When I was a kid my mother used to make tamale pie and I loved it. I am 67 now, been married 40 years. A few months ago I tried describing to my wife what my mom used to make, I couldn't remember what she called it and didn't do to well describing it. When I saw you making this I recognized it, looked at the title and "That's it Tamale Pie!" I brings back memories and looks good.
Mark Chamberlain I grew up with tamale pie too in Carlsbad NM. I’m 71. Our’s was gringo style bc we didn’t know any better then. It seems like it was ground meat, onion, garlic, tomato paste, tomato sauce, chili powder, and the topping which was made with corn meal. That’s all I can remember but today I would substitute fresh red chili sauce instead of paste and tomato sauce and do the masa harina topping and call it good. Maybe a dollop of sour cream on top!😬
Janice Scott- That sounds really good! I am a New England farm wife , but love to try new recipes. Ms. Lori has great recipe ideas. I have leftover chicken and soft corn tortillas. Think I will try rolling those full of seasoned chicken and pouring this sauce over it and serve with rice.
Love the tamale pie recipe!! I'm a fellow Texan, even though I live in Oregon now. Loved seeing Mr. Brown in his overalls. My daddy wore overalls, and hardly anything else except for church. We even buried him in a brand new pair, because we thought he would be pleased. Thanks for your great videos, I love your country ways.😊
When I lived in Knoxville, there was this little "off the beaten path" place, (I had to have someone show me how to get there). I used to go in and so many great Mexican dishes. I used to get a "full house". (Tamales in the bottom of the bowl, chili con carne over it, diced onion and chilies, and melted cheese on top. You have taken me back 35 yrs.
What a sweet couple. I love how you support the local ranchers for your beef. I spent 30 years in Houston and my neighbor used to bring me homemade tamales at least once a month.
I remember my grandmother making tamale pie. She would always put the Masa into the pan first using her hands to spread it out and push it up the sides I'm about an 8th to a quarter inch thick. Then the feeling would go in and she would top that with sliced cheese and olives. I remember her boiling the Masa mix like you would do a polenta so everything was cooked only thing you needed to do was allow everything to come up to temperature and the top of the cheese caramelized a little.
Hello i made a tamale pie. I made my topping with corn meal ,cheese ,milk (scaled milk) I also added a can of sliced black olives and a drained can of whole kernel corn to meat mixture. Spread topping on meat mix in casserole to bake Very good
I agree with you mam, there’s nothing like home cooked Mexican food. It’s a blessing to have a Mexican mom that makes you home made tortillas, tamales, caldos etc. etc. I’m very glad you appreciate our food. A very loving home.

OMG...love mexican food! I was born and raised in Houston and worked all my life in Houston...I moved south of Houston to a small town called Damon. Lived there 14 years, met my 2'nd and now husband and we retired and moved 350 miles up to N.E. TX...homesteading and raising as much of our own food as we can...I will def. be fixing this! Fabulous!
Thanks so much for just talking to us like regular people, not yelling and carrying on. Also thanks for not running silly jittery music in the background. And I’m going to make this recipe! ❤
I love hearin' your windchime in the background.... I love windchimes, just like my dad. He would make them out of stainless steel. He's gone now, but the sounds that his windchimes make live in my heart forever!
I made this for dinner last Saturday night..., it turned out fabulous..., thank you for the recipe ! I added some garlic, onion, jalapenos, and a can of rotel in with my meat.., and used my large iron skillet..., turned out so good. The masa harina really adds the "tamale" flavor to the dish - I really appreciate this recipe as it will now be in my arsenal for quick dinners....
I worked at a hospital just outside of Houston years ago and the tamale lady would come by on payday and we bought her tamales every time!! So good. I’m drooling at the memories!
The Mexicans use tripe to make menudo. It’s a brothy soup. It’s very delicious but I couldn’t eat that either now that I’m older. Homemade tortillas are the best. Thank you for taking time out to share your recipes.
It really is a delicious soup. Any fat is skimmed off during the cooking process. The tripe is very thoroughly washed an cleanest prior to cooking. With the right seasons it is one tasty soup. Fresh corn tortillas with a hint of melted butter shoot make it a an excellent meal on a cold day.
