Ingredients :
Water dough (水油皮):
200g plain flour (普通面粉/中筋面粉)
20g icing sugar (糖粉)
70g(无水奶油)
90ml water(水)
Oil dough(油酥):
200g plain flour(普通面粉/中筋面粉)
1 tbsp green tea powder (绿茶粉)
100g ghee(无水奶油)
Mochi (麻糬):
50g glutinous rice flour (糯米粉)
20g cofn starch (玉米淀粉)
15g plain flour (普通面粉/中筋面粉)
30g caster sugar (细砂糖)
125ml milk (牛奶)
2 tbsp corn oil(玉米油)
10g salted butter (有盐牛油)
600g red bean paste (豆沙馅)

看見人人都做的很美,請教一下,我做的有點破酥,首先1)油酥很沾手,不成團,難以分成等份,是正常嗎?因為太沾手,我無法控制,我就加了多點粉,也不是加太多我想,最後也有點沾手的,但較好控制
2)油皮是軟,那油酥是要那個程度呢?油皮要搓至有薄膜嗎?做油皮如果太用力,會出筋/ 起筋嗎,會不好嗎?

油酥只用按圧方式成团,不能搓揉,只会越搓越沾手的

目前放了三天,里面的麻糬依然是软的,至于馅料是个人喜欢的
