Nice going chef, loving the inspiration and bringing our Jamaican culture food to life.
I totally agree with Dorothy I grew up using Annatto but have been substituting this for turmeric when I run out of stock. The annatto gives a unique richness in colour and it’s sweet and peppery taste.
Bless you and continue with the good work🙏🏾nuff respect.

Basically, Ricardo ,I don't think "authentic " Jamaican saltfish fritters have tomatoes, that's your way. Back in the day, we used annatto or tumeric to colour them, yours look nice still

I have never seen this recipe before for fish cakes. A tip. If you let the scotch bonnet and scallions sit in the luke warm it will flavour and season the self raising not plain flour, well that's what i use and its important to use fresh self raising if you want it to fluff up

It’s called fritters, it not a fish cake hence not baking power or self rising flour. Plain all purpose flour. It’s fried , not bake.

Healthy people die, some things you have to fry in oil not water. Even if we eat well by some so-called standards we still gonna die. Rather die with my belly full of food. I have seen so called health nut people die. Die refusing to eat this and that. People we gonna die anyway NAM FOOD!! Avoid excessive salt or sugar.

I'm watching the Salt fish Fritters fry up a nice, golden color, the veggies showing off their colorfulness, so this is traditional Jamaican Breakfast Chef Ricardo? Trying this here, is Salt fish similar to Salted Codfish? If so, then I have the salt fish needed for this recipe, thanks Chef and greetings to ya from Mexico! :)

It’s not a fish cake, you bake a cake. Notice these fritters are made with salted cod fish, scallions, bits of scotch bonnet peppers and sometimes curry is added for coloring the flour. Then it’s fried in hot oil. Not baked.
