I think you should add a bit less than 4 cups of liquid because liquid evaporates less when cooking with the Instant Pot. I do hope it turns out, and if you are feeding a crowd, I hope they enjoy it!

Your method works perfectly!! Do you know if this recipe is scalable? If I want to make 2x the quantity, do I need 2x the water mixture in the Instant Pot?

If you double the glutinous rice and the jasmine rice, I would double the liquid to about 4 cups. You might need to add more sauce as well to get the same umami taste! I hope it turns out for you! This recipe is totally worth it to double because it's always a crowd-pleaser.

Thank you for the recipe! I have found that if you want to double it, it is best if you do the sautéing in a separate pan. Once mixed add everything to the IP and add the rice, sauce, and liquids. Works great!

That’s a good question. I usually just use the rice button low pressure for rice as it works and the cook time is not that long. If you do try using high pressure with shorter cook time, let me know how it turns out!

So if it is being used as a side dish for a big gathering, I would consider doubling the recipe.
No that is not normal. Make sure your Instant Pot liner is super clean before you start. When you sauté the ingredients, make sure to stir the bottom constantly so that nothing burns and sticks to the bottom. Thanks for your comment and for trying my recipe. Really appreciate it!
This happens to some types of the instant pots. Try this: when you add the rice, keep it at the top, don't stir. It works very well too, you can stir when it's done.
Hi! I tried your recipe & technique & the rice turned out really soft & bouncy, but I noticed with my IP “rice” setting, even though it said 15min, it took over 45 minutes to start another count down of 21mins. Also there was a thick layer of burnt seasoning (from the sauce) & rice at the bottom. That was not the case when I closed the lid to cook. What am I doing wrong?
Thanks for trying my recipe. For my Instant Pot, the rice setting is 20 minutes, and it takes about 10-15 minutes for it to reach high pressure. I am not sure why your IP took 45 minutes. Perhaps try setting your IP to 20 minutes manually and see if that makes a difference. As for the burnt sauce and rice on the bottom, make sure you start with a very clean pot, and mix the sauce with the rice so that it coats the rice. Also ensure there are no burnt bits on the bottom by stirring well before closing the lid. I hope this helps!

Hi, I followed on your recipe and method both times, and my instant pot showed BURN FOOD on the LED panel. 1st time I thought I was cooking it 3 min longer thar caused it to burned. Today, I followed your 12 min, still the pot showed food burn on the screen with 5% rice uncooked. And you didn't showed in your video on the pot of rice. Did your pot has burnt bottom too?

Hi, I would just omit the dried shrimp if you don't have any. Fish sauce does not have the same taste as dried shrimp, do not add fish sauce. Thanks

Thank you for your comments. Someone else told me that it was too wet as well. I will need to update the recipe, and add about 1/2 cup less water.

The cooking time should be approximately the same using the rice button.

perhaps there was some rice stuck to the bottom. make sure you stir and mix the liquid in well
