I have a question about oxalates. I've tried asking doctors (ie: Greger) about them numerous times but never got a response. Two years ago, a tumor was found hanging off the end of one of my kidneys. It was a basal cell carcinoma, and about 20% of that kidney was removed. It was only stage 2 and was contained. My kidney function has always been and remains perfect. I want to keep it that way, so I'm a bit freaked out about oxalates. Dr. Greger - among other doctors - has talked about oxalates and cautions not to eat too many. However, they also tout the wonders of greens (which often have loads of oxalates. I like spinach and would slip it in dishes like the one in this video but then I worry about oxalates. It's hard when you're not a medical person and you're trying your best to do everything right! Do you have any thoughts on this? (Does cabbage have oxalates? I love cabbage).
Per Dr. Brooke Goldner, she states that oxalates should not be problem as long as your are not eating animal products and are well hydrated. I highly recommend you check her you tube channel. I did her protocol for a few months and I was eating 2 pounds of spinach, kale, chard etc. a day and had no problem. I was also drinking a ton of water and course no animal products. She is an expert and she does a live on IG, Facebook and you tube every Wednesday at noon and you can ask her questions during her live broadcast. It's really cool. If you follow her then you will get a notified when she goes live.
This is very good. I swapped out collard greens for the kale & airfield tempeh for the chickpeas. Served it with my sweet potatoes fries in place if the yellow potato & topped it with my Rosemary Cahew Cream. Yummy!😊

This is what I call my refrigerator meal. Whatever I need to get rid of goes in my pan and I usually add a can of no salt fire roasted tomatoes.

Tomato paste has such a rich flavor. I often squeeze a little of it on top of my salad.
