How to Use Rice Cooker to Make Fragrant Glutinous Rice 腊味糯米饭 Fried Rice • Instant Pot

  • It's really easy to cook this Stir Fried Chinese Glutinous Rice with Chinese Sausage & Mushrooms. All you need to do is soak the glutinous rice beforehand for about 2 hours, then stir fry the ingredients in your multi cooker / instant pot or rice cooker and just set it to cook like normal rice. If you've never cooked before, I would highly recommend you to try making this dish to boost your confidence. Your loved ones will love this dish. Happy cooking!!

    Rice Cooker Glutinous Rice! 腊味糯米饭
    Ingredients:
    Serves 3 - 4 pax
    -------
    30g dried shrimp (soak in 250ml water for 25 mins - reuse this water as part of the water to cook your rice to make your dish more fragrant)
    6 dried Shitake mushrooms (rehydrated and diced)
    80g Chinese sausage (remove the casing by soaking them in hot water for a min then cut the sausage into half to peel the casing off. Dice into smaller pieces)
    310g glutinous rice (soaked for 2 hours)
    1.5 tablespoons oyster sauce
    1.5 tablespoons premium dark soy sauce
    A few dashes of grounded white pepper
    310g water (part of this water can be the water used to soak your dried shrimp)

      Funny, my neighbour is obsessed with making rice WITHOUT a rice cooker, and here we are making non rice in a rice cooker. hahaha
      I am of Asian descent, and I am always telling her that 99% of Asians just use a rice cooker now...
      edit: by, "non-rice," I mean, "pure, white rice."

    Wow, looks delicious! I made it in the instant pot from another recipe a few times. The ingredients were the same except for the addition of marinated sliced chicken. That recipe called for layering the ingredients in a metal bowl and placing it on a rack over water. The results were amazing but the process was more laborious (with the layering). Your method looks a lot simpler. I was wondering whether the cooking could be done directly in the Instant Pot, and you have answered my question. Thank you so much, Roland!

It has some peanuts too and goes with hard boiled red coloured eggs on some auspicious occasions.     Wow master chef, thank you for this! I’ve been doing a method that takes much more time. I cook the rice in cooker with all the sauces. Then cook mushroom, shrimp, sausage and pork meat in a pan, combining all when rice is done cooking. This cuts down the time in half! Thank you 🙏

    Looks delicious! I'm going to try this in my Instant Pot. For the Rice function, it defaulted to 12 min on your cooker. Is that the actual time for cooking or do you need to set it differently?

      Hi Carson, dried shrimp gives this dish a very nice fragrance. You can omit them but the end result might be different. We can't think of a good substitute for dried shrimp unfortunately. So sorry we can't help much.

    If we wanted to make it vegetarian, would we simply omit the shrimp and sausage? Do you recommend adding any other vegetables or seasoning?

      You could replace them with other veggies that you like, or you can use some vegan sausages / fake chicken with it, that's what I'm gonna do ;-)

    What kind of Chinese sausage? Lupchong? And can the rice be other types? Like regular grain or jasmine? Also, I noticed, no salt.

      The Chinese sausage is lupchong. In the video, the Oyster sauce was used in this recipe and probably salty enough that you don’t need to add salt.

      Hi LS. They shouldn’t differ. You can fry up the ingredients in a normal wok first then transfer to your rice cooker to cook. Hope this helps. Happy cooking!

    Glutinous Rice like Chung Je : Chicken Drumstick (cut to bite size), braise dong bo rou, red chinese sausage, shitake mushroom (slices or bite size), yellow salted yoke and small yellow beans best. Dry shrimps not my favour though

      You can use any sausage that you like but Chinese sausage actually imparts a unique umami taste to the dish.
