来自制紫薯千层酥月饼。外面是螺旋分明的千层酥皮,带有天然紫薯色,漂亮。内馅也用了日本紫薯来制作,加了炼奶蜂蜜和淡奶油,口感湿润,口味超香甜却不重奶味,绝对不要省略哦。外皮香酥,馅料微甜+咸蛋黄,好香,好好吃。新鲜出炉最好吃。
要漂亮颜色螺旋效果:
=水皮油皮比率要精准,要休息足够
=油皮必须杆得厚度均匀到水皮每个角落
=第2卷前,切除顶部白色部分,月饼顶部就无白色
=包馅料前休息足够,杆才不破皮
收藏方式:新鲜出炉最好吃,室温3天内吃完,因为自炒馅料没防腐剂。烤好,凉透收密封容器,要收更久就放冰库冷冻,吃前解冻,toaster中火烤热,放凉酥皮脆回,温吃。
Made Purple Potato Spiral Mooncakes. Outside has distinct spiral puff pastry, with natural purple potato color, beautiful. The fillings is also made of Japanese purple potato, with condensed milk, honey and whipping cream, which promote moist texture, enhance sweet fragrance taste but not overly heavy milky flavor, so don’t omit it. The outer skin is crispy, the filling is slightly sweet + salted egg yolk. Delicious, best eaten when freshly baked.
To have beautiful color and spiral effect:
= Ratio of water dough and oil dough should be accurate with enough rest
= Oil dough must rolled with even thickness and distributed to every corner of water dough
= Before 2nd roll, cut off white part on top, then no white on top of mooncake
= Rest enough before wrapping fillings, skin won’t break when roll
Storage Method: Best eaten when freshly baked. Consume within 3days at room temperature, because self-fried fillings has no preservatives. Baked, cool thoroughly, and put in airtight container. To keep longer, store in the freezer. Thaw and toast over medium heat. Let cool till pastry crispy back and eat warm.

220克 紫薯(大火蒸20-25分钟)
28克 炼奶
28克 蜂蜜
1.5克 盐
53克 动物性淡奶油(室温)
18克 无盐牛油(软化)
=内馅=
10颗 黑炭腌制咸蛋(浸米酒,植物油)
35克 瓜子
(上下火,不开旋风,中层烤)
(预热烤箱170C: 5-6分钟)
=水皮 (5份,43克/份)=
113克 普通面粉
23克 细纱糖
2克 盐
37克 无盐牛油
50克 水
=油皮 (5份,41克/份)=
124克 普通面粉
10克 紫薯粉
75克 无盐牛油
(上下火,不开旋风,第4层烤)
(预热烤箱170C: 30分钟)

220g Purple Potato (steamed on high heat for 20-25 minutes)
28g Condensed Milk
28g Honey
1.5g Salt
53g Dairy Whipping Cream (Room temperature)
18g Unsalted Butter (softened)
=Inside Stuffings=
10pcs Charcoal Marinated Salted Eggs (soaked in rice wine, vegetable oil)
35g Melon Seeds
(Top Bottom Heat, No Fan Force, Middle Rack)
(Preheat oven 170C: 5-6 minutes)
=Water Dough (5pcs, 43g/pc)=
113g All Purpose Flour
23g Caster Sugar
2g Salt
37g Unsalted Butter
50g Water
=Oil Dough (5pcs, 41g/pc)=
124g All Purpose Flour
10g Purple Potato Powder
75g Unsalted Butter
(Top Bottom Heat, No Fan Force, 4th Rack)
(Preheat oven 170C: 30 minutes)

Thanks for suggesting, but you refer to my last two video, the snowy mooncake video I made custard fillings. After cooked, just add in more milk or cream till runny consistency, then u can freeze them to make lava center
Hi Wendy. I want to make it rainbow spiral instead of just purple. Do I replace the 10g purple potato powder with all purpose flour then later divide the oil dough into 4 portions and color with gel food coloring? Thank u. Love your detailed video 🥰
Yes you can, but replace till total all purpose for oil dough become 128g will do, or else it might be too dry, hope you can try and send me photo after making
Hi Wendy, I made the rainbow version of this primal moon cake n it turns out so beautiful n delicious. Thank you so much for sharing the recipe and the detailed tips. I use red bean paste with mochi filling instead. It took me 2 days to complete it but it is totally worth it 😎
