White older gentleman from Kansas here. I made these in my 8 qt. instapot yesterday, and will make another batch today. I added my homeade pickled red onions to the jalapeno and pepperjack filling, with green chile salsa that i made. The masa I made for some reason was light as whipped cream, it spread so easily, and I always add a cup of green chile salsa to the masa. I really appreciate the parchment paper tip, my instapot was absolutely clean after cooking these 45 minutes. Anyway, these were the absolute best tamales I have ever had, I ate 4 but i could have eaten 15. Absolutely the most moist and flavorful. I'll be adding chile rellenos, pinto beans from the instapot, and fidio sopa for friends today. Thank you so much for the video. P.S. The pickled red onions are a gamechanger.

Try Munster I notice that here in Az they use this cheese in Burritos and tried it in green chili and cheese tamales delicious and use it in chili rellanos melts better 😋
Question! The jalapeños that you put inside of the tamale do you boil them first or you just cut them up and they cook when they boil with the cheese??

I have never made tamales of any kind, but between your video and "Cocina Identidad" Tamales de Rajas Con Queso y Salsa Verde video, I am going to give it a try. Cocina Identidad only uses pasilla chilies (no jalapeños) which I like, but he didn't use any garlic or cumin in the green sauce . I also like the ideas of having extra sauce to serve as garnish, with some sour cream. i love tamales with rajas and cheese, but when I buy them from street venders they are sometimes too spicy because of the jalapeño.

Soak in hot water. Needs to be dry later to use. Put masa on soft side.

Great recipe. I'm making some puerco de salsa roja and these jalapeno with salsa verde. Is it ok to put both in the same pot?
Or can I put them all together in the pot but take the jalapeño ones out once cooked then continue cooking the puerco tamales?

Yes you can add them together in the same pot cooking time cheese you can check them in 45 minutes and pork 1 hour or 1 hour 15 minutes

Those are not Pasilla chiles, unless they are dried. Fresh ones like that are called poblanos.
In Northern Mexico, some parts of United States, Canada the poblano is also known as fresh pasilla. Thank you for comment God bless you.