The way he looks at that tamale pie, lordddd. :D I wish my husband was as excited about food as I am, and as Mr. Brown is! I love to cook and I love to eat even more.
I was raised and live in Ga and I just love the way you cook....Thank you so much for taking the time to teach us your wonderful recipes....God bless you both.
Oh my! One of my favorites. I had been lucky to enjoy some authentic tamales made down at Four Points. Some Navajo women made them. I cannot wait to try your pie. I do prefer easy. Your husband is so sweet, and y’all are blessed to have each other all these yrs. God bless you both. 🙏♥️
Hi I came across your video while channel surfing. I remember my mom would make Tamale pies when my sibling and I were younger, it brought back fond memories. I like the way your kitchen is set up. It has homey atmosphere to it. You and your husband make a beautiful couple. I will definitely be watching more of your videos. God Bless
I'm making this again today for the fifth time and my family and I love it! Thank you so much. I enjoy watching you and your husband and listening to your stories too!
Holy Moly Miss Lauri, I lived in Houston,TX from 1949 to 1956 and visited my grandmother's home until about 1980s. Tex Mex cooking and Tamale Pie was practically my baby food. No wonder I love your shows...we're probably related
I absolutely love tamales! I have such great memories of family gatherings and making a freezer full of them twice a year... I can't wait to get the mask and to give this a try. Thank you.
Never had tamale pie or tamales. We have sourced a Mexican grocer so have bought some supplies from them - made our first tortillas and then made more and more. I have the masa, so I think I shall have a go at this. Thank you (we are in England).
So I'm sitting here going through some old papers and watching this. Sounding good, getting hungry. Lori, seriously, the very next paper I unfolded was a recipe sent to me by my (late) Aunt J in February 1988 for her "Amigo Pie". I had to stop the video for a minute to read over it, remembering the visit where she made it. Her recipe is similar to yours with the addition of 1/2 cup each sliced olives and diced onion and 1 TBSP Chile powder in with the meat mixture. The other difference was that she added 1 cup shredded sharp cheddar and 1/2 cup sliced olives to the masa/cornbread mixture and put that in the casserole dish first, then poured the meat mixture in the center of the masa mixture. Topped with an additional 1/2 cup shredded cheese and sometimes some additional olives. I recall her garnishing with a dollop of sour cream. It was so good ... as I'm sure your recipe is. So now I've definitely got to make this. Thank you not only for this lovely recipe... but the added memory of a favorite Aunt. Have a wonderful weekend. *LK*
Love this recipe. I made a double batch of masa and put half in the bottom of the pan, put the meat mix on top of it and the rest of the masa on top. Great.👍
That was how my mother made it. She may have used 2 layers of masa because it was cheaper to fill us up on the masa rather than double meat. She cooked the masa on top of the stove like polenta before layering it, then baked in the oven.
That sounds great! Do you cook the bottom layer of the masa first, then add meatcand the top layer? If so, how long do you cookbit? Or do you cook it all at once? Thank you!
Since we are secured inside, I decided to make a large batch and share with a lot of our Mexican friends to see what they thought!! I am telling you, they couldn't believe the flavors and how close it tasted to the real thing!! They could not believe that it took me an hour from start to finish, thank you for your ideas! Happy Easter to you and your family!! I have my oldest daughter looking at your sight now for ideas!! I am trying dishpan cookies today :)
Cast iron is the bomb! I cook everything in mine. This is same recipe my grandmother made. Love it! My husband loves a little more heat so I make 2 one for him one for us. Wonderful.
Bobs Red Mill is top of the line! These sound so delicious thank you! I could listen to you day and night.. your voice is so soothing and calm..I haven’t heard the words well it just depends on the weather in regards to cooking and baking for years!
yes Kathy it's true, the humidity plays a big part in how much liquid you may need, that's why you should add a little liquid at a time to your dry ingredients 🙂
Especially during high humidity or drought. Makes a big difference 😋. Have you ever used creamed corn in it? We use A LOT of green chili's and cumin in Southern Colorado. They're great in a breakfast hash too😋
I worked with a Mexican guy. We talked about food a lot. One thing he said is that Abuela's tortillas did not taste the same in the States as they did in Mexico. I asked what the fat component was in the US and he said shortening. I figured that in Mexico she used Manteca. There IS a taste difference!
