    So I actually learned how to make tamales by watching this.. everybody in my house didn't think I could do it but I did and they loved them. It took me hours to do them but worth it.

      I made tamales for the first time and followed her recipe and my family loved them❤ I do have a question those about the pyramid is that when you put them in the cooker you place them in a pyramid or when we are preparing them ?

    We were so poor in the 50s if it weren't for tamales we wouldn't have had nothing to unwrap, no kidding. You cook them just like grandma. She also made sweet tamales. Blessings

    Okay let me just say that since I got married I have cooked only your recipes and every time on my first try it comes out PERFECT! I finally tried to make your tamales de puerco and the rajas one and OMG they were so good , I shared with my family since it came out too many but they all loved it! I can’t believe they came out perfect on my first try !

    After watching loads of your videos, I made these tamales last night with a few changes on my part (chicken instead of pork, red sauce using California chili powder, etc.), and omg...they were the absolute best tamales I've ever made in my life! I learned years ago from an ex MIL how to make them and I've actually been doing it for a lot of years (with hits and misses, lol), but the way you do it is just a little different such as...mixing a cup of the sauce in with the broth for the masa and mixing one cup at a time, whipping the lard and adding the baking soda, and the biggest one of all for me was lining the bottom and top with a layer of husks- omg Claudia, no leaks from anything and they looked exactly like they did when I put them in except they were cooked, lol! Your mom and grandma taught you well, you are amazing at what you do and I love your channel :)

    Hi Claudia, I wanted to thank you for these amazing tamales! A year ago, on Christmas Eve, my dad got sick and died a few days later. Needless to say, this first Christmas without him was going to be really difficult for us. I lived in the California Central Valley for several years and had a bunch of friends who would make tamales for Christmastime, so we decided to start a new Christmas tradition with our family. I used your recipe and they were incredible! Our whole family was able to enjoy them and for some reason, good food always seems to help make difficult times a little less difficult. I made tamales for my family and they all loved these pork tamales the sauce is an amazing taste and when tamales were ready I tried one before serving and the tamal tasted so goood the sauce was very good.     Thanks so much! My daughter and I made the bean and cheese ones this morning and now are preparing to make your pork ones! I broke it up into smaller tasks (made the pork filling and broth a couple of weeks ago and froze it, then made the Bean filling a day ago) hoping all goes well and we have a yummy dinner tonight and some to give away.

    Your recipe is as close to my Grandma's that I've ever seen, except she used less meat and she didn't use maseca. She always bought masa fresh from the molinero. Two things she always said (and I can tell yours would pass the first) #1, you should be able to see light through the masa after you spread it on the hoja, and #2, no one was allowed to gossip at her tamalada, or she said the tamales wouldn't turn out good! Thanks Claudia for another amazing dish!

    Thanks for your recipe. I made them for the first time ever for Christmas today and although my technique needs to be worked on they were delish! The pork filling is the best! I may have went less on the sauce but it was soo tasty! I used some of the meat for tostadas and oh my !! Winner winner! Thank you my hubby loves me even more 😘 ❤ 😆

    I like the amount of filling you put inside. If there is one thing I don’t like about tamales, it’s when it’s almost all massa and no filling! They look great.

    These are pretty good! I’ve made them 3+ times and they’re a hit every time. Here are some things I’ve changed after making them the first time:
    1. Add WAYYY less whole cumin. It’s so strong and overpowering. I would start off with 1/2 tsp. (I only use 1/2 tsp)
    2. I add 1 Large Roma Tomato to the sauce.
    3. I add Chiles Japoneses to the sauce to make it a little spicy. I usually add 8+ Chiles, but start with less just incase.
    4. I recommend 5 garlic cloves instead of 7, it’s really strong, but really… add a few at a time and taste! If you need more just blend more.
    I’m not picky, but the first time I made these tamales I added all of the cumin and was not a fan of it. It was super strong. I had to adjust all the ingredients.

    Hispanic Energy bars. I’m a Weto but grew up in a Hispanic neighborhood. Love me some tamales. The Puerto Rican mom made her version that was sweeter and used banana leaves.

    Tamales freeze and keep well vac sealed and frozen if you make a bunch at once. Freeze them inside the husks. Just put the frozen bag in simmering water till warmed all the way through. I took these to elk camp and did them this way. Was awesome!

      Keep trying. You'll get better. It used to take me forever to make flour tortillas, now I make them in a snap. You get more and more comfrtable and learn shortcuts and how to prep in advance

    Thank you for another amazing recipe. My sister, nieces, kiddos and myself are going to attempt to do this recipe this weekend🥺. Lol hopefully none of us lose a finger, lose a bandaid, or end up in the hospital.       Came out so delicious!!!! I made more than 5lbs of pork so I made a bit more masa, more peppers, more baking powder, tomatillos, garlics, broth etc but the tip she gave was truly helpful….to make sure it floats. I had to add quite a bit of extra lard, broth and etc masa ingredients because I needed more masa for my extra pork that I made. I also made some with some refried beans. Came out super delicious, hope you all enjoy. Thank you , Claudia! Happy New Year to All. ❤️ it was the first time that I did it all by myself. With the step by step instructions, it was not intimidating at all. Helpful tip* cover your masa up to the point where you’re grabbing it from so it doesn’t dry out. I covered mine in Saran Wrap and then a towel and would just unfold it as I went along to spoon it out.

    I just made these today! My masa did float and I was so happy! Unfortunately I didn’t use enough of it. It was basically meat wrapped up in corn husk 😢😂
