracted and bored listening to it. It's a matter of taking ownership of your own feelings rather than blaming something else. I know it is a nuanced difference, especially in a cooking video, but ...
I actually love the background music..very Carlos Santana esque
How do you find the recipe for this