There is a big taste difference and mouth feel between lard and shortening. I figured that out the hard way when I first started making tamales and tortillas. The natural fat also carries the flavor better.
Thank you for the tip on putting oil on the back of the spoon to spread the masa. I made Tamale Pie like you using the same ingredients and a castiron skillet. This tip will make it much easier to top the meat mixture.
I LOVED your video. I could not stop watching it. You make tamale pie like my Mother used to. We lived in Santa Barbara, CA. Your description of your neighborhood in Texas reminded me of mine in CA: I had homemade tortillas all my life from the neighbors that were from Guadalajara, Mexico. Mexican food is my favorite food. My Mother learned to make Chile Rellanos from Mrs. Gonzales and we had them on the holidays with our Soul Food dinners because we all were so in love with them. So thank you for the memories this afternoon here in Spain where I live now. God Bless you and your husband, you are special souls and you are blessed and highly favored it is clear. You are blessing people with your videos.
Thanks for this video. I know this method, but I love it so much, I watched your video anyway, to see if I could learn any new tricks. It is great using cornbread batter, but masa harina does make it taste more like an individual tamal. If you cover your batch with wet corn shucks and cover with a foil tent, it tastes even more like a hand rolled tamal. I love the skillet version; because I can load up on extras, as you did with the cheese. Personally, I love it with cheese, onions, chopped garlic, pepperoncini and olives. I serve it covered with chili and a spoon of sour cream, with guacamolé, chips & salza on the side. 🎄 Merry Christmas! 🎄
I just found this video...and it looks so darn good. I love homemade tamales. I can't wait to try this casserole. Even if it's hot outside, it's cool inside!
Oh my word...I made this for the first time tonight and it is SO GOOD!! I’ve made a stuffed cornbread using a similar filling but I wanted to try something different. The masa hating really does add something special. Thank you for sharing this and so many recipes! I love your channel and appreciate you and Mr. Brown.
I tried this recipe and both my husband and I loved it! We were both so happy that we had leftovers for the next night. Thank-you for the wonderful recipe.
Jabber Jawz Yes, my mother many year’s ago used cornbread mix in her tamale pie. I just wish I could remember exactly how she made it. I know she used tomato paste and chili powder. But if I made it today I would use red chili sauce! I would love a slice right now!
My mom put olives in the Mesa mix...I loved it. Sometimes she would put a can of creamed corn on either side, the hamburger mix or the Mesa mix. Talk about something so great! Thank you, as always for helping some of us remember what we grew up on and how wonderful it was!
FYI...I noticed that Costco is now carrying the Organic Chicken as well as the Organic Beef Better than Bullion in 16 oz. jars for same price that I paid for the smaller jars on line. I've stocked up on it because I use it for just about everything I cook and thought I'd share that info. Thanks for the Tamale Pie recipe Loridiane - my entire family LOVED IT!!!!
Tamale pie has always been my fave for over 50 yrs since my mom taught me. No cheese... I brown meat with onions, salt, black pepper, chili powder & add partially drained stewed tomatoes w chilis. I add a can of drained whole corn & drained black olives (each olive cut in 1/2) to the meat mixture right before I put it into the baking dish. My masa has creamed corn in it plus the juice from canned corn, salt, black pepper, baking powder & a little chili powder. Plenty of corn taste in the masa. The corn & black olives in the meat makes it sooo yum!
The very first time I tried tamale pie was when I stayed the summer with my cousin Jeryl and his wife Emma for the summer, Emma made my first Tamale 🥧 pie she added whole carnal korn and pieces of black olives and I think we mostly eat all of it. Your video brought back a lot of Great Memories and I have yet to eat it again. It really was Delicious 😋 thanks for a wonderful video
Mmmmm... i love the organic Better Than Bullion!!! I stir a teaspoon full into my veggies, then cook. Yum I like to use coconut oil, or good Irish butter ❤
Boy Miss Lori my husband was a happy guy when I made this for him. It was delicious. I love watching your videos and just good old fashioned home cooking. God bless you in the New Year!
