INSTANT POT MASHED POTATOES
Blessings friends and welcome back to my kitchen. Today I’m going to show you how to make creamy and delicious mashed potatoes using your Instant Pot . This traditional potato side dish goes so well with so many things such as roast turkey , roast beef or chicken . Pretty much any large gathering or feast could use some mashed potatoes! BUT Instant Pot mashed potatoes can also be made any day of the week because it is so easy to make. So let’s get started!
INGREDIENTS:
6 medium yellow potatoes
1 cup cold water
pinch of salt
4 tablespoons butter
1/4 cup milk
salt and pepper to taste
Garnish with chopped chives or green onions if desired
METHOD:
1. Wash and peel the potatoes. Place the peeled potatoes in a bowl of cold water to remove excess starch and to keep the potatoes from turning brown.
2. Cut the potatoes into 1.5 inch pieces. That is like cutting each potato into 12 equal pieces.
3. Place the cut potatoes into the Instant Pot with 1 cup of cold water and a pinch of salt.
4. Set the Instant Pot on high pressure for 6 minutes. When the Instant Pot is done, let it naturally release for 15 minutes. Release the rest of the steam by turning the Steam Release Knob to venting. Open the Instant Pot and drain the potatoes in a strainer. Return the potatoes to the Instant Pot.
5. Add 3 of the 4 tablespoons of butter and the 1/4 cup of milk to the potatoes.
6. Using a hand mixer, whip the potatoes with the milk and butter until creamy and smooth, about 30-45 seconds.
7. Spoon the mashed potatoes into a serving bowl, and garnish with the last tablespoon of butter placed on top, and sprinkle with chopped green onions or chives, if desired.

      I would only use lard specifically for baking such as Tenderflake.

    Thank you for this fantastic recipe! I’m trying it right now and so far, it looking great. By any chance , would you happen to know a recipe for sesame balls? I think they are made with red beans… but not sure.

      You're welcome! I hope the cookies turned out well for you. I have not tried making sesame balls before. I think they are made out of glutinous rice flour that is deep-fried. The filling is usually red bean paste, but sometimes it is lotus paste. I hope you find a recipe for them.

    I tried your recipe, but the sticky rice came out a bit too wet for me, still edible, it is more like the texture of Jung. I think I might need to adjust the amount of water. It is tasty though. Thanks!

      Thank you for your comments. Someone else told me that it was too wet as well. I will need to update the recipe, and add about 1/2 cup less water.

      I think fish sauce would be a nice addition to this dish. I personally like to top this dish with a little drizzle of sesame oil.

      Yes, you can put chicken drumsticks in at 35 minutes. The chicken will blend in well, and will add protein to the dish.

    Thank you for the recipe! I have found that if you want to double it, it is best if you do the sautéing in a separate pan. Once mixed add everything to the IP and add the rice, sauce, and liquids. Works great!

      Yes, vegetable broth is fine. It will add flavour and enrich the soup, but won't change the flavour too much.

      Hello, thank you for your comment, it made my day! I'm glad you like the recipe. I have often thought of doubling this recipe too, but I have not actually tired. I think you should add a bit less than 4 cups of liquid because liquid evaporates less when cooking with the Instant Pot. I do hope it turns out, and if you are feeding a crowd, I hope they enjoy it!

    Just made your recipie. I did use less water as i like it more like porridge than soup. But it came out amazing. Never thought of using ginger. It is delicious. Thank you.

    What an interesting recipe, Francine. I'm sure the lard will make the cookies very flaky! This is the recipe I've been looking for - thank you. I will probably scale it up as I have lots of kids to feed. I remember as a kid, my parents used to order Chinese after we went to bed. In the morning, I would be the first up to get the almond cookie in the wax paper bag!

      I have never tired making congee with short grain rice before. If you do, you might have to adjust the cooking time and water. It's worth trying! Let me know how it goes!

    Hi! I tried your recipe & technique & the rice turned out really soft & bouncy, but I noticed with my IP “rice” setting, even though it said 15min, it took over 45 minutes to start another count down of 21mins. Also there was a thick layer of burnt seasoning (from the sauce) & rice at the bottom. That was not the case when I closed the lid to cook. What am I doing wrong?

      Thanks for trying my recipe. For my Instant Pot, the rice setting is 20 minutes, and it takes about 10-15 minutes for it to reach high pressure. I am not sure why your IP took 45 minutes. Perhaps try setting your IP to 20 minutes manually and see if that makes a difference. As for the burnt sauce and rice on the bottom, make sure you start with a very clean pot, and mix the sauce with the rice so that it coats the rice. Also ensure there are no burnt bits on the bottom by stirring well before closing the lid. I hope this helps!

    Hi Francine, thank you for sharing your recipe. However, your voice is too soft. You have to speak louder. After making a video, don't you check the audio? If you had done this, you would have known to correct the audio. I already have it on 100% volume, still your voice can hardly be heard and I am not deaf.

      No that is not normal. Make sure your Instant Pot liner is super clean before you start. When you sauté the ingredients, make sure to stir the bottom constantly so that nothing burns and sticks to the bottom. Thanks for your comment and for trying my recipe. Really appreciate it!

      This happens to some types of the instant pots. Try this: when you add the rice, keep it at the top, don't stir. It works very well too, you can stir when it's done.

      Hi there! Yes, glutinous rice is sweet rice. I just find if I use all glutinous rice in this recipe, the rice is too sticky. I like the texture better when I mix some jasmine rice with the glutinous rice. Thank you so much for watching my video and for your question! Happy cooking!!

    My Chinese ex-husband use to make this for me all the time and I really enjoyed it but never knew how he made it. All I knew was there was a pot of it ready on the stove. He often would use the carcass of our Thanksgiving turkey or a roasted chicken. Once it was ready, I would put some chili oil, sesame oil, white pepper and scallions on it and OH WOW I could eat it every day. We've been divorced for a couple years now but are still friends just living in different cities so not many chances for me to have his. He did make a batch of it for me for Christmas a couple years back but I haven't had it since. I just started my instant pot so fingers crossed mine tastes as good as his. Thanks for the simple directions. I didn't know what to search for when looking for a recipe because he always just called if juk. I have no clue how that word is supposed to be spelled so I just did it phonetically.

    Hi Francine, I finally tried this recipe and it was easy and delicious. The only thing is that the tapioca balls clumped together. I didn’t stir to mix before cooking. Maybe I should I have?

      That’s wonderful that you got to try my recipe Laura. Yes the tapioca balls can clump together because the starch softens when they cook. I like to scatter the tapioca pearls when I put them in the Instant Pot so they are separated and don’t stick together. Happy New Year, too!
