This is one of my faves too and especially my husband who was born and raised in Greece. I make it often. The only thing different that I do is put the potatoes in a bowl so that every potato gets coated then pour the sauce over the chicken. Oh and try putting mustard in the oil. It's amazing.

My first personalizing of this recipe would be to put the two chicken halves in a bowl and rub it down with the oil n herbs, then only after a really good coating, place them in the roasting pan, drizzle with remainder of oil herb mix, then salt n pepper

All that oil will have you running to the Restroom. Haha. I hate it. I tried cooking Chicken in the oven and never have again.! Its just too oily and Just not for me. I like rostissaire chicken... youll have tender chicken without all that nasty OIL!
Olive oil is one of the heathiest oils for the heart. This recipe works great with large chickens over 4 lbs, not fryers or leg quarters because the meat from a small chicken or legs is not suitable for this recipe. It will come out too oily.

Looks good. If one does not have any fresh lemons on hand but instead has a jar of preserved lemons, could one use that as a substitute?

You could cut stripes in the Chicken so that the marinade could go through it.
Thanks for sharing. Some advice don’t cut the chicken while it’s piping hot. Let it rest for 5 to 10 minutes so you don’t lose all the juice.