My mother-in-law taught me to make this and its one of my husbands favorite dishes,;though I added hominy and olives and just the cornmeal topping. It’s delish😋but I’m going to try making the masa next time. Thank you for always showing us new recipes on food I grew up eating. Love , Love, Love you and Mr Brown🥰
Put your olives & whatever in the meat mixture, cheese, hominy, chilis, then masa mix on top. Cover tightly with aluminum foil to steam, or spoonfuls on top so the meat mixture steams into the masa. Then the dough cooks like a tamale then. You can also put masa on the bottom of a casserole, meat, then masa on top. This is an American dish, not a Mexican one. TexMex is different than Mexican too.
My mom cooked from scratch ever night for our family of five. I admire and appreciate your efforts to take good care of us and hade us eat healthy. We only got take out once a month.
I made this for dinner tonite and it was delicious! We never had it, so I ordered the masa harina and followed your recipe. Soooo yum! Goes in the favorite recipes box, for sure. Thank you for sharing your wonderful recipes. ❤️
That was the sweetest story ever … it’s so neat how you learn to try something different as far as food goes… Wish everyone could be like that… those are memories you get to have forever
My mother used to make tamale pie when I was a child too. I do remember her adding whole kernel corn and sliced black olives as well. It was a big hit with the whole family.
this is the 3rd time I'm making it. OMG the butter makes the topping. I added corn, peppers, onions, and a can of pinto beans to my ground beef, covered it with your masa topping, it's a winner for sure! Thanks for having a great channel Lori!
I made this for supper tonight and everyone loved it! I’ll probably leave the salt out next time. I don’t care for too much salt in my food but it’s a dish I will make more often!
Oh yeah that looked AMAZING, that is old school and to the point in the belly.. my mother would make that to feed pop's and us 4 boy's. Thanks for the memories and that is my next dish I am making. Thank you , God bless.
Hi Laurie, thanks so much for sharing this recipe, I made it for dinner tonight and WOW!!! My husband and I both loved it so much we both went back for seconds. I snapped a picture of it, but I'm not sure how to upload it onto the comments or if I even can. I've tried several of your recipes, Laurie, and we have loved them all..
I’m so glad I found you. Loved watching and listening to you. I am going to try this. My boy is coming home for Christmas, he’s a Marine. I’ll make it for him and I know he’ll love it! We live in Houston, just outside of Houston and you’re right, there’s nothing like Tex-Mex and Mexican food! ❤️ Thank you for sharing your recipe.
Oh my word! I just made this but with chicken and instead of tomatoes I used cooking cream and it is to die for! The cornmeal real shines through with flavor!
My late husband's also Mexican from Jalisco. And I still make tamales every Christmas and sometimes just because and I've been making my own tamale pie for years so I'm going to check her out God bless you
This sounds so good, I'm making it tonight for dinner. I LOVED when my husband came home from work and would get excited about what I was making for dinner. Thanks for sharing!!!
I love that you love that you care what your husband wants for dinner. Thank you for not being afraid to be happy that you make dinner for your husband. I mean that. I make dinner for my wife and when she's stoked about what I'm making, there's is nothing like it. Feeding people you love is spiritual.
@@JoeBlow_4 You both are talking of what love is all about. It's beautifully said by both of you. You love your spouses and love doing things they find joy and delight in. A tasty, satisfying meal is loved by those eating it and it's reciprocated back to the maker of it.... and so goes the circle in loving and treating each other to special things and moments in time. That's Love.
