HEALTHY VEGAN MEALS UNDER 500 CALORIES/HIGH PROTEIN

- In this video I share 2 healthy vegan meals under 500 calories, high protein, gluten free, weight loss and budget friendly. Full recipe below
TVP TACOS
1 cup TVP
1 cup water
1/4 cup fine diced onion
1/4 cup fine diced carrot
1 package taco seasoning
corn tortillas
lettuce
hot sauce or salsa
any other toppings of your choice
Add TVP to a bowl and add water and mix well and set aside for 10 minutes.
Next saute onions and carrots in a non stick pan on medium heat for 3-4 minutes. Next drain any excess water from the TVP and then add to the pan. Let cook for a few minutes stirring often.
Next add taco seasoning and 1/2 to 2/3 cup water depending on how saucy you want it. Turn heat down and simmer for 3 to 5 minutes.
Warm corn tortillas in microwave for 30 seconds or so until pliable. Add 2 Tablespoons of filling to each tortilla and top with favorite toppings.
Makes 6 tacos or 2 servings. Calories for 3 tacos 400 calories 28g protein.
SOY FREE TOFU
1 cup washed and dried red lentils
3 cups boiling water
3/4 tsp salt
To season tofu:
salt, onion powder, garlic powder, smoked paprika and nutritional yeast.
Start by soaking lentils in boiling water for 20 to 30 minutes.
Next add the lentils and the soaking water to a high speed blender and blend till smooth.
Next pour mixture into a pan. On medium heat start stirring mixture constantly. When it comes to a boil turn heat down and simmer and continue stirring until it becomes very thick and starts to pull away from the sides of the pan. Immediately pour into a glass 8 x 8 pan and smooth out and put the fridge for 3 to 4 hours.
Once set. flip dish over onto a cutting board and cube it up. Add cubes to a bowl and season to taste with salt, onion powder, garlic powder, smoked paprika and nutritional yeast. Then toss to coat all the pieces. Place on a lined baking dish and either air fry @400 for 20 minutes or bake in oven @ 400 degrees for 30 to 35 minutes. minutes flipping 1/2 way through.
Serve with veggies, rice and top with your favorite sauce.
Serves 3, Calories per serving with 2 cups veggies and 1/2 cup rice is 428 calories and 23 grams protein.

Lentils! Thank you so much. I’m one who is sensitive to soy, if I eat too much my skin gets really angry so I’ll be trying to make your recipe. Tempeh doesn’t affect me as much, probably because it’s fermented. Those tacos look so tasty, I’d eat them now if I had them and it’s not even 7 AM

I love TVP and soy curls but they don’t love me back, gassy+++. But I experimented with rinsing the tvp with water and draining well, then soaking and rinsing again and draining well again. After cooking them with finely chopped onions, carrots and mushrooms and spices, voila, very little gassy outcome. I’m going to try it with soy curls too, Anyway, hopefully this tip is a help to anyone else out there who struggles with excessive gas after eating TVP.

Don’t forget to try the Plant Boss brand! I get the southwest taco flavor. I make into into a taco salad and top with Plantiful Kiki’s BBQ ranch dressing. I am not usually a fan of soy, but I do make it with soy milk and I love it!
I did check it out. But it was almost $7 for a 3.35 oz package. I can get Bob red mills TVP for 3.99 for 12 ounces. I don't mid adding my own spice blends. I do love Plantiful Kiki's Ranch and BBQ ranch too! Thanks for for watching and for your comment💚

I remember making the lentil tofu years ago when I first went WFPB and hated it. It was the texture but am willing to give it another go as our pallets do change. I didnt realise the TVP is the same as soy curls. We can get them here in the UK and I will also give them a go. Thanks Debbie
You are welcome! The lentil tofu does have a different texture than regular tofu but I like them both. Soy curls are great to throw into soups and a stir fry. Hope you enjoy the recipes💚

I have found that getting plenty of fiber and not overeating keeps soy from upsetting my stomach. A 5 ounce portion is my limit. Yours may be different. The calorie to protein ratio - and the price- of actual tofu really can't be beat by alternative tofus.
I have no problem eating soy and yes it is true that tofu is cheaper then the store bought soy subs and has higher protein . That's why I love using the lentils. so cheap. I also wanted to give people an alternative to soy. I'm glad you found a way to enjoy soy it is my favorite. Thank you so much for sharing💚

Hi Debi! What do you like to add to an opened can of beans? I would like to keep beans in the fridge, but sometimes they get too dry. And then like spices. And I don’t like beans that are too sweet. All suggestions appreciate it. PS - I’m trying to add more beans as an easy side to keep in the fridge.
If leftover beans get a bit dry in the fridge I either add a bit of water and some garlic powder and onion powder and heat them for 45 seconds or so in the microwave. You can also add a bit of salsa or plant based cheese sauce.
I need to make TVP tacos. I always have it in my pantry but don't use it often. Besides tofu, whatbelse do you pair with stiry fry veggies and rice? Ive been using chickpeas but half the time, I forget to add them in.
I love to add soy curls to my stir fry and soups.

You are so welcome. As far a the calories for red lentils compared to tofu, 100 grams of red lentils is 323 calories and 9 grams of protein where as 100 grams of tofu is 83 calories and 10 grams of protein. Hope that answers your question.

What taco shells do you use?
I use corn tortillas. No particular brand. You can heat them in the microwave or on the stove burner flipping until they get a bit crispy. I don't buy the store bought shells to much oil
