    I just made my sheet pan veggies, WOW, I had stopped making them because without any oil they always came out so dried up. But NOW, I put on the lemon juice and balsamic, onion and garlic powder and dried Italian herbs. I’m in heaven. I put more lemon juice on when I pulled them out. Soft, juicy, flavorful, delicious. Who knew lemon on roasted veggies? Thanks guys

    But why peel the aubergine - especially for a low-hassle recipe? I've never seen that done in Europe. In countries like France and Italy where they are a staple, they are always used with the skin on.

    No need to peel off the skin from the eggplant -- you won't even notice it's there when eating except it adds nice color!

    Dillon I have a question, why are you always eating food so hot? I never knew you could cook with radishes putting them in the oven and such. Good idea 💡 Tfs 😊

    Sheet pans are my jam, I’m not a good cook so, one pot or one pan, I’m there. Also I never eat eggplant because that skin is tough!!!! I never knew that you can peel those suckers 😳😳
    Radishes never eat them, but I’ll give them a sheet pan test 😎🥸🤓

    Have to love a simple sheet pan recipe! I recently discovered that you can eat the radish leaves as well. Just wash and chop and sauté up like any other greens.

      I used to do that with Daikon radish tops, saute with onions, yum. These days, it's hard to find vegis that aren't field trimmed. Can't blame the farmers for trying to make money selling the greens to feed cows, etc, but makes me a little mad... grrr. Guess it's more reason to grow your own.

    I made this last week. It's delicious! It was so much food that I froze half of it. I'll let you know how it fares after defrosting. Served mine with quinoa.
    I think my oven is too hot, though. I moved and need to test it more. The parchment paper came out looking sort of burned. Maybe the 400 degree setting in my oven is really 435 or so?

    I have never made a sheet pan meal before! You have inspired me to try one out! I was thinking could a person add chickpeas to that mix and roast it all together? The mixture you made looked very colorful! Do you make different variations of that sheet pan meal? For example i do not have an eggplant currently on hand. I do however have a zucchini. I was thinking zucchini,carrots,asparagus,red onion,yellow bell pepper&chickpeas?

    Is the eggplant (aubergine)you used about a pound? I’m asking cause I don’t want to make too much as not sure if my husband will like it and I don’t want to eat it forever or freeze it! Thinking to half the recipe.