@@ginnywithag5046 I'd forgotten I wrote that but feeding people you love is extra special. The person actually consumes what you made. That might seem like a small thing but it isn't. ;)
@@JoeBlow_4 I agree with you fully. It is not a small thing. It's highly significant and memories associated with food, particularly recipes stay with us and can last a lifetime. Lori talks about comfort food. I believe that we have many, but we all have our No.1 Comfort Food. Mine is a common poor family's supper. It is immensely associated with my Grandparents. My Granny's Beans and Cornbread with Chow Chow. They were rural country folk from Tennessee. Nothing bringing up the comfort, knowing how much love they had for you and just nostalgia more than this meal for me.
You can use a piping bag (pastry bag) to cover the top. much easier to get it on evenly. A quart or gallon sandwich bag works great if you don't have a piping bag. just cut off one corner.
This was really great...but an accidental thing we found out was that if you freeze it and then reheat in the oven covered with foil...the masa gets more of that tamale moist moist texture instead of fresh out of the oven cornbread. You were talking about how to get more of that tamale masa texture on top and that's one way to get it. Turn it into a freezer meal.
(@ 3:16) Has anyone else ever noticed how when you 1st add a liquid to a scalding hot skillet it sounds like an audience applause? I love it. Frying bacon often sounds like rain. I've been looking for a good Tamale Pie recipe. Looks like I've found it. My Mom made this for us when we were growing up. Thank you for sharing!
Lori, I made this for dinner tonight and wanted to let you know my crew loved it! They told me I have to make it regularly now. Thank you for sharing it.
This is something my grandson can actually eat! He's allergic to a lot of foods and I'm always on the lookout for new recipes for him and his Mom. I only have to modify it slightly (no dairy). I'll have to use the lard instead of butter.

You remind me so much of my father’s family. The way you express yourself. Very grounded, kind and truthful. I made this tamale pie, delicious.

My grams recipe was like your Aunt Js recipe! She was from the Texas Panhandle. 😉 I think I'm going to make some with cheese n jalapeno chilies!! Mmm
Thank you!
....the wind chimes though 🎶... so nostalgic & reminiscent of Great Grandma's back porch.
Yes, she has an easy going soothing voice. Going to try the tamale pie for my husband.
They're great in a breakfast hash too😋
They're cute😄 and she's so thorough in explaining her technique! Thank you
Thank you Miss Lori. I have made this a go to recipe over the last year . Pork, chicken, beef. No matter what the meat this is a delicious meal.
This man is handsome and charming. His wife is sweet and I bet her food is amazing.
Absolutely huge difference they sell pork Manteca in various grocery stores
Oh gosh, you give me some ideas!
And I wondered about the corn husk?
Thank you
Merry Christmas
I wish I had videos like this from my Mom, aunts, and grandma. it would help carry on traditions and the foods that just celebrate the family.
Brown.
Using masa flour is just plain inspired! Most recipes use cornbread, but this is so much closer to a 'tamale' pie! Love it.
I tried this recipe and both my husband and I loved it! We were both so happy that we had leftovers for the next night. Thank-you for the wonderful recipe.
I made this for the first time a couple months ago. Its now a favorite in our household. I make up cornbread mix instead of the masa. Deee-licious!
Yumminess! Xoxoxo
Jabber Jawz Yes, my mother many year’s ago used cornbread mix in her tamale pie. I just wish I could remember exactly how she made it. I know she used tomato paste and chili powder. But if I made it today I would use red chili sauce! I would love a slice right now!
350 everyone, 30 minuets to golden brown...THIS STUFF IS AWESOME, two weeks in a row I'm making it on Sunday...so special. Thank you Lori.
Can’t wait to try this! We just made homemade pork tamales yesterday. The entire family around the table and lots of laughs. Nothing better ♥️
Oh yes, fun! And oh so good! Merry Christmas!
Thank you Lori, for showing your talent and family!
Bless you! Love your kitchen!
GOTTO make this recipe!
My father, who was from Kentucky, made the best tamale pie! I am happy to see the Masa being used instead of cornmeal. Thank you!
I was just wondering if you have your dad’s recipe? Thanks
Now that’s one happy man❤️Looks delicious, I’m going to have to make some. Thanks so much for the recipe. God bless both of you ✝️🙏❤️
Looking good. You and Mr Brown are so cute! Me and my "Mr. Brown" will be celebrating 28 years in a few weeks. Blessings.
I grew up on the north side of Pasadena, known as “Little Mexico”. Love homemade tamales! So much better than what you get in a restaurant!
Texas or California?
I'm in Pasadena, TX now. I lived in N Pasadena for 10 years. Currently in Golden Acres.
Thank you Jim!
Oh my Goodness I was so excited to see this recipe My Grandmother in Knoxville made this frequently brings back so many good memories Thank You
Mmmmm... i love the organic Better Than Bullion!!!
I stir a teaspoon full into my veggies, then cook. Yum
I like to use coconut oil, or good Irish butter ❤
Boy Miss Lori my husband was a happy guy when I made this for him. It was delicious. I love watching your videos and just good old fashioned home cooking. God bless you in the New Year!
Y’all are so cute! Your kitchen is so cute! Your personality is adorable. God bless you! Can’t wait to make this for my husband.
Yes my mouth watering 🥰 I enjoy listening to your story of growing up to
Tried this recipe and is was amazing. My family really enjoyed it!
We only got take out once a month.
i love to take leftover tamales and fry them in butter. get the masa nice and crispy.
that does sound good
Fried tamales with queso blanca, m-m-m !!!
I could eat fried masa and be as happy as a pig in a corn bin 😂
So delicious 😋
@@glendawoodward8750 😆
I made this for dinner tonite and it was delicious! We never had it, so I ordered the masa harina and followed your recipe. Soooo yum! Goes in the favorite recipes box, for sure. Thank you for sharing your wonderful recipes. ❤️
That makes me so happy! Xoxoxo
That was the sweetest story ever … it’s so neat how you learn to try something different as far as food goes… Wish everyone could be like that… those are memories you get to have forever
Love your pantry and cabin. I’ve used some of the same ideas. I love the rustic and homey atmosphere that y’all have!
My mother used to make tamale pie when I was a child too. I do remember her adding whole kernel corn and sliced black olives as well. It was a big hit with the whole family.
I have seen that option in mexican tamales
We love Tamale Pie and tamales
Oh yes! Gotta have the whole kernel corn and the sliced black olives! Yum!!
this is the 3rd time I'm making it.
Thank you Paul,
We love this dish!
Merry Christmas!
J’adore vos recettes. Oh la la! Elles sont délicieuses. Merci madame et mister Brown.
That makes my heart so happy!
Merry Christmas!
God Bless,xoxoxo
We're having a double recipe tonight...our third round, this time for company!
Hello DebraHow are you doing today?
Oh my word! I just made this but with chicken and instead of tomatoes I used cooking cream and it is to die for! The cornmeal real shines through with flavor!
Oh good! Xoxoxo
Thanks so much for this beautiful recipe! My husband is Mexican & agrees: Tamales are an act of love, haha! We're trying this recipe tonight.....YUM 🥘
I have to try this, thank you for sharing. You and your husband are adorable. God bless.
Watching from Riyadh! Thank you so much. So cute how he says he wants more.
(@ 3:16) Has anyone else ever noticed how when you
1st add a liquid to a scalding hot skillet it sounds like an audience applause? I love it. Frying bacon often sounds like rain.
I've been looking for a good Tamale Pie recipe. Looks like I've found it. My Mom made this for us when we were growing up. Thank you for sharing!
Thank you! Xoxoxo
Been LOVING watching your videos and trying your recipes! This tamale pie WILL happen within the next couple of weeks in my house!!
Hello Leslie
How are you doing doing today/
Lori, I made this for dinner tonight and wanted to let you know my crew loved it! They told me I have to make it regularly now. Thank you for sharing it.
Im gonna make this for my New Year's Eve dinner tonight! Im going to double the recipe. Thanks & y'all have a Happy & Safe New Year!
You'll love it! Happy New Year!
This is something my grandson can actually eat! He's allergic to a lot of foods and I'm always on the lookout for new recipes for him and his Mom. I only have to modify it slightly (no dairy). I'll have to use the lard instead of butter.
One of my grandsons has allergies too, this is great, something that I can make that he can eat too
